Mozzarella Sticks

Ingredients:
12-24 Mozzarella String Cheese Sticks
2 Eggs
2 tbsp. Water
1/2 cup All Purpose Flour
1 cup Plain Bread Crumbs
2 tbsp. Italian Seasoning
1/2 tsp. Garlic Powder
Instructions:
Prepare one plate with flour, and one with eggs (beaten with water).
In a freezer bag, combine bread crumbs and seasonings.
Dredge cheese sticks into the flour, then eggs, then shake in bread crumb mixture.
Place on un-greased cookie sheet and chill in refrigerator for 1 hour to allow the coating to set.
Preheat oven to 400º F.
Spray sticks with cooking spray for a crispier coating.
Bake for 7 minutes. Serve with marinara sauce.

Sausage Fettuccine

Ingredients:
1 lb. Fettuccine Pasta
1 lb. Ground Italian Sausage
2 cloves Minced Garlic
1 Onion (chopped)
2 tbsp. Corn Starch
1 1/2 cups Half and Half
1/4 - 1/2 cup Parmesan Cheese
Salt/Pepper (to taste)
Instructions:
Cook pasta to al dente, drain, and set aside.
Brown sausage.
Add garlic and onions and sauté until onions have softened.
On medium-low heat, whisk in corn starch and half and half.
Add cheese, salt and pepper, and heat through.
Serve over pasta.

Instructions:

Cream together sugar, butter, eggs, and vanilla in a large bowl.
In another bowl, whisk together dry ingredients.
Add dry mixture to the wet mixture and whisk together.
Add to an 9-inch square baking dish that has been sprayed with oil cooking spray.
Bake at 350º F 20-25 minutes or until a toothpick inserted in the center comes out clean.

Avocado and Sausage Pasta

Ingredients:
1 lb. Radiatore Pasta (or any small pasta)
1/2 lb. Beef Sausage
3 tbsp. Olive Oil
1 tbsp. Red Chili Paste
2 Avocados (cubed)
8 slices Bacon
Salt/Pepper to taste
Instructions:
Cook pasta and drain.
Sauté sausage with chili paste in olive oil.
Toss in pasta and turn off heat.
Add avocados and break pieces of bacon and carefully fold into pasta. Add salt and pepper to taste.

3 1/2 cups Bisquick Mix
1 cup Milk
6 oz. Pepperoni
16 oz. Pizza Sauce
2 cups Shredded Mozzarella Cheese
Instructions:
Preheat oven to 370º F.
In a medium bowl, mix Bisquick and milk until a soft dough is obtained.
In a 13 x 9 inch baking dish that has been sprayed with cooking spray, drop half of the dough into the bottom of the dish by spoonfuls.
Top with half of pizza sauce, half of pepperoni, and half of cheese. Repeat layers to consume the remainder of the ingredients.
Bake 20 minutes or until dough is golden brown.

Add condensed milk and half of lime juice and mix until combined.
Add zest and remaining juice and mix.

1 lb Asparagus

Instructions:
Cook pasta until there are about 5 minutes of cook time left, and add asparagus that has been chopped into one inch pieces.
Drain pasta and asparagus, and set aside.
Add olive oil, garlic, onions, and parsley to pan and sauté until onions have softened.
Return pasta and asparagus to pan, add red pepper flakes and feta cheese, and toss together until heated through.

2 lbs. Chicken Breasts
2 Eggs
1/2 cup All Purpose Flour
1/2 cup Plain Bread Crumbs
Salt/Pepper (to taste)
Canola Oil
Instructions:
Place chicken breasts on a sheet of wax paper. Cover with another sheet, and beat with a meat tenderizer until pieces are 1/4 inch thick.
Season both sides with salt and pepper.
Prepare one plate with flour, one with eggs (beaten with salt/pepper and water), and one with bread crumbs.
Dredge chicken into the flour, then eggs, then bread crumbs.
On medium heat, heat 1 inch of oil in a pan. Add chicken immediately after dredging.
Cook for 2-3 minutes on each side.
Drain on a plate covered with paper towels.
Keep warm in an oven on a low setting until prepared to serve.
Serve with fried potatoes or a salad. Add lemon wedges for sprinkling.

Instructions:

Brown beef over the stovetop. Drain.

Pour meat mixture on top of chips.
Spread sour cream over meat mixture, and top with cheese, tomatoes, and onions.

Cake
2 1/2 cups All Purpose Flour
1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/4 tsp. Salt
1 Stick (1/2 cup) Butter
1 cup Granulated Sugar
2 Eggs
1 20 oz. can Crushed Pineapple
Topping
3/4 cup Brown Sugar
3/4 cup Chopped Pecans
3/4 cup Sweetened Shredded Coconut
Instructions:
Preheat oven to 350º F.
Cream together sugar, butter, and eggs in a large bowl using a mixer at low speed until creamy.
In another bowl, whisk together dry ingredients.
Open can of pineapple and drain off juice to reserve for later.
Rotate between beating in dry ingredients and pineapple juice, starting with dry ingredients, until all is combined.
Fold in crushed pineapple.
Pour batter in greased 13 x 9 inch baking dish.
In a separate bowl, mix all topping ingredients.
Sprinkle topping over batter.
Bake at 350º F for 30-40 minutes or until a toothpick inserted in the center comes out clean.
Serve warm with ice cream.

Place a tortilla into the pan and layer chicken mixture, cheese, and another tortilla. Continue until ending with cheese.

Very Cherry Barbecue Sauce
A barbecue sauce with a tart, cherry twist!
Ingredients:
2 cups chopped and pitted Cherries
1/3 cup Brown Sugar
1/4 cup Red Wine Vinegar
1 cup Ketchup
1/4 cup Tomato Paste
2 chopped Shallots
1 tsp. Red Pepper Flakes
Salt and Pepper to taste
Directions:
1. Add Cherries, sugar, and vinegar to a medium saucepan. Bring to a boil and simmer on low for 10 minutes.
2. Add remaining ingredients, bring to a boil, and simmer again for 5 minutes.
3. If you prefer, you may blend sauce with an immersion blender.
