1 Aubergine
1 tomato
A handful of pinenuts
Parsley
TAHINI DRESSING:
2tbsp tahini
Juice of 1 lime (or 1/2 lemon)
Salt
1 tbsp olive oil
1-2 cloves of garlic (crushed into fine paste)
A couple of wedges of lime of Lemon to squeeze on finished dish
DIRECTIONS
--------------------
1. Half aubergine length way and drizzle generous amount of olive oil on top, sprinkle salt and pepper
2. Roast in preheated 230°C/450°F oven for 35-40minutes. Till the aubergine is golden brown on top and creamy in the centre.
3. Make tahini dressing by adding all TAHINI DRESSING ingredients in a bowl and whisk till creamy. Add water small amount at a time till the desired consistency.
4. Drizzle TAHINI DRESSING on the roasted aubergine generously, topped with chopped tomatoes, parsley and toasted pine nuts

CHIA SCONES RECIPE
------------------------------------
150g Almond flour
20g chia seeds
2 tbsps stevia powder (or sweetener of your choice)
20g coconut oil
10g baking powder 1 teaspoon
Vanilla extract
A tiny pinch of salt
Water (room temperature)
1. Add all ingredients in a mixing bowl (bar water) and mix thoroughly.
2. Add a tiny bit of water a time and knead into the mixture till it starts to form a dough ball (the bowl should be clean).
3. Divide the dough into two portions and place each portion in the centre of an egg ring. Use a knife and cut a cross shape (x) on top of each dough ball.
4. Bake in 190c (375F)preheated oven for 15-20mins, then remove the egg rings and place it back to the oven for further 10 mins.
Optional: Drizzle chocolate sauce on top and sprinkle with nuts.
Enjoy x

50g cocao butter
1tbsp cocao powder
1.5 tbsp stevia
Vanilla extract
1. Melt all ingredients in a mixing bowl on top of a pot of warm water.
2. Mix well with an egg beater and whisk till creamy.
3. Leave to cool and drizzle on scones or whatever you like!

Filling:
60-80g Nuts of your choice
Toppings:
sunflower seeds

2 Pour in a square container lined with cling film
3. Sprinkle “toppings” on the surface
3. Put the lid on and chill in the fridge for 2-3 hours
4. Once set, cut out in desired shapes.

Dumpling wrappers

1carb flatbread dough
(Makes 12-13 dumplings)

Fillings
----------
140g firm tofu
200g mushrooms
Ginger
Kimchi (optional)
1/2 teaspoon psyllium husks powder
Soy sauce
Ground white pepper
Toasted sesame oil
Dipping sauce
--------------
Soy sauce
Rice vinegar
Toasted sesame oil
Fresh chilli or chilli oil (optional)
Fresh coriander (optional)
DIRECTIONS
---------------------
1. Pan fry mushroom and tofu to remove excess water
2. Place mushroom and tofu mixture in the food processor, add in ginger, psyllium husks powder, kimchi (optional), a dash of soy sauce, white pepper and salt to taste.
3. Pulse the mixture till well mixed in food processor.
5. Divide flatbread dough in 10-11 portions. Roll out with a rolling pin or tortilla press.
6. Make dumplings (see video instructions)
7. Add oil in a frying pan on medium heat. Place dumplings in the pan and cook for a minute or so till the oil heats up.
8. Add in 1 tablespoon "surprise water" and cover the pan and allow the dumplings to steam till thorough cooked.
9. Remove the lid and continue to fry the dumplings till the bottom of the dumplings are golden brown and crispy.
10. Make dipping sauce and enjoy!

INGREDIENTS

2 ripe avocados (approx 250g each)
3-4 tbsp Sweetener (varies with sweeteners)
juice of 2 limes
80g Coconut oil
Vanilla extract
A dash of nut milk (if required)
Blitz all ingredients in food processor till smooth.
Switch to whisk attachment (or use an egg beater) and whisk till mixture is light and airy.
Pour mixture in a freezer safe container and freeze for minimum 4-5 hours.
Take out of freezer and leave in room temperature for 10-15mins till softened before serving. Enjoy!

400g garlic (unpeeled)
Olive oil (enough to cover garlic in mason jar)
Salt
A mason jar
DIRECTIONS
-------------------
1. Peel all garlic and place the garlic in lined baking tray.
2. Sprinkle 1 teaspoon of salt and 1 teaspoon water. Mix garlic, salt and water so the salt sticks to garlic.
3. Bake the garlic in a 220°C/425°F preheated oven till the garlic is slightly soften and start to release aroma.
4. Take garlic out of the oven, while hot, transfer the garlic in a clean jar. Fill the jar with olive oil till it covers the garlic.
6. Leave the jar in room temperature to cool. Then store in the fridge for minimum 24 hours.
7. It’s ready to be eaten!

SWEET CHILLI DIPPING SAUCE
3-4 birds eye red chillies
4 -5 medium tomatoes
Soy sauce
Olive oil
Salt
1. Drizzle generous amount of olive oil in a medium heat frying pan. Add in chopped chillies and fry till they sizzle.
2. Chop the tomatoes and add them in the frying pan with the chillies. Stew till the sauce is thickened. Add soy sauce and salt to season.
3. Place the mixture in a blender or food processor. Add a splash of olive oil and blitz till it's airy and creamy.
CHIA SEED PUDDING
3 tablespoon Chia Seeds
1 tablespoon ground flaxseed
1 cup almond milk (or other vegan milk of your choice)
1 Tbsp creamed coconut (melted)
1 Tbsp coconut oil (melted)
Some Stevia to taste
Mix all ingredients together with a fork and chill in the fridge for minimum 2 hours (or over night). Top with whatever keto goodies you like.
Enjoy!

2. Roll out the dough in desired pizza size and prebake it in a preheated 435°F (220°C) oven for 5mins (Flip over once in between.)
3. Add desired pizza sauce and toppings and place it back in the oven for 10mins (or till golden brown)
1CARB KETO TORTILLA CHIPS

2. Roll out the dough in desired size and cut it in wedges.
3. Bake it in a preheated 400°F (200°C) oven for 5-10mins. (or till golden brown). Flip the tortilla chips a few time during baking to prevent burning.
4. Enjoy with dippings of your choice.
PIZZA TOMATO SAUCE
3-4 medium tomatoes
Roughly chop the tomatoes and cooked them down in a pot till the mixture is thickened and smooth. Leave to cool.
GUACAMOLE
2-3 ripe avocados
1 small red onion
A handful of spring onions or coriander
1 medium tomato
1 lime or lemon
Some fresh chillies
A splash of extra virgin olive oil
Blitz everything together and enjoy!
TOMATO SALSA
4-5 medium tomatoes

“Flax egg” (1 net carb):
1 Tbsp flaxseed meal (ground raw flaxseed)
2 1/2 Tbsps water

1 teaspoon matcha powder
A small handful of walnuts (or nuts of your choice
2 tbsps Nutritional yeast (2-3g net carbs)
Black salt (or salt of your choice)
DIRECTIONS
1. Make “Flax egg” by mixing the flaxseed meal with water. Leave to stand for 5 minutes.
2. Mix soy flour, ground almonds and sweetener together in a bowl and whisk thoroughly.
3. Add in “flax egg”, coconut oil vanilla extract in the bowl and mix all ingredients till it forms into a dough ball. Divide the dough in half. For the sweet biscuits, add in matcha powder and nut. Mix the dough well. For the savoury biscuits, mix in Nutritional yeast and mix the dough well.
4. Flatten and spread the dough on cling film just thin enough to be cut out as biscuits. Place the rolled out dough in the fridge for minimum an hour to firm up before cutting.
5. Cut and divide the chilled dough into desired size biscuits.
Bake in 170°C (325°F) preheated oven for 15mins (time required may vary depends on your oven) on baking tray lined with tin foil or baking sheet
Take the biscuits out and leave them to cool before consuming.

INGREDIENTS
(This recipe makes 8 mochies, approx 2g carb per mochi)
120g Fresh okara
40g Soya flour
10g Psyllium husk
80ml Soya milk or other plant milk
3-4 tbsps Vegan mayo
Some salt
Handful of thinly sliced leeks or spring onion (scallions)
For dipping sauce
A chunk of fresh ginger
Soya sauce
1 fresh chilli
