Insanely Delicious Turkish Rice with Succulent Lamb, Ankara Tava
Ingredients:
• 1 kg lamb on bones - shoulder, ribs or shanks
• 120 g butter, about 8 tbsp
• 1 tbsp vegetable oil
• 2 cups rice, 500 g
• 1 small onion
• 2 bay leaves
• 2 - 3 whole peppercorns
• 2 tsp salt (extra for soaking the rice)
• Tomatoes and green sweet chilies to garnish
Instructions:
1. Wash and trim the lamb of the sinews and excess fat, cut into large chunks, about 200 g pieces
2. In a large Dutch oven, melt 50 g butter and add 1 tbsp oil, heat up until sizzling
3. Add the lamb, sear and cook until nicely browned on the outside
4. Add the onion, bay leaves, peppercorns and 2 liters water to cover the lamb
5. Bring to a boil and let it simmer for 1.5 hours
6. Add 1 tsp salt and let it simmer for another 30 mins
7. Remove and set aside the lamb, strain the stock and discard the onion, blackpepper and bay leaves
8. Soak the rice in hot salted water for 30 mins, wash and rinse throughly and let it drain
9. Add and layer the rice in a large oven dish or casserole, add 50 g / 4 - 5 tbsp butter
10. Place the cooked lamb pieces on top, add 1 tsp salt and 3 cups / 750 ml of the stock (strained cooking juices)
11. Cover and cook in the oven at 200°C / 400°F for 30 - 40 mins or until the rice absorbed most of the liquid
12. Remove from the oven, uncover and garnish with quartered tomatoes and chilies
13. Cook in the oven uncovered for another 10 mins until the tomatoes are roasted and no liquid remains
14. Optionally, melt and heat up 20g butter in a small saucepan, pour over the casserole
15. Let it rest for 15 mins before serving and enjoy.

Ingredients
Topping:
• 500 g lamb meat / %60 hand minced %40 ground lamb, medium fat
• 100 g red or white onion
• 75 g fresh paprika pepper
• 75 g tomatoes (skin peeled)
• 75 g parsley
• 15 g - 3 tsp salt
• 1 tsp paprika powder (optional)
Dough:
• 500 g flour (preferably high protein bread flour)
• 250 ml water
• 8 g dry yeast
• 2 tsp salt
Instructions:
Preparing the Topping:
1. Mince 300 g lamb meat with a big kebab knife with 1 tsp salt, combine with the 200 g ground lamb
2. Transfer the minced lamb into a bowl and let it rest in the fridge for 2 hours or overnight
3. Very finely chop the onion, paprika and the parsley and add into the bowl
4. Peel the skin of the tomatoes and finely dice and add into the bowl
5. Add 2 tsp salt and optionally 1 tsp paprika powder
6. Gently mix with your hands until all the ingredients are combined and the mixture is homogenous
Preparing the Dough:
7. Combine the yeast with 50 ml water and let it sit for 10 minutes for the yeast to activate
8. Add the flour into a bowl, mix with 2 tsp salt and make a well in the middle
9. Add yeast, the remaining water (200 ml) and mix and knead for 10 minutes until smooth
10. Cover and let it rise and proof for 1 hour
11. Roll the dough into long sticks and divide with your hands into walnut size pieces (20 g each)
12. Lightly grease a baking sheet and transfer the small dough balls on to the baking sheet
13. Leave at least 5 cm distance between the doughs
14. With your fingers, press and stretch the dough balls into 8 cm / 3 inch wide round shapes
Assembly & Cooking:
15. Take walnut size pieces from the lamb mixture (20 g) and place on top of the dough
16. Press and gently layer and spread the mixture with your fingers to evenly cover the dough
17. Bake in a pre-heated oven for 10 - 15 mins at 250°C / 480°F until the dough and topping is cooked but not dry.
18. Serve with fresh mint leaves, parsley, lemon wedges and radishes.

Ingredients:
• 3 medium or 2 large tomatoes
• 1 cup walnuts, chopped
• 1 red onion
• 2 medium cucumbers
• 3 green chilies

Instructions:
1. Remove the seeds and dice the cucumbers into small cubes and transfer into a bowl

3. Finely chop the red onion and the slice the chilies finely, combine in the bowl
4. Chop the parsley and the mint leaves and set aside
5. Chop the walnuts into small pieces and transfer into the bowl
6. Add 2 tsp sumac, 2 tsp pul biber, 3 tbsp olive oil, 3 tbsp pomegranate molasses
7. Optionally, squeeze the juice of a lemon and add into the bowl
8. Finally season with salt and mix to combine everything
9. Optionally, garnish with extra walnuts and pomegranate molasses

• 150 g graviera or kefalograviera cheese, grated (alt: gruyere, myzithra, parmesan or pecorino)
• 1 tsp salt

Addictive Turkish Eggplant and Ground Beef Recipe
Ingredients:
• 2 – 3 eggplants, 600 g
• Ground beef or lamb, 250 g
• 1 medium tomato
• 1 medium onion
• Pita / pide bread (traditionally, stale bread (pide / tandir) is used to avoid waste)
• 2 tbsp olive oil
• 2 tbsp tomato paste
• 1 tsp salt
• 1 tsp paprika powder
• ½ tsp black pepper
• 250 g plain yogurt
• 1 clove of garlic
• Frying oil
• 1 tbsp butter (optional to toast the breads)
• Chopped parsley to garnish (optional)
Instructions:
1. Wash and peel the eggplants in stripes and cut into large cubes
2. Soak the egpplant cubes in salted water for 15 mins, drain and pat dry
Alternatively, rub the cubes with coarse salt, let sit in a strainer for 15 mins, drain the excess liquid.
3. Fry the eggplants in a separate pan with vegetable oil until nicely browned
Alternatively, lightly oil the eggplants and roast in the oven for 15 – 20 mins
4. Transfer the fried / roasted eggplants onto a paper towel, drain to get rid of the excess oil
5. Finely chop the onion and dice the tomato
6. Heat up 2 tbsp olive oil in a large pan and add the ground meat. Stir and cook until nicely browned.
7. Remove the ground meat from the pan and set aside, leave as much as possible oil in the pan.
8. Add and cook the onions for 2 - 3 mins until softened
9. Add the tomato paste and stir and cook for 2 minutes until fragrant.
10. Add the diced tomato, cook until the tomatoes are soft and reduced to half.
11. Add the minced beef, together with 1 tsp salt, 1 tsp paprika powder and 1/2 tsp black pepper
12. Stir and cook the minced beef for 2 mins to evenly cook and combine
13. Cover the lid and cook for another 15 mins with the lid covered
14. Add the eggplants into the pan with the minced beef mixture, gently stir to combine and turn off the heat
15. Whisk the yogurt in a bowl and grate or grind 1 clove of garlic and mix with the yogurt
16. Cut the bread in small cubes and toast with 1 tbsp butter until golden brown (optional).
(traditionally, stale bread (pide / tandir bread) is used to avoid waste)
17. Layer the bread cubes on the bottom of the serving plate
18. Layer on top the garlic yogurt and spread over the bread cubes
19. Finally layer the eggplants and ground beef mixture on top
20. Garnish with chopped parsley and serve warm

Ingredients:
• 1 cup rice (baldo, arborio or similar), 250 g
• 2 large tomatoes, grated or canned sun ripened tomato puree, 400 g
• 4 tbsp butter, 60 g
• 2 tbsp olive oil or sunflower oil
• 1.5 tsp salt (extra to soak the rice in water)
• 1 tsp sugar
• 1 cup hot water, 220 ml (+ 1 liter for soaking the rice)
Instructions:
1. Soak the rice in hot water with 1 tsp salt, stir and let it wait for 45 minutes
2. Wash and rinse the rice thoroughly 3 – 4 times until the water comes out clear.
3. Drain in a strainer until the rice is almost dry
4. Peel and grate the tomatoes, or alternatively use 400 g grated canned sun ripened tomatoes
5. In a large pan, heat 2 tbsp oil
6. Add the grated tomatoes and 1 tsp sugar
7. Stir and simmer for about 30 mins until the liquid is reduced and the oil starts to separate
8. Remove the tomatoes, add 4 tbsp – 60 g butter to pan
9. Once the butter is melted and hot, add the rice, 1.5 tsp salt
10. Gently stir without crushing the rice and fry until the rice is translucent and starts to clump together
11. Add back the cooked tomatoes and 1 cup hot water, gently stir and cover the lid
12. Bring to a boil and then switch to low heat, cook covered for 15 mins until the liquid is absorbed
13. Open the lid, gently stir the top parts of the pilaf,
14. Poke couple of small holes in the rice with back of the spoon, cover with a towel and close the lid.
15. Heat up the pilaf 2 - 3 more minutes to crisp up the bottom.
16. Remove from the heat and let it rest covered for at least 20 minutes for the flavors to develop
17. Serve the pilaf in a bowl together with pieces of the crispy bottom

Next-Level Turkish Street Food, Yogurtlu Tantuni
Ingredients:
• 750 g beef (top round / boneless ribs / entrecote, sinews and excess fat trimmed)
• 3 - 4 tbsp vegetable oil (traditionally with cottonseed oil or any neutral oil)
• 2 tsp paprika powder
• Salt to taste
• Some water
Garnish and to serve:
• 1 small onion
• Parsley, chopped, ½ cup + fresh mint to garnish
• 1 tomato
• 2 tsp sumac
• Juice of ½ lemon (optional)
• Lavash bread to serve / wrap
Sauce:
• 1 cup yogurt (preferably strained)
• 1 clove of garlic (optional)
• 1 tbsp unsalted butter
• 1 tbsp vegetable oil
• 1 tsp paprika powder
• 1 tsp pul biber (Turkish chili flakes or Aleppo pepper) - optional for heat
Instructions:
1. First, cut / shred the beef into small size julienne pieces like thin strips
2. In a pan, start cooking the beef on medium heat and make a space in the middle
3. Stir occassionally and until all slices are slightly browned and the meat releases its juice
4. Once the beef releases it’s juice, skim off the impurities and the foam if any and close the lid
5. Bring to low heat and cook 20 mins until the meat is fully cooked in its own juice
6. Once the liquid is evaporated and beef is fully cooked, set aside the beef
7. For the garnish; thinly slice the onion, parsley and cut the tomatoes into small cubes
8. Mix 2 tsp sumac with a pinch of salt into the onions and mix until combined
9. Add the chopped parsley, mix and set aside
10. For the yogurt sauce, whisk 1 cup yogurt with a pinch of salt
11. Optionally, add 1 clove of crushed garlic and stir in to yogurt, set aside the yogurt
12. Heat up a large pan or preferably wok, add 2- 3 tbsp oil
13. Once the oil is hot, add the beef in batches and stir fry for 1-2 minutes on high heat
14. Add 2 tsp paprika powder and salt to taste and continue frying while constantly stirring
15. Once the paprika powder is infused, add 1/4 cup water
16. Continue stir frying until the water is reduced to half
17. Press the lavash breads on the beef and let them absorb the sauce until soft and slightly wet
18. Turn off the heat and start making a wrap
19. Layer the parsley & onion garnish on the lavash and add some chopped tomatoes
20. Add the beef on top, add salt to taste and drizzle a little bit of lemon juice
21. Make a wrap and cut the wrap into bite size pieces and transfer onto a serving plate
22. Heat up a pan, 1 tbsp oil, add 1 tbsp butter (optional), 1 tsp paprika powder and 1 tsp pul biber
23. Once the oil is sizzling and the paprika is infused into the hot oil, turn off the heat
24. Pour the yogurt over the tantuni and garnish with the spiced butter / oil
25. Finally garnish with chopped parsley and serve. Enjoy!
