Chicken Roll-Ups: another family favorite! This one isn't very quick, but it is soooo worth it! It makes several servings, so it is perfect for larger families or get togethers. We love to have leftovers, because it is just as good warmed up in the microwave. :-) Y'all go make you some!

Chicken Roll-Ups
2 (8 oz) cans crescent rolls
1 (10.75 oz) can cream of chicken soup
3/4 cup shredded cheddar cheese
1/2 cup whole milk
Filling
4 oz cream cheese, softened
2 TBSPs butter, softened
1 tsp garlic powder
1 tsp minced onion flakes
2 large cooked chicken breasts, chopped
1 cup shredded cheddar cheese
1/2 tsp seasoning salt
1/2 tsp black pepper
2 TBSPs milk
1/2 cup shredded cheddar cheese, for topping
Preheat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray. Mix together milk, 3/4 cup cheese and soup with 1/2 tsp of black pepper. Set aside.
For the filling... in a small mixing bowl, mix the cream cheese with the butter until very smooth. Add in garlic powder. In a large bowl, mix chopped chicken with the cream cheese mixture. Add onion flakes and cheese and mix until well combined. Add in 2 TBSPs milk, seasoning salt & pepper. Unroll crescent rolls, place 1 heaping TBSP of chicken mixture on top of each roll and roll up, starting at the wider end. Drizzle a small amount of soup mixture in the bottom of the dish. Place the crescent rolls seam side down on top of the soup mixture. Drizzle remaining sauce over the top sparingly to make sure you have enough to cover them all. Top with 1/2 cup of cheese and bake for 30 minutes.
DiDi's French Toast
Today was French Toast Sunday! There are many secrets to getting really good French Toast. You must use a good thick, dense bread and half-n-half instead of just milk. I used to use sugar & vanilla in mine, but have found that maple syrup has all the goody you need and adds that great maple flavor! Be sure to make some Hot Buttermilk Syrup to go on top! DiDi's French Toast
8 pieces of thick, dense bread
3 eggs
1/2 cup whole milk
1/2 cup heavy cream (You can substitute 1 cup of half-n-half for the milk & cream if you have it.)
2 TBSPs maple syrup
Butter
vegetable oil
Beat eggs with milk & cream or half-n-half. Add maple syrup and mix. Heat 2 TBSPs butter & 2 TBSPs oil in a large skillet on medium to medium high. DO NOT OVERHEAT. Dip bread one at a time into egg mixture. Push down to soak & flip over to make sure it is soaked good. Let drip & add to skillet. Cover with a lid. Cook one minute on each side. Flip every minute so it does not burn. You can cover with your favorite toppings, but we love Hot Buttermilk Syrup, powdered sugar & fresh strawberries.

Hot Buttermilk Syrup
1 stick butter
1 cup sugar
1 tsp light corn syrup
1 tsp vanilla
1/2 cup buttermilk
1/2 tsp baking soda
Melt butter in a saucepan. Add sugar, corn syrup, vanilla & buttermilk. Bring just to a boil, stirring constantly and remove from heat immediately. Stir in baking soda. It will foam up, keep stirring. Serve warm. Remainder can be jarred and refrigerated for 3 - 4 weeks. Just warm before serving.

What's the world's best cookie? Well, it has to be this one, because it's called the World's Best Cookie! LOL No joke! I got this recipe many years ago from a coworker when she brought them to work. I just had to have the recipe! They make a whole bunch so you can use this recipe to make cookies to take to work, parties, cookie exchanges, or just eat them all yourself! World’s Best Cookies
Makes 72 – 2 ½ inch cookies or 90-100 – 2 inch cookies
2 sticks unsalted butter, softened
1 cup sugar
1 cup lightly packed brown sugar
1 large egg at room temperature
1 cup oil (vegetable, canola, or peanut)
1 cup oats
2 cups crushed corn flakes
½ cup sweetened coconut flakes
3 ½ cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp pure vanilla extract
½ cup pecan pieces
Sugar to sprinkle on cookies
Instructions:
Preheat oven to 350 degrees F. With an electric mixture or stand mixer, cream butter and sugars together until light & fluffy. Add egg & mix well. Add all remaining ingredients, beating as necessary to combine. Drop dough by level tablespoon for 2” cookies, or heaping tablespoon for 2 ½” cookies, spaced 2” apart onto a cookie sheet. Press top of each cookie lightly with the tines of a fork. Bake cookies for about 8-9 minutes, or until very lightly browned. Don’t overcook!
Remove cookies from the sheet carefully as they are very fragile. Cool on a wire rack and sprinkle with sugar while they are still hot.
These cookies freeze well, if there are any left for freezing, tightly wrapped in plastic wrap for up to 2 months.

Quick Cooker Homemade Yogurt
My bestie Rhonda told me about making yogurt in her Instapot a couple of years ago. It makes the best yogurt! So creamy and you can flavor it however you like! I like to make plain yogurt so I can use it to cook with, or I can add berries or maple syrup & granola for a yummy snack! Y'all go make you some!

Quick Cooker Yogurt
2 TBSP Whole milk yogurt, any flavor
1/2 gal Whole milk (you can use lactose free, but it must be whole milk)
splash of vanilla (optional)
Pour milk into pot and add yogurt along with vanilla. Mix very good with a whisk. Make sure the yogurt is fully incorporated. Skim foam off of top. Using a Quick Cooker (Pampered Chef), you will need to use the Proof setting and set for 6 hours. That is the maximum setting. Then, you will need to add at least another 2 hours, or longer if you like your yogurt thicker. Let completely cool on the counter, then cover & refrigerate for a minimum of 24 hours. You can drain the excess liquid off using cheesecloth if you like. That will make it more like a Greek yogurt. Take out 2 TBSPs to freeze so that you have some to start your next batch! Put the remainder in a covered bowl or you can put in individual jars with berries or your choice of sugar. It is great with maple syrup, granola, berries, however you like. It is also great for cooking or baking. (If you have an Instapot, there is a yogurt setting and you can refer to your instructions.)

Quick & Easy Chicken Pot Pie
2 uncooked deep dish pie crusts (you can find my Easiest Pie Crust EVER video on my channel!)
2 cooked & shredded chicken breasts OR 2 cans cooked chicken breast
1 (15 oz) can mixed vegetables, drained
1 (10.5 oz) can cream of chicken soup
1 (10.5 oz) can cream of mushroom soup
Preheat oven to 375 degrees F. Mix everything in a bowl and pour into a pie crust. Cover with another pie crust and seal the edges. Cut a few slits in the top crust to vent. Place on a cookie sheet covered with foil and bake for approximately 40 minutes or until a golden brown. Let cool on a raised cooling rack for about 10 minutes before cutting. Enjoy!

Southern Fried Zucchini
We love just about everything fried; fried okra, eggplant, squash, and zucchini! It is so simple. All you need is your vegetable, salt, buttermilk, self-rising corn meal mix, and a pot of your choice of oil. I love using peanut oil, but it has gotten so expensive that I have been using vegetable oil lately. Get you a big deep skillet and use your oil over & over. Make sure you have separate pots for frying things with corn meal and flour. The corn meal oil will need to be changed more frequently than the one you use for flour. I have a deeper pot for my flour oil. I use it for frying my meats, fried pies & donuts. You will know when to change it when it starts getting really cloudy or starts smelling yucky. Believe me, you will know. Also, be sure to keep it covered. You do not have to refrigerate it! Well, now you know how to fry up some vegetables. Y'all go make you some!

Biscuit Breakfast Casserole
1 (16 oz) can jumbo buttermilk biscuits (not flaky)
1 lb breakfast sausage, browned
2 cups shredded cheddar cheese
6 large eggs
½ cup milk
Salt & pepper to taste
1 (2.75 oz) packet country sausage gravy
2 cups water
Preheat oven to 350 F degrees. Spray a 9 x 13 baking dish with cooking spray. Cut each biscuit into eighths. Line bottom of the dish with the biscuits. Sprinkle cooked sausage evenly over biscuits. Then sprinkle shredded cheese over sausage. In a medium bowl, whisk together eggs with milk very well and season with a pinch of salt & pepper. Pour egg mixture over the cheese layer. In a medium bowl, combine packet of gravy mix with 2 cups water. Whisk until combined. Pour gravy over egg mixture layer. Cover & bake for 45-55 minutes. Let cool about 10 minutes & serve.

Orange Spiced Tea
My sweet Aunt Margie used to make this Orange Spiced Tea every Fall/Winter. It is so nice on cool days. I hope you enjoy it as much as our family does!
Orange Spiced Tea
1 cup unsweetened instant tea mix
2 cups Tang orange drink mix
3 cups sugar
1/2 tsp cinnamon
1/2 tsp ground cloves
Mix all together and keep in an air tight container. Mix 1 heaping TBSP with 8 oz of hot water. Enjoy!

Quick & Easy Dinner: Skillet Smoked Sausage & Potatoes
I threw this easy dinner together one night many years ago when we were super busy with three kids in sports. Everyone loved it, so I have continued to make it and make it often. I hope you like it as much as we do! Go make you some!
Skillet German Sausage & Potatoes
Feeds about 3 people
3 large potatoes
1 lb Smoked Sausage
1 can cream of mushroom soup
Chop potatoes & sausage in bite-size pieces. Add some olive oil to a skillet and turn to medium high heat. Add potatoes and a dash of salt. Cook and stir until outside of potatoes are getting done. Cover pan and cook until almost fork tender. Add sausage. Stir every 2 minutes until sausage is hot and potatoes are done, keeping the pan covered. Add soup and stir. Reduce heat to almost the lowest setting. Cover again & cook about 5 - 10 minutes. Serve!

Ingredients
2 lbs ground beef
1 or 2 medium onions, chopped
1 (1 oz) package ranch salad dressing mix
1 (1.25 oz) package taco seasoning mix
2 (4 oz) cans diced green chilies
1 (10 oz) can diced tomatoes & green chilies
1 (15.5 oz) can drained whole kernel corn
1 (15.5 oz) cans red kidney beans
2 (15.5 oz) cans pinto beans
shredded cheese
sour cream
corn chips
Directions
Brown the ground beef and onions in a large pot or pan. You can cook it in a stockpot or add the browned beef and onions to a slow cooker. Add the remaining ingredients, except for the sour cream and chips. Cook on low for 4 - 6 hours if using a slow cooker. Simmer over low heat for about 1 hour if cooking on the stovetop. Serve with corn chips and top with sour cream, & cheese. Just whatever you want! This freezes well, too!

DiDi's Famous Fried Chicken Strips
There is probably one thing that your family loves for you to cook more than anything else. This is that one thing for my family. They have told me for years that I should open a cafe and serve my chicken strips. Well, now you can make them, too! The secret is using good tender chicken. Don't use tenderloins. Southern Creamed Potatoes
one medium to large potato per person
water to cover potatoes
Evaporated milk, to your taste (I use about 1/4 cup per 3 potatoes)
butter, to your taste (I use 1/2 stick per 3 potatoes) *no margarine!
salt/pepper to taste
Wash potatoes, peel, & wash again. Cut up into even sized pieces. Place in pot and cover with some salt & water. Boil on medium-high heat until fork tender. Potato should not stick to fork. While potatoes are boiling, place butter & evaporated milk in a microwavable bowl & heat long enough to melt butter. Drain potatoes well. Place in a mixing bowl & add milk; beat until creamy. Salt & pepper to taste. Add more butter & milk as needed.

Peanut Butter Pie
1 Chocolate cookie pie crust
8 oz cream cheese, softened
1/2 cup creamy peanut butter
1/2 cup sugar
16 oz non dairy whipped topping, divided
Cream together cream cheese, peanut butter & sugar. Blend in 8 oz of whipped topping. Pour into pie crust and dollop with remaining whipped topping. Refrigerate for a minimum of 1 hour, preferably overnight.

DiDi's Fall Flavored Sweet Potato Casserole
2 (40 oz) can Yams in syrup, drained
1 ½ stick butter, melted
½ cup evaporated milk
2 eggs
½ - ¾ cup brown sugar, to taste
1 tsp salt
1/8 tsp nutmeg
1/4 tsp cinnamon
1/8 tsp cloves
1/8 tsp ginger
1 tsp Vanilla
4 – 5 cups Miniature marshmallows, divided
In a mixing bowl, mash yams well. Add remaining ingredients except 1-2 cups marshmallows for topping. Spread in a greased 13 x 9 baking dish. Can be frozen until needed. Thaw well and bake at 350 for 30 minutes. Top with marshmallows and bake until browned on top 5 - 8 minutes. Let cool about 10 minutes before serving.
Alternate Pecan Topping
¼ cup butter, melted
1 cup brown sugar
2 TBSPs flour
1 cup chopped pecans
Mix together butter, brown sugar, flour and nuts & sprinkle over top of casserole before baking.

Granma's Oatmeal Cookies
3/4 cup butter flavored shortening
1 cup brown sugar, packed
1/2 cup white granulated sugar
1 egg
1/4 cup water
1 tsp vanilla
1 cup flour
1/2 tsp baking soda
1 tsp salt
3 cups whole oats, NOT quick oats
1 cup chopped pecans
Preheat oven to 350 F. In a large bowl, beat shortening, sugars, egg, water, and vanilla together until creamy. Sift together flour, salt and soda; add to creamed mixture; blend well. Stir in oats & pecans. Drop by tablespoonfuls onto greased cookie sheet. Bake for 9 - 12 minutes, depending on how you like your cookies. Less time and they will remain chewy. :-)

1 cup sour cream
1/2 cup butter, melted
1 cup shredded cheddar cheese
Preheat oven to 350 degrees F. In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, & melted butter. Pour into a greased 8 x 8 casserole dish. Bake for about 40 minutes. Top with cheddar cheese & bake another 10 - 15 minutes, or until cheese is melted. Let stand for at least 5 minutes and serve warm.

Freezing Crowder Peas
Today I blanched and bagged my crowder peas to freeze. It's such a quick and easy process. I wasn't able to grow any peas myself, so I got mine from my local grocer that gets fresh picked from a local farm. I shelled them and canned some in another video. Easy Cheese Chicken
This is a super simple chicken recipe. Even picky kids love it! :-) I mean, what's not to love about chicken, cheese & butter?! When my kids were still home, we made steamed broccoli instead of the peas. My girls LOVED broccoli! It was so good pouring the butter sauce over it, too. Here is the recipe for the Cheese Chicken! Enjoy!
Cheese Chicken
(two servings)
2 chicken breasts, thawed & not too thick
1/2 stick butter
1 1/2 tsp seasoned salt
American cheese, sliced
Put butter in a baking dish and cover with the seasoned salt. Put into a cold oven and preheat to 350 F. When oven is heated, butter should be melted. Stir and dredge chicken in the butter. Bake for 20 minutes. Take out, flip chicken, and cover with cheese. Bake another 5 - 7 minutes, until cheese is melted. Serve, adding some butter sauce on top.

Mama's Cornbread
We are having left over Vegetable Beef soup for dinner, but we need more cornbread! We like ours just a little sweet and this recipe has been in my family since I was a little girl. ❤️ I hope you like it!
Sweet Cornbread
1/2 cup all-purpose flour
1/2 cup corn meal
3 tsp baking powder
1/4 tsp salt
1/4 cup sugar
1/2 cup milk
1 egg
2 TBSP vegetable oil
Preheat oven to 400° F. Heat oil in skillet or muffin pans. Mix ingredients together and let stand for about 5 minutes. Add hot grease from pan and stir carefully. Pour into skillet or 12 muffin pans. Bake muffins for 12 minutes or a 9 x 9 skillet for 15 minutes. If you like your cornbread thicker, just use a smaller pan.

Easy Beef Enchiladas & Refried Beans
Beef Enchiladas
1 lb ground beef or whatever type of meat you prefer
Taco seasoning packet (make the taco meat according to the package
Corn tortillas
1 cup grated cheddar cheese
1 can enchilada sauce (small for a small casserole dish, large for 9 x 13), red or green
Vegetable oil for cooking the tortillas
Preheat oven to 350 F. Cook taco meat according to packet, or make your own and set aside. Put vegetable oil in a skillet and get nice & hot. Dip tortillas into the hot oil and cook on each side for 15 seconds. Drain on a paper towel. If using a glass or metal casserole dish, spray with nonstick cooking spray. Cover the bottom with tortillas, overlapping. Add the taco meat, a little enchilada sauce and cover with remaining tortillas. Add the rest of the enchilada sauce and cover with cheese. Bake for about 20 minutes. Let sit for about 10 minutes before trying to cut and serve.
Refried Beans
1 can pinto beans
1 Tbsp bacon grease or vegetable oil
¼ cup chopped onion
1 tsp minced garlic
Salt & pepper to taste
Get skillet nice & hot. Reduce heat to medium. Pour grease into pan & get hot. Add onion and sauté until just starting to brown on the edges. Add garlic and sauté for 30 seconds. Add pinto beans. When they start bubbling good, start mashing with a fork. Keep mashing until they have thickened to your liking. Add salt & pepper to taste.

Super Moist Rum Cake
Ingredients
• 1 yellow cake mix
• 1 - 3.4 oz box of instant vanilla pudding
• 4 eggs
• 1 cup water
• ½ cup vegetable oil
• 1 TBSP rum extract, (rum extract has more flavor than the real stuff!)
Glaze Ingredients
• 1 stick butter
• 1 cup sugar
• ½ cup water
• 2 tsp rum extract
Directions
Preheat oven to 350. Mix all cake ingredients and pour into greased Bundt pan. Bake for 40 minutes, or until toothpick comes out clean.
While cake is still hot, bring glaze ingredients to a boil. Boil for 1 minute and pour over cake poked with fork, while still in pan. Let sit for at least 10 minutes before removing.

Homemade Fluffy Waffles
These waffles are so yummy! I start with my Granny's homemade pancake mix, but you can use your favorite. I will post another video in the future to show you how to make my Granny's master pancake mix. :-)
Homemade Fluffy Waffles
makes 4 large waffles
1 cup pancake mix
1 egg, separated
2 TBSP vegetable oil
1 cup buttermilk
1/4 cup sugar
1 tsp vanilla
1 tsp almond extract
Preheat waffle maker and spray with non-stick cooking spray. Separate egg. Beat egg whites until stiff and set aside. In a medium mixing bowl, add 1 cup pancake mix, egg yolk, veg oil, sugar, vanilla & almond extract. Mix well, scraping sides. Fold in egg white. When waffle maker is hot, add about 1 cup of batter, spreading around. When cooked to your liking, add butter and any other toppings you'd like. Great with syrup, powdered sugar, whipped cream, fruit, chocolate chips, OR these are amazing served with fried chicken strips!
