Ingredients:
2 cans José Andrés White Tuna in Olive Oil
José Andrés Picual Extra Virgin Olive Oil
2 12-inch French Baguettes
1⁄2 lb. minced Shallot
1 tablespoon minced Chives
1⁄4 cup Mayonnaise
2 stalks, thinly sliced Scallions
2 peeled Hard-boiled eggs
4 quartered Piparras chile peppers (optional)
Salt and pepper, to taste
Instructions:
Preheat oven to 350º F. Slice the baguettes in half lengthwise and brush the cut sides with olive oil. Place on a baking sheet, cut side up, and bake in the oven until lightly toasted, about 5 minutes.
In a large mixing bowl, add the tuna and gently break it up with a fork. Add the shallot, chives, mayonnaise and scallions and mix well until fully incorporated.
Slice the hard-boiled and assemble onto the bottom half of each toasted baguette. Spread the tuna salad on top of the hard-boiled eggs, followed by the quarters of Piparras chiles and then the top halves of the baguette.
Cut each baguette into two pieces and place each half on four separate plates to serve.

Sun-Dried Tomato and Beef Pasta

Ingredients:
6 oz. Penne Pasta
1 lb. Beef Sirloin (cut into 1-inch strips)
5 Green Onions (chopped)
1/2 cup Sun-Dried Tomatoes (sliced)
1 tbsp. Basil
1/2 tsp. Salt
1/2 tsp. Pepper
Instructions:
Prepare pasta and set aside.
Cook beef fore 3 minutes.
Add onions, tomatoes, and seasonings along with 1 teaspoon of oil from tomatoes. Heat through for 3 minutes.
Return pasta to dish along with another teaspoon of oil. Heat for 2 minutes.

Tater Tot Casserole

Ingredients:
1 lb. Ground Beef
1 Onion (chopped)
2 cloves Minced Garlic
2 10.75 oz. cans of Cheddar Cheese Condensed Soup
2 tsp. Chili Powder
1 tsp. Thyme
1/2 tsp. Salt
1/2 tsp. Pepper
1/2 cup Picante Sauce
1 lb. Frozen Tater Tots
1 cup Shredded Taco Seasoned Cheese
Instructions:
Preheat oven to 350º F.
Brown beef along with onions and garlic over the stovetop. Drain.
Add soup, picante sauce, and seasonings and simmer for 3 minutes.
Add mixture to bottom of 13 x 9 inch baking dish.
Top with tater tots.
Bake for 45 minutes.
Top with cheese and bake for an additional 10 minutes.

Slow Cooker Paprika Beef Stew

Spicy Guacamole Chicken Wrap

Ingredients:
2 lbs. Cooked Chicken Breast (cut in chunks)
8 Large Tortillas
4 Avocados
1/2 Red Onion
1 tsp. Salt
1 tsp. Pepper
1 can Chipotle Chilis in Adobo Sauce
3 tbsp. Lime Juice
2 Diced Tomatoes
1 cup Shredded Lettuce
Instructions:
In a food processor, combine onion, 2-3 chipotle chilis (to taste), 1 tsp. of adobo sauce, salt/pepper, and and pulse until finely chopped.
Add Avocados and lime juice and pulse briefly just to incorporate avocados.
Move to a bowl and carefully fold in diced tomatoes.
Assemble wrap by adding chicken, guacamole, and lettuce in the desired amounts to the tortilla.

Three Cheese Spaghetti Bake

Ingredients:
8 oz. Spaghetti
1 Onion Diced
4 cloves Minced Garlic
1 Zucchini (sliced)
1 lb. Ground Beef
15 oz. Crushed tomatoes
8 oz. Tomato Sauce
1 tbsp. Parsley Flakes
1 tsp. Basil
1 tsp. Oregano
1 tsp. Black Pepper
Salt (to taste)
1/2 cup Shredded Cheddar Cheese
1/2 cup Shredded Mozzarella Cheese
1/2 cup Parmesan Cheese
Instructions:
Preheat oven to 350º F.
Cook spaghetti to al dente, drain and set aside.
In a large pot, sauté onions, garlic, and zucchini in a bit of olive oil for 2 minutes.
Add ground beef and cook until no longer pink.
Add tomatoes, tomato sauce and seasonings. Simmer on low heat for 15 minutes.
Add spaghetti and coat in sauce.
Add all ingredients to a greased 13 x 9 inch baking dish. Top with cheeses.
Bake for 45 minutes.

1 lbs Chicken Breast (cooked and cut into bite-size pieces)
1/3 cup Italian Dressing
1 lb. Ravioli
1 tbsp. Parsley Flakes
1 cup Chicken Stock.
1/2 cup Half-and-Half
Parmesan Cheese (optional)
Instructions:
Add chicken and dressing to pan and heat for two minutes.
Add ravioli, parsley, and chicken stock and bring to a boil.
Lower temperature to medium and simmer for 5 minutes.
Add half-and-half. Simmer on low for 5 minutes.
Top with parmesan cheese to serve.

Beef Enchilada Casserole

Ingredients:
2 lbs. Ground Beef
1 Onion (chopped)
20 oz. Enchilada Sauce
8 oz. Tomato Sauce
1 tsp. Chili Powder
8 oz. Ricotta Cheese
1 Egg
Tortillas (up to 18)
2 cups Shredded Monterrey Jack Cheese
2 cups Shredded Cheddar Cheese
Instructions:
In a pan, add beef and onions and cook until beef is browned.
Add enchilada sauce, tomato sauce, and chili powder. Remove from heat and set aside.
In a separate bowl, prepare cheese filling by combining ricotta and egg.
Preheat oven 375º F.
Add layer of tortillas (approx. 6) to bottom of 13 x 9 inch baking dish that has been prepared with cooking spray.
Layer as follows: 1/3 of Monterrey jack cheese, all of the cheese filling, 1/3 of meat sauce, and tortillas. Do two more times, consuming all ingredients.
Top with cheddar cheese and bake for 45 minutes uncovered.

1 cup Whole Milk
1/8 cup Heavy Whipping Cream
4 oz. Plain Yogurt
Instructions:
Combine all ingredients in a medium saucepan and, over medium heat, bring to a boil.
Once boiling, drop temperature to low and simmer for 1 minute.
Remove from heat and allow to sit, untouched, for 5 minutes.
Using a nut milk bag, or cheese cloth, strain cheese.
Serve however you would normally enjoy cheese. Some suggestions are with salt, honey, crackers, or wine.

Add taco seasoning, salsa, and water and bring to a boil.

Instructions:
Add all ingredients except olives, parsley, and lemon juice to slow cooker.
Cook on High for 3-4 hours, or Low for 6-8 hours.
Add remaining ingredients and cook on High for an additional 10 minutes. Serve over pasta.

Instructions:
Add onions, garlic, beef, and peppers in a large pot. Cook until beef is no longer pink. Drain if needed.
Add all ingredients except croutons and cheese, and bring to a boil.
Lower heat to low, cover, and simmer for 10 minutes.
To serve, top with croutons and cheese.

Mustard Dill Salmon and Potatoes

Ingredients:
6-8 Salmon Fillets
2 lbs. Baby Yellow Potatoes (halved)
2 tbsp. + 2 tsp. Dill
2 tsp. Olive Oil
1/4 cup Mayonnaise
1 tbsp. Dijon Mustard
2 tsp. Sugar
2 tbsp. White Wine Vinegar
Salt/Pepper (to taste)
Instructions:
In a large pot, add potatoes and just enough water to cover them. Bring to a boil for 15 minutes.
Once tender, drain and season with salt, pepper, 2 tsp. olive oil, and 2 tsp. dill.
To prepare sauce, mix together mayonnaise, mustard, 2 tbsp. dill, sugar, salt, pepper, and vinegar to a small bowl.
Preheat oven to Broil.
Add salmon to a lightly greased baking sheet, and season with salt and pepper.
Broil for 10 minutes or until salmon is flaky.
Serve with sauce and potatoes.

Eggplant Parmigiana

3 Egg Plants
2-3 tbsp. Olive Oil
3/4 cup Italian Seasoned Bread Crumbs
1 cup Shredded Mozzarella Cheese
1/4 cup Parmesan Cheese
15 oz. Ricotta Cheese
4 cups Pasta Sauce
Salt/Pepper (to taste)
Instructions:
Preheat oven to 450º F.
Slice egg plant into 1/2 inch thick pieces and place onto two baking sheets.
Drizzle with olive oil and salt.
Bake for 30 minutes, flipping the egg plant half way through the cooking time.
Meanwhile, prepare bread crumb topping by combining bread crumbs, 1/2 cup mozzarella, 2 tbsp. parmesan, and 1 tbsp. olive oil.
In a separate bowl, prepare cheese filling by combining ricotta, 1/2 cup mozzarella, 2 tbsp. parmesan, and black pepper.
Once egg plant is done, lower oven to 350º F.
Add one cup of pasta sauce to bottom of 13 x 9 inch baking dish that has been prepared with cooking spray.
Layer as follows: half of eggplant, one cup of pasta sauce, all of the cheese filling, one cup of pasta sauce, remainder of eggplant, remainder of pasta sauce, 1/2 cup mozzarella, all of bread crumb mixture.
Cover and bake for 15 minutes, then for another 15 minutes uncovered.

1 lb. Italian Sausage
1 Onion (chopped)
28 oz. Crushed Tomatoes
4 cups Water
2 cups Chicken Stock
2 cups Yellow Corn Meal
1/2 cup Parmesan Cheese
2 cups Shredded Mozzarella Cheese
Instructions:
Preheat oven to 350º F.
In a large pot, add onions and sausage. Cook until sausage is no longer pink and drain.
Add tomatoes. Cover and simmer for 10 minutes and set aside in a separate bowl.
In the same pot, bring water and chicken stock to a boil.
Add corn meal and whisk constantly until thickened.
Remove from heat and whisk in parmesan cheese.
Add half of polenta to bottom of 13 x 9 inch baking dish that has been prepared with cooking spray.
Layer as follows: half of meat sauce, half of mozzarella cheese, remaining polenta, remaining meat sauce.
Bake for 15 minutes.
Top with remaining mozzarella cheese, and bake for an additional 15 minutes.

Ingredients:
1 lb. Cooked Chicken (Shredded)
15 oz. Black Beans (Rinsed and Drained)
4 oz. Green Chiles (Drained)
1 cup Instant Brown Rice
15.5 oz. Condensed Cream of Chicken Soup
1 tsp. Ground Cumin
1 1/2 cups Salsa
1/4 cup of Water
1/2 cup Shredded Pepper Jack Cheese
Instructions:
Preheat oven to 350º F.
In a 2 quart casserole dish, combine all ingredients except cheese.
Bake for 30 minutes.
Top with cheese and bake for an additional 10 minutes.

Beef Stuffed Shells
These shells are quick, easy, and delicious!

Ingredients:
20 Jumbo Pasta Shells (12 oz.)
1 lbs. Ground Beef
2 cups Chopped Spinach
15 oz. Ricotta Cheese
1 egg
1/4 cup Parmesan Cheese
24 oz. Pasta Sauce
2 cups Shredded Italian-style Cheese
Instructions:
Preheat oven to 350º F.
Prepare shells and set aside.
Brown beef over the stovetop. Add to medium bowl.
Add spinach, ricotta, egg, and parmesan to bowl and mix well.
In the bottom a 13 x 9 inch baking dish, add 1 cup of pasta sauce.
Stuff shells with 1-2 tbsp of meat filling and add to baking dish.
Top with remaining pasta sauce.
Cover and bake for 30 minutes.
Top with shredded cheese and bake uncovered for an additional 10 minutes or until cheese is melted.

Beef and Tomato Frittata

Ingredients:
1 lb. Ground Beef or Italian Sausage
4 Green Onions (sliced)
8 eggs
1 tsp. Italian Seasoning
1 tsp. Garlic Powder
2 Tomatoes (sliced)
1 cup Shredded Sharp Cheddar Cheese
Salt/Pepper (to taste)
Instructions:
Preheat oven to broil.
In a large broiler-safe skillet, brown sausage or beef and set aside.
In a medium bowl, add eggs and seasonings and whisk together.
In the same skillet, sauté onions in some olive oil for 1-2 minutes.
Lower heat to medium and add egg mixture. Allow to set for 5 minutes.
Top with tomatoes, meat, and cheese.
Place uncovered in the oven on broil for 2-5 minutes or until cheese is melted.
