This is the BEST Bacon Cheeseburger I have ever eaten! Layers upon layers of flavor!!! Huge thanks to Ballistic BBQ and Two Rivers Brewing for inspiration. Recipe is in the description! Ballistic BBQ Channel https://www.youtube.com/user/sd4547 Two Rivers Brewing https://www.tworiversbrewing.com/ =================================== Peanut Butter Brittle Bacon Cheeseburger with Red Pepper/Chili Gastrique Recipe (4) 8oz burger patties White Sharp Cheddar Cheese Bacon cooked Hamburger buns (toasted) Peanut Butter Peanut Brittle Powder (see below) Pickled Red Onions (see below) Red Pepper/Chili Gastrique (see below) Gastrique: 1 Tbsp Olive Oil 2 Red Bell Peppers Chopped 1 Shallot 1 Cup Orange Juice 1/4 Cup Apple Cider Vinegar 2 tsp Lime Juice 2 tsp Lemon Juice 2 tsp Raw Sugar 1/2 Cup Chipolte in Adobo Sauce 1 tsp Cumin Powder Salt & Pepper to taste Heat olive oil in a skillet over med-high heat. Add bell peppers and shallots. Cook for 5 minutes or until soft. Add the rest of the ingredients and simmer until liquid is reduced by half. Let mixture cool, then place in a food processor and process until smooth. Pickled Red Onions: 1/2 Red Onion sliced 1/2 Cup Kosher Salt 1 Cup Lemon Juice 2 Tbsp Raw Sugar Cover slices of Red Onion with Kosher salt and let sit for at least 30 mins. Rinse Red Onions in water several times to remove salt. Add Lemon juice to cover Red Onions, then add Raw Sugar. Allow onions to soak in lemon juice until ready to add to the burger. Peanut Brittle Powder 4 oz Peanut Brittle 2 Tbsp Peanut Butter Powder Place peanut brittle pieces into a bowl along with the peanut butter powder. Coat the peanut brittle with the powder until the brittle is no longer sticky. Add peanut brittle to a food processor and chop until it is a course powder. I show you how to smoke pork ribs using the 2-2-1 method on my Lone Star Grillz offset smoker loaded with mesquite wood. Tacos Al Pastor 2-3 pounds of boneless pork shoulder cubed 1/4 cup Guajillo, New Mexico, and/or California Chili powder 1 1/2 teaspoons Kosher Salt 1 Cup Water 1 Tablespoon Achiote Paste 1 teaspoon cracked black pepper 2 teaspoons garlic salt 2 teaspoons ground cumin 6 large cloves of garlic (chopped) 3 Tablespoons Vegetable oil 3 Tablespoons White Vinegar 1/2 of a large White Onion (chopped) 1 Cup Pineapple Chunks (drained) Corn Tortillas (warmed) Toppings: Sliced Avocado, Diced onion, diced Cilantro, Cotija Cheese, and Fresh Lime juice Place pork, kosher salt, and water into the Instapot. Set the Meat/Stew setting for 30 minutes on high pressure. While pork is cooking, place oil into a pot and saute the onions for 2-3 mins. Add the remaining ingredients to the onions and continue to heat over medium heat for an addition 5 mins. Turn off heat and let cool until pork is cooked. When the pork is done, press cancel on the Instapot and release the pressure. Allow the pork to cool for 10-15 minutes. Reserve 1/2 cup of the cooking liquid. Place the pork into a skillet over medium-high heat. Add the onion mixture to skillet along with reserved cooking liquid. Stir the pork and mixture together while gently crushing the pork to shred it. Cook mixture for about 5 minutes or until most of the liquid has evaporated and pork is shredded or in small chunks. Serve on warm or toasted corn tortillas and top as you wish. Pulse until finely chopped. Add salt to taste. You may warm the Salsa if needed before serving. I show how I make Birria De Res or Beef Brisket tacos smoked on my Weber Smokey Mountain, then braised until fork tender. I'd like to thank Luis Contreras at the Ponderosa Loncheria Restaurant in Snyder, TX for the inspiration in making this Birria recipe. Birria Recipe 12-14 pound beef brisket 6 pack of Mexican beer (preferably dark beer) 6 pack of Dr. Pepper or Cola Marinade Ingredients: 3 New Mexico or California dried chilis 3 Guajillo dried chilis 3 Pasilla dried chilis 3 Ancho dried chilis 1/2 large white onion chopped Sliced Ginger Whole Cloves (5-6) Garlic Cloves (3 large or 6 small) 2 Tsp Salt 2 Tsp Black Pepper 1 tsp Cumino Seed 1 tsp dried Mexican Oregano 1/3 Cup Apple Cider Vinegar 12 oz Dr. Pepper or Cola Toppings: Chopped Onion, Cilantro, and splash of Lime Juice For the Marinade: Place dried de-seeded chilis in water and bring to a boil. Allow to simmer covered 10-15 minutes, then remove chilis from water and place into a blender with remaining ingredients. If blended mixture seems too thick, add more Dr. Pepper or water to thin out a bit. Add salt & pepper to taste. **NOTE: Reserve at least 1 cup of marinade for later!!! Pour marinade over brisket and coat all sides. Allow brisket to marinate at least 6 hrs, but preferably overnight. How to Smoke Birria: After marinating, place brisket onto your smoker at 275F and allow to smoke for 2-3 hrs. Then place brisket into a foil pan or dutch oven, add reserved cup of marinade, 12 oz Dr. Pepper, and 2-3 bottles of your favorite beer and cover with foil. Allow brisket to braise additional 4-6 hrs or until fork tender. Serve chopped brisket with chopped onions and cilantro as a topping and be sure you pour some of the consumme' or braising liquid over the meat. I show how easy it is to make fork tender braised pot roast with carrots and potatoes in your oven. The combination of flavors is astounding! Special Guest: Mad Scientist BBQ https://www.youtube.com/channel/UCselvHbb5ah0sEqZrFa-7nA Meat was provided by Lobel's of New York http://www.lobels.com Ingredients: 3-4 pound Beef Roast 1 small Onion sliced 3 stalks Celery sliced 4 cloves Garlic crushed 1/2 pound Carrots 5 Potatoes peeled and halved 1 packet Onion Soup Mix 2 Tbsp Oil 1 Tbsp Seasoned Salt 2 tsp Black Pepper 2 Tbsp Corn Starch 4 1/2 Cups water (divided) 1 tsp Worchestershire Sauce 1/2 Capful Browning Sauce (Kitchen Bouquet) Instructions: Preheat oven to 300F 1) Saute Onions and Celery in oil over med-high heat for 5 mins. 2) Add garlic and continue sauteing until garlic is fragrant (1-2 mins). 3) Remove vegetables and brown roast on all sides (4-5 mins per side). 4) Remove meat and deglaze dutch oven with 1/2 cup water or wine. 5) Add onion soup mix and desolve in water, then add roast back to dutch oven. 6) Season roast with salt & pepper on all sides. 7) Add sauted vegetables, 4 cups water, cover, and place into oven for 3 hours. 8) Add carrots and potatoes, cover, and continue cooking in oven another 1-2 hours or until roast and vegetables are tender. 9) Remove meat and vegetables to a platter. 10) Place dutch oven onto stovetop over med-high heat. 11) Mix corn starch with remaining water, worchestershire, and browning sauce. 12) Add corn starch slurry to dutch oven and bring to boil. (Add more liquid if needing more gravy) 13) Once gravy is boiling, turn off heat. 14) Serve roast, potatoes, and carrots with rice and gravy. I make Homemade Cabbage Soup with beef and shell pasta. This is a very tasty and hearty meal. Hope you give it a try! Cabbage Soup Recipe Ingredients: 2 lbs ground beef 1 tsp Thyme 1/4 tsp Summer Savory (optional) 1 Bayleaf 1 Small Onion 1/2 Green Bell Pepper 2 Stalks Celery 5 Cloves Garlic 1 Head Cabbage 24 oz Beef Broth 28 oz can Petite Diced Tomatoes 5 Potatoes 8 oz Carrots 8 oz Green Beans 4 oz Shell Pasta 4 Cups Water Salt & Pepper to taste Toppings: Shredded Parmesan Fresh Parsley Instructions: Brown meat and drain grease Add onion, bell pepper, and celery. Sweat veggies for 4-5 mins on Med-High. Add Garlic and continue cooking 2 mins over med-high heat. Add remaining ingredients except for pasta and water. Cook covered on Medium heat for 30-45 mins or until carrots and potatoes are tender. Add Water and Pasta. Continue cooking until pasta is tender (8-10 mins) Fix a bowl of this fantastic soup and top it with Parmesan and Parsley.
