Easy Beef Enchiladas & Refried Beans

Beef Enchiladas
1 lb ground beef or whatever type of meat you prefer
Taco seasoning packet (make the taco meat according to the package
Corn tortillas
1 cup grated cheddar cheese
1 can enchilada sauce (small for a small casserole dish, large for 9 x 13), red or green
Vegetable oil for cooking the tortillas

Preheat oven to 350 F. Cook taco meat according to packet, or make your own and set aside. Put vegetable oil in a skillet and get nice & hot. Dip tortillas into the hot oil and cook on each side for 15 seconds. Drain on a paper towel. If using a glass or metal casserole dish, spray with nonstick cooking spray. Cover the bottom with tortillas, overlapping. Add the taco meat, a little enchilada sauce and cover with remaining tortillas. Add the rest of the enchilada sauce and cover with cheese. Bake for about 20 minutes. Let sit for about 10 minutes before trying to cut and serve.

Refried Beans
1 can pinto beans
1 Tbsp bacon grease or vegetable oil
¼ cup chopped onion
1 tsp minced garlic
Salt & pepper to taste

Get skillet nice & hot. Reduce heat to medium. Pour grease into pan & get hot. Add onion and sauté until just starting to brown on the edges. Add garlic and sauté for 30 seconds. Add pinto beans. When they start bubbling good, start mashing with a fork. Keep mashing until they have thickened to your liking. Add salt & pepper to taste.
