Swiss Buttercream vs. Italian Buttercream: A Safer Bet Without a Mixer
Swiss buttercream is like Italian Buttercream's less aggressive cousin. While Italian Buttercream uses liquid hot sugar at 235-240F poured into egg whites while you're beating them, Swiss Buttercream is gently heated over a double boiler before it is whipped into a meringue. This makes it more accessible to people who are trying to bake without a mixer. While I do recommend a mixer to make life easier it's not required. Almost every month I make pulled pork in the slow cooker. I make it different every month. This month I was inspired by the cilantro and parsley growing in my garden to do a Mojo flavor profile. This is going to be very versatile and delicious. Peanut Butter: Pastry Chef Style
We have ALL tried natural peanut butter by now, it's kinda gross. So I'm making something not as unhealthy as the commercial stuff, but not as unappetizing as the health nut raw peanut butter you find in whole foods. It will have sugar and fat but it's mostly peanuts. It's also 100% delicious.
If you want to make it vegan use an oil instead of butter, I would recommend coconut oil since it is a semi-solid at room temperature and has a pretty neutral flavor.

When it comes to meal prep the slow cooker and rice cooker save me a lot of time. They are two tools that are relatively cheap. You can also find slow cookers at 2nd hand stores in perfectly good condition most of the time.
Remember your time is valuable. Pretend you work for your household if you pay yourself an hourly wage would the time it would take you to complete a task cost almost as much as the device that can do it for you? That's generally how I decide if it's worth buying something.

MEAT SAUCE, GRAVY whatever you call it, every Italian family has a their own tomato sauce recipe
Every Italian family has some sort of family recipe for their sauce or gravy, depending on what your family calls it. I am part Italian so I got into the club so to speak. I didn't have anyone to in my family to teach me how to cook Italian food, but I was lucky enough to kind of get adopted into many Italian families in the neighborhood when it came to cooking. Oops! I KILLED MY MOTHER! How to revive a sourdough start after forgetting to feed it for a while
One thing I hate about sourdough snobs is how they shame you for forgetting to feed your mom. They will make you feel like you left your actual mom in the fridge for a week with no food or water. I'm here to tell you it's OK! Everyone, even those snobs will forget to feed their sourdough starter every once and a while. The good thing about the fridge is that the yeast is cold so it takes longer to die because its not using as much energy. So as long as you have a few living yeast cells in there you can bring it back. The only time I would not recommend trying this is if your mom is covered in mold, because the only thing you want to bring back is yeast. Especially if you are making a rye starter, we don't want another Salem witch trials on our hands. (Seriously ergot poisoning made them hallucinate, google it.)

VICTORY GARDEN UPDATE: It's still not too late to plant a one!
An area where healthy food and affordable food is limited is known as a food desert. Where I live fresh fruits and veggies are more expensive, the prices keep going up. There are way more fast food options than healthy ones.
Since losing my jobs to COVID19 I decided to try to offset my food costs by growing some of my own food on my patio, you can grow food anywhere! Through this project I'm learning a lot about my community. Many neighbors introduce themselves (from a safe distance) and some even give me great gardening tips for Florida!
I can't wait to start cooking with my harvest!

Semolina is thrown on the peel to help the pizzas slide into the oven, it also provides a great texture for the crust.
