Sweet Onion Chicken Sliders

Ingredients:
1 tbsp. Butter
1 Red Onion (sliced)
1/2 tsp. Thyme
1/2 tsp. Salt
1/2 cup Honey
1 lb. Chicken Breast (cooked and pulled)
Instructions:
In a skillet, add butter, onion, thyme, and salt and sauté for 2 minutes or until onions are softened.
Drop temperature to medium low and add honey. Heat through for 3 minutes.
Add chicken. Cover and simmer for 10 minutes.
Serve on burger buns or rolls.

Ingredients:
14 oz. Box Macaroni and Cheese
1 lb. Ground Beef
1 Onion (chopped)
1/2 tsp. Italian Seasoning
1/2 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Garlic Powder
8 oz. Tomato Sauce
2 tbsp. Worcestershire Sauce
3/4 cup Dr. Pepper
1 cup Shredded Mozzarella Cheese
Instructions:
Prepare macaroni (without cheese packet) and set aside.
Brown beef over the stovetop along with onions. Drain.
Add cheese packet and seasonings. Simmer for 5 minutes.
Add tomato sauce, Worcestershire sauce, and Dr. Pepper and cook for an additional 5 minutes.
Stir in 3/4 cup of the cheese.
Preheat oven to 350º F.
Add all contents to a 13 x 9 inch baking dish. Top with remaining cheese
Bake for 20 minutes.

Garden Spaghetti

16 oz. Spaghetti
2-3 tbsp. Olive Oil
2 Zucchini (halved and sliced)
2 lb. Ground Chicken (optional)
10 oz. Cherry Tomatoes (Halved)
1/2 cup Basil Pesto
Instructions:
Cook pasta and set aside.
Sauté zucchini in oil for 3 minutes or until tender.
If adding chicken, remove zucchini, and cook chicken until it is no longer pink. Return zucchini to pan.
Add tomatoes and pesto and combine. Return spaghetti to pan and coat.
Allow to heat through on low heat for 5 minutes and serve.

Instructions:

Cream together sugars, butter, eggs, and vanilla in a large bowl.

12 oz. Wide Egg Noodles
1 cup Sour Cream
6 oz. Cream Cheese (softened)
1 cup Diced Bell Pepper
1 lb. Ground Beef
29 oz. Tomato Sauce

2 cups Shredded Mozzarella Cheese
Instructions:
Cook noodles to al dente, drain, and set aside.
Preheat oven to 350ºF.
In the same pot, combine noodles, sour cream, cream cheese, and bell pepper.
In another pan, brown beef. Add tomato sauce and seasonings.
In a 13 x 9 inch baking dish, layer as follows twice: half of noodle mixture, half of meat mixture, and half of cheese.
Bake uncovered for 25 minutes or until cheese is melted.

1 cup Orzo
1 Red Bell Pepper (chopped)
4 oz. Diced Green Chilies
1 cup Shredded Monterey Jack Cheese
1/2 cup Sour Cream

Instructions:
Preheat oven to 350º F.
In a medium sauce pan, bring 2 cups of water or stock to a boil. Drop temperature to low and add orzo. Cover and allow to cook for 15 minutes or until the orzo has absorbed all of the liquid.
In a 2 quart prepared casserole dish, add orzo, peppers, and Monterey Jack. Mix thoroughly.
Spread sour cream over the top, and top with parmesan cheese.
Bake for 20 minutes.

15.5 oz. Black Beans (rinsed/drained)
2 cloves Minced Garlic
1/2 Minced Bell Pepper
1/4 cup Quinoa (cooked in 1/2 cup water)
1/2 cup Plain Vegan Bread Crumbs
1/2 tsp. Salt
1 tsp. Cumin
1 Egg (optional)
Instructions:
Mash beans and prepare quinoa. Add all ingredients and mix well
Form 6 patties out of the prepared mixture. If needed, refrigerate to firm patties. (Not needed with the egg.)
Add about 2 tbsp. Olive oil to a pan and cook patties for 3 minutes on each side on medium heat.

Serve over rice and optionally top each serving with hot sauce.

In a large stock pot, brown sausage. Drain.
Add spinach, tortellini, tomatoes, and chicken stock and bring to a boil.
Drop temperature to low, cover, and simmer for 10 minutes.
Add cream cheese, in cubes. Simmer for an additional 5 minutes to melt cheese.
Serve with parmesan cheese as a garnish.

Add wine, salt, and pepper and bring to a boil.
Add tuna and cook for 1 minute.
Return pasta and broccoli to pan and heat through before serving.

In another bowl, whisk together dry ingredients.
Add remaining ingredients and mix.
Pour batter in greased 13 x 9 inch baking dish.
In a separate bowl, mix all topping ingredients.
Sprinkle topping over batter.
Bake at 350º F for 40 minutes or until a toothpick inserted in the center comes out clean.

3/4 cup Chicken Stock
1 lb. Peach Preserves (or fresh sliced peaches)
Instructions:
Dredge chicken into the flour mixture and place on wax paper.
On medium heat, heat butter in a pan. Add chicken.
Cook for 5 minutes on each side or until the juices run clear.
Keep warm in an oven on a low setting until prepared to serve.
For the sauce, in the same pan add red onion and sauté for 2 minutes.
Add basil, lemon juice, and chicken stock and bring to a boil.
Lower temperature and add preserves. Simmer for 5 minutes or until thickened.
Serve over chicken.

Slow Cooker Pineapple Chicken Stew

Ingredients:
1 lb. Chicken (cut into chunks)
8 oz. can Pineapple Chunks (drained; juice reserved)
1 Red Bell Pepper (sliced)
1 tbsp. Chopped Ginger
1 tbsp. Brown Sugar
1/2 tsp. Allspice
1 tsp. Cayenne Pepper
2 tbsp. Soy Sauce
1/2 cup. Chicken Stock
2 tbsp. Corn starch
Instructions:
Add all ingredients other than reserved pineapple juice and corn starch to slow cooker.
Cook on High for 4 hours, or Low for 8 hours.
In a bowl, add corn starch to reserved pineapple juice. Mix well and add to slow cooker.
Raise temperature to High and cook for an additional 15 minutes until thickened.
Serve with rice.

Falafel Sandwiches [Vegan/Vegetarian]
These vegan/vegetarian sandwiches make a healthy and filling meal!

Ingredients:
4 Green Onions
2-3 tbsp. Fresh Mint
16 oz. Chickpeas (Garbanzo Beans) (rinsed/drained)
2 tbsp. Parsley
1/2 cup Plain Bread Crumbs
1 tsp. Baking Powder
1/2 tsp. Salt
1/2 tsp. Cayenne Pepper
1/2 tsp. Allspice
1 tsp. Cumin
1 tsp. Coriander
Any desired toppings (ex. tomato, cucumber, yogurt, lettuce, salt/pepper)
Instructions:
Combine ingredients in a food processor to form falafel dough.
Form 8-10 3-inch patties out of the prepared dough.
Add about 2 tbsp. Olive oil to a pan and cook patties for 4-5 minutes on each side on medium heat.
Place two patties into a pita along with any desired toppings.
