Cooking Plant-Based Meals in Nature with Fresh Garden Produce (VIRAL!)
Hello friends!
Since we needed fresh, organic garden produce to cook a healthy plant-based meal, today I decided to share this dish with you.
I visited this beautiful shop filled with wooden home decor, beautiful hand-woven rugs, and various handicrafts made by local artisans! People here sell their freshly harvested garden products directly at the entrance of the same garden, which allows for direct, affordable, and extremely fresh and healthy purchases!
Buying from these small stalls is very pleasant and lovely 😊😅.
Among the products grown in these gardens are cucumbers, tomatoes, pumpkins, watermelons, eggplants, bell peppers, and hot peppers.
Today, at the suggestion of my mother and some of our visitors who requested a plant-based meal, we are making a very delicious and healthy dish from these fresh products.
This dish can be served as a main course for vegetarians and will surely become a favorite for those who try it!
Besides avoiding meat, the fact that we don't fry it with oil makes it even healthier.

Ingredients:
- Eggplants - Tomatoes - Bell Peppers - Corn - Hot Peppers - An Onion - Walnuts - Salt - Red Pepper - Wild Plum Puree
Instructions:
1. Chop the walnuts and add grated onion.
2. Add some salt, red pepper, and wild plum puree to this mixture. This delicious mix will be used for stuffing the vegetables.
3. Boil the eggplants with some split peas in a little water and set them aside to cool.
4. Hollow out the peppers and tomatoes, and stuff them with the walnut and onion mixture.
5. Similarly, stuff the eggplants and place them all in a pot, adding a little water.
6. Cook on low heat for half an hour. Our delicious and oil-free dish is ready! 👍🏻

The Caspian Sea, the largest lake on Earth, is often referred to as a sea due to its vast size.
The Aryan civilization first emerged around this expansive lake.
This sea is home to a variety of aquatic life, including numerous fish species.
One of my favorite fish, besides the rainbow trout, is the fish known locally as Fitofak. This fish, combined with vegetables, especially hot peppers, is incredibly delicious.
Today, we are preparing this fish along with several types of herbs and serving it with herb-infused rice.
The spiciness of the herbs, paired with the delightful flavor of the fish and fresh mushrooms grown locally, creates a fantastic combination that I absolutely love.

One of the joys of village life is the natural mineral springs, which have always been essential to human civilization. Many villages have sprung up near these springs or rivers, providing water for drinking and other needs.
Though summer life here is admirable, autumn and winter come with their own set of challenges.
Today, I went to one of the nearby springs to get water for cooking. In this warm summer weather, the cool spring water was a refreshing treat. 😊😅
Today's dish is one of our most famous meals, often prepared for important and grand ceremonies. It's called Khoresh-e Goosht (Meat Stew), made from beef and veal, fried in sheep tail fat.

Ingredients:
Bone-in red meat (beef ribs)
Sheep tail fat
One onion
Dried plums
Salt
Pepper
Turmeric

Instructions:
Cut the meat into desired pieces and fry it in sheep tail fat.
Add salt and pepper.
Place the meat in a container and set it aside.
Fry chopped onions in vegetable oil, then add salt, turmeric, and tomato paste.
Pour the fried meat into a pot, add water, and let it cook.
Pour the prepared onion sauce over the meat and let it simmer for a bit.
Our dish is ready!
This delicious and rich stew is typically served as the main dish at gatherings and parties, accompanied by steamed Iranian rice.

Our ancestors cleverly utilized limited resources, planting wheat and barley in many available lands, and building water mills by rivers to produce flour. They would then make dough from the flour and bake various types of delicious bread.
My grandparents had a water mill in our village of Aqdagi, where they would grind wheat and barley. One of my mother’s favorite methods of baking bread is on a saj (a traditional iron griddle), which she still prepares for us today.
It's customary to use this bread with local brothy dishes like Abgoosht, enhancing the flavor of the meal. Today, by showcasing the preparation of this bread and dish, we hope to convey the delightful lifestyle of this land to you. Abgoosht Recipe:
Ingredients:
Lamb and mutton
Chickpeas
Potatoes
An onion
Dried plums
Tomato paste
Salt
Turmeric

Preparation:
Grind the mutton and fry in hot oil.
