Kaleh Pacheh Pulao with Yogurt and Cucumber Salad, a Traditional Nourishing Dish at Sadafi Cottage!
Hello Dear Friends,
Today, once again, we introduce you to a traditional dish from this region, made from brain and tongue meat along with rice. This dish is not only delicious but also very filling and nutritious. Due to its rich and oily nature, eating it with yogurt and cucumber salad on the side is very beneficial and complementary.

Cooking this special and tasty dish is very common here and is highly favored by the locals. The excellent climate and suitable vegetation for feeding livestock in this area make the meat and dairy products more delicious, enhancing our traditional foods.

Here, dairy products are widely used, either directly or indirectly, maintaining a beautiful cycle of nature and people who appreciate all the available blessings. This cycle has been in place for years, with the knowledge of traditional cooking passed down from older generations to the younger ones, preserving this beautiful lifestyle and cultural heritage.

Ingredients:
Head
One onion
Pepper
Garlic
Salt
Black pepper
Rice
Turmeric
Instructions:
Clean the head and cut it into smaller pieces. Put them in a pot with some water and bring to a boil.
After boiling for a while, clean the foam off the water, then add the onion, garlic, and pepper. Add salt and black pepper.
After about three hours of boiling and cooking, remove the head from the water and separate the meat from the bones.
Wash the rice and cook it in boiling water, adding the cleaned meat to it. The water added to the rice should be about four finger-widths deep as it won't be drained. Once the rice is slightly cooked and softened, cover it with a lid and lower the heat to let it simmer.
