It has been a while since I've posted, but life comes at ya hard sometimes. I'm happy to be back with you! I ran smooth out of laundry soap, so I had to make more. We have sensitive skin, so I use all natural ingredients. It makes so much and uses so little, so it goes a long, long way! For our family of two, it lasts about 1.5 years. 3.5 lb bag Baking Soda (They apparently quit making this recently. I find 3lb & 4lb bags. So a 4lb bag is $2.98 at Walmart. Just don't use quite all of it.)

Peach Preserves
Peaches are some of my favorite fruit. I have a couple of trees, but never have any luck growing healthy peaches. The bugs always get them, and I grow everything organically and haven't found anything to protect them safely. I found an orchard in Oklahoma that grows the most delicious peaches and was able to get some from the Happy Heart Homestead this year. We love to make peach cobbler, pie, & dump cakes with ours. Cheesy Chicken & Corn Chips
4 large chicken breasts, boiled or rotisserie
1 (15 oz) jar Cheese Wiz
1 (10 oz) can cream of chicken soup
1 (4 oz) can diced green chilies
1 (9.25 oz) bag corn chips
Preheat oven to 350 degrees F. Shred chicken breasts. In a microwave safe bowl, add cheese wiz & soup. Microwave for about 1 1/2 minutes. Add green chilies & chicken and mix. Spray a 9 x 13 casserole dish with non-stick cooking spray. Line with 1/2 the corn chips. Spread the mixture over the corn chips and add remaining chips on top. Bake for 15-20 minutes.

Super Quick & Moist Coconut Cake
1 box white cake mix (plus ingredients needed on box)
1 TBSP coconut extract
Preheat oven to temp on your cake mix box. Mix all ingredients as needed on box recipe. Add coconut extract and mix well. Bake as directed. When done, set on cooling racks to cool.
Meanwhile, make icing.
1/2 cup butter, softened
1/2 cup solid shortening
1 TBSP coconut extract
4 cups sifted powdered sugar
2 TBSP whole milk
1 1/2 cup sweetened shredded coconut, divided
In a mixing bowl, cream butter & shortening. Add extract and mix. Add sugar and mix until fluffy. Add milk, one tablespoon at a time, until spreading consistency. Add one cup of coconut and mix. Frost cake. Add coconut to top and/or sides of cake as you like. Enjoy!

Redbud Jelly
Redbud Tea
• 2 cups redbud flowers only
• 4 cups boiling water
• Place the redbud flowers in a quart Mason jar, and set aside. Heat the 4 cups of water to a boil in a large pot.
• Pour the boiling water overtop the redbud flowers, mash down, and cover loosely. Set aside to steep/cool for 2 hours.
• Move to the refrigerator for 24 hours.
• After 24 hours, strain the tea through cheesecloth. Squeeze out all of the juices. You should have about 3 cups of liquid.
Make the Jelly
Ingredients
• 3 cups of redbud tea
• 1 TBSP lemon juice
• 1 pack Sure Jell
• 3 cups sugar
• ½ tsp butter
• 4 or 5 ½ pint jelly jars (Boil jars and lids)
Instructions:
• Pour the 3 cups of tea into a large stockpot.
• Add lemon juice.
• Put 3 cups of sugar into a bowl.
• Add the pectin to the redbud & lemon juice mixture in your pot, and whisk to combine. Set this on a burner turned to high heat.
• Stirring constantly with a spoon, bring the jelly to hard boil for 1 minute. Once it’s reached that point, stir in the sugar all at once. Return it to a full, rolling boil again, and boil for 1 minute, still stirring constantly. Add the butter to reduce foaming.
• After one minute, remove from the heat. Ladle the hot jelly into your sterilized jars, leaving a ¼ inch headspace at the top.
• Wipe off the rims of the jelly jars with a damp cloth.
• Place the lids on the jars, and screw on tightly.
You can preserve however you like. Waterbath, use wax, or turn over on your counter for 5 minutes. Flip back over and let stand for 24 hours. If they don"t seal, put in the fridge and use first.

Dandelion Jelly
4 Cups of Dandelion Fluff (no green)
5 cups boiling water (Ends up being 4 cups of tea)
2 TBSP lemon juice
1/2 tsp butter
1 box regular Sure Jell
3 cups sugar
4 or 5 half-pint jelly jars
Water bath canner
Boil water and pour over fluff. Let sit 2 hours to cool then put in fridge for no more than 24 hours. Strain over cheese cloth. Add to large pot. Add lemon juice & sure jell and whisk to dissolve. Bring to a boil. Hard boil for one minute, then add all of the sugar at once. Add butter and bring to another hard boil. Boil for an additional minute. Jar up into jelly jars, wipe rims and add hot lids. Put into a water bath canner. Make sure jars are covered by at least 1 inch of water. Cover and bring to a rolling boil. Boil for 10 minutes. Raise jars out of water and let sit for 5 minutes before removing from canner. Sit on counter and listen for pings. Do not disturb for 24 hours. Those that do not seal, keep in refrigerator and use first.

Cornbread Casserole
2 boxes Jiffy cornbread mix
2 eggs
2/3 cup milk
1 - 1 1/2 lbs ground meat of your choice
1 cup yellow onion, diced
14.5 oz can corn, drained
14.5 oz can pinto beans, drained & rinsed
10 oz diced tomatoes & green chilies
2 TBSP taco seasoning
1 cup shredded cheddar cheese
Preheat oven to 375 degrees F. Spray a 9 x 13 casserole dish with non-stick cooking spray. In a medium bowl, add Jiffy mix, eggs & milk. Mix until smooth. Set aside.
Brown meat & onions in a large skillet. Drain & add taco seasoning, diced tomatoes, drained corn, & rinsed/drained pinto beans.
Pour meat mixture into casserole dish. Top with cheese. Pour cornbread mixture over the top and smooth out. Bake for 40 minutes until golden brown and toothpick comes out clean. Cover loosely with foil and let sit 10 minutes. Serve.

Mashed Potato Casserole
Here's another quick 30-minute meal you can make from left over mashed potatoes! It won't mess up a lot of dishes either. It's a win-win! I remember those days when you have kids going in all different directions for games and/or practices. Everybody's hungry and it is quicker to just go out to eat or pick something up on the way home. It gets old. Thaw some meat out the night before or when you leave for work in the morning and you'll be more prone to cook dinner. It's cheaper, healthier, and you can sit around the table and talk about each other's day. We need to be conversing more and leaving the cell phones in another room. Mashed Potato Casserole
1 lb ground beef, venison, or your favorite meat
Special Blend seasoning
1 (10.5 oz) can cream of mushroom or cream of chicken soup
Mashed potatoes
1 cup shredded cheddar cheese
Preheat oven to 350 degrees F. Brown meat & drain. Season with special blend seasoning. Spray a 7 x 11 casserole dish with non-stick cooking spray. Spread meat mixture in the bottom of the dish and cover with mashed potatoes. Top with cheese and bake for 20 minutes.

Sausage Queso
1 lb breakfast sausage
1 cup salsa
1 can cream of mushroom soup
8 oz cubed or shredded cheddar cheese
8 oz cubed Velveeta or Easy Melt Cheese
4 oz cubed cream cheese
1/2 cup heavy cream
Brown sausage. If you have a lot of grease, drain most of it. Leave some for flavor. Add remaining ingredients, stir, and cover. Cook on low, stirring every little bit to make sure the cheese doesn't stick.
Serve with your favorite torilla chips!

Cheatin' Chile Relleno
My granny didn't make many casseroles, but this was one of them. Cheatin' Chile Relleno... it can be done, start to finish, in about 30 minutes. Serve it up with some rice & beans and add some sour cream, guacamole, and salsa.

Cheatin' Chile Relleno
1 lb ground beef
1 4 oz diced green chiles, drained
1 tsp + 1/8 tsp salt, divided
3 eggs, separated
1/2 TBSP flour
1 cup shredded cheddar cheese
sour cream, guacamole, salsa for toppings (optional)
Preheat oven to 325 degrees F. Brown beef & drain. Add green chiles. Beat egg whites and set aside. Beat egg yolks, add flour & salt and mix until smooth. Fold in egg whites until well blended. DO NOT BEAT. You want them to remain fluffy. Put 1/2 of the egg mixture in the bottom of a 9 x 9 casserole dish sprayed with non-stick cooking spray. Cover with beef mixture. Cover with cheese. Spread remaining egg mixture over the top and bake for 20-25 minutes, or until a light golden brown. Top with condiments as you like.

We have baby chicks! They can always put a smile on my face. Such sweet little peepers. They started hatching on March 10th. We will watch them grow and maybe even start more eggs under another broody hen. :-)

Lemon Cheese Bars
1 Yellow Cake Mix
1/3 cup vegetable oil
2 eggs
8 oz cream cheese, softened
1/3 cup sugar
1 TBSP lemon juice
Preheat oven to 350 degrees F. In a medium mixing bowl, combine cake mix, oil & one egg. Mix until all of the cake mix is moistened & crumbly. Save back one cup for later. Press mixture into the bottom of a 9 x 13 baking pan. Bake for 10 minutes.
While that is baking, place the cream cheese in a medium mixing bowl and beat until creamy. Add one egg, sugar & lemon juice and mix until smooth. Spread onto baked cake mix and sprinkle leftover cake mix over the top. Bake another 15 minutes. Let cool at least 30 minutes. Does not have to be refrigerated. Just cover and keep on the counter.

Black Magic Chocolate Cake
1 3/4 c all purpose flour
2 c sugar
3/4 c unsweetened cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c strong black coffee
2 large eggs
1 c buttermilk
1/2 c vegetable oil
1 tsp vanilla extract
Chocolate Frosting
1 stick butter, softened
1/2 c vegetable shortening
4 c sifted powdered sugar
1 tsp vanilla
about 2 TBSPs milk
Preheat oven to 350 degrees F. Spray either a 9 x 13 pan or (2) 8 or 9 inch cake pans with non stick cooking spray with flour.
Combine all dry ingredients in stand mixer and mix together on low speed.
Add eggs, buttermilk, coffee, oil & vanilla and beat on medium speed for 2 minutes.
Pour batter into greased pan or pans, and bake for 35-40 minutes in 9 x 13 or 30-35 minutes in round pans. Will be ready when a toothpick comes out clean.
Cool pan on a cooling rack for at least 30 minutes.
Make frosting by creaming butter & shortening together. Sift powdered sugar & add cocoa. Mix sugar & cocoa together in a medium bowl. Add sugar mixture in thirds to butter, mixing after each addition. Add a little bit of milk at a time between sugar additions. Add vanilla. Add a tiny bit of milk at a time to get it to a good spreading consistency.
Frost cake when it has cooled completely.

My Papa Mosley made the very best chili. Everyone always begged him for the recipe and my Granny finally convinced him to write it down not long before he passed. Papa's Chili Seasoning
2 oz bottle Chili Powder
1 tsp Celery Seed
2 TBSP Onion Flakes
1/2 TBSP Black Pepper
1 tsp Garlic Powder
1 tsp Oregano
1 tsp Onion Powder
1 TBSP Cumin
1 1/2 tsp Salt
1 tsp Paprika
Mix all together and keep in a jar with a tight fitting lid.
Papa's Chili
5 lbs your choice of meat
Papa's Chili Seasoning above
2 TBSPs Bacon Grease
3 cloves Garlic, minced
1 sm can Tomato Paste
28 oz Diced Tomatoes & Green Chilies
15 ox Crushed Tomatoes
1 1/2 cup Ketchup
flour to thicken
Add bacon grease to a large stock pot and heat. Add garlic and stir for 30 seconds. Add meat and brown. You can drain if you wish. Add all other ingredients, mix, cover and simmer for at least one hour, stirring frequently. If it needs thickening, mix a little bit of flour in some water & add as needed.
You can freeze unused portions.

1 1/2 tsp Oregano

1 lb ground beef
seasoned salt
leftover pinto beans
1 10.5 oz can diced tomatoes & green chilies
Brown ground beef and sprinkle with seasoned salt. Add tomatoes & green chilies. Add pinto beans with juices, to your desired amount. Let simmer for 15 minutes. Dish over cornbread.

Quick Cooker Pinto Beans
1 lb dry pinto beans
5 cups water
bacon, salt pork, or ham (your choice)
3 TBSP Pinto Bean Seasoning (find my video for that recipe)
Sort beans and rinse well. Put all ingredients in your choice of quick cooker. Cook for about 40 minutes. Enjoy over some cornbread!
