I've been thinking about how to do a no churn non dairy frozen dessert for a while that's smooth and easy. I remember as a kid getting in trouble for eating the "onion grass" and my neighbor teaching us how to eat the nectar from the honeysuckles. I didn't know it at the time but this was foraging. I love the idea of being able to walk outside and find some wild food to eat. To learn more about this subject I read Mark "Merriwether" Vorderbruggen, Ph.D's book Foraging: Over 30 Tasty Recipes to Turn Your Foraged Finds into Feasts. I was so delighted when he agreed to come on as a guest! I learned so much in this conversation. Not only is Mark an expert forager, but he also has a BS in professional chemistry, an MS in medicinal chemistry and a PH.D in Physical Organic Chemistry. I love making pickles and pickled onions are my favorite! I particularly like this recipe with shallots on fatty meat dishes like, tacos, burgers, stews, etc... It's also amazing on vegetarian mushroom dishes. They give great balance to Umami. Recipe 2 large shallots sliced thin 1c Red Wine Vinegar 2T Sugar 1t Sea Salt 1t whole peppercorns 2 bay leaves If this is your first time pickling this is a great recipe to try out. It's important to remember you may need more or less brine depending on how big your jar is. The ratios of salt, sugar, and vinegar are important to the pickling process but everything else is just flavoring. If you like spicy try add red pepper flakes or if your looking for something more herbal add dill, garlic, extra herbs from your garden you don' know what to do with. Salsa verde #short Sometimes you have to improvise! I was so surprise at how bitter the green Everglades tomatoes were. I wound up adding 3 extra limes and honey to mellow it out. But it turned into a fantastic base for cooking. I used it in pulled pork, beef stew, and fried rice! I got these native Florida tomatoes at the Tiki Market in Riviera beach Florida; go check it out!
