From time to time, someone will tell me about an ingredient I've never used. Sometimes, it's not that big of a deal; other times, it allows me to take my cooking to a whole 'nother level. In this case, it's the latter. These two recipes are both ridiculously simple and will be among the most amazing condiments you've ever tasted.

Super Easy 3 Ingredient Keto Enchiladas (plus 3 sauces compared for carbs and price)
As I state in this video, I'd be shocked if someone hadn't already done this somewhere on YouTube. I try to add a little additional value by comparing three different enchilada sauces, based on price, ingredients and carbs. I also show how sometimes calculating carbs isn't as simple as putting it into a carb calculator app.

Smoked "Cupcake" Chicken Thighs - Consistently Juicy and Delicious!
Many years ago, I saw an episode of Pit Masters, where Myron Mixon showed his method for creating award winning competition chicken thighs. His method for creating consistent looking and wonderfully tender chicken was by using a cupcake tray.
In this video, I show you how to do it and present you with some options for BBQ sauce and rub.

Because the macros on this recipe will vary depending on what you use for a rub and sauce, I'll simply list the steps below...
1. Preheat smoker to 275F (135C). My favorite wood for smoking chicken is cherry wood.
2. Using kitchen or poultry sheers, snip off the "knuckle" ends of both sides of the thigh bone. Also if there is more skin than is necessary to cover the top and sides of the thigh, trim that off.
3. Coat the skin side and bottom of the thigh with the BBQ rub of your choice, then stuff the thighs, skin side down, into a large cupcake or muffin mold with holes cut in the bottom of each cup.
4. Place the mold in an aluminum pan or on a baking sheet, add 1.5 cups (355mL) of chicken stock to the pan and smoke for 1.5 hours.
5. Using a large spoon or tongs, flip each thigh skin side up and smoke for 45 minutes.
6. Transfer the thighs to a separate pan or tray and coat the skin side with the BBQ sauce of your choice.
7. Smoke for another 30 minutes, then serve.

What's the Secret to the BEST low carb (dirty keto) corn tortillas EVER?

I have tried so many low carb tortilla recipes that have left me disappointed. I've been tweaking this recipe for a couple of months trying to really nail the taste and texture of homemade masa tortillas, and I'm really proud of how this turned out.
Be warned: this recipe is a little bit of work, but it's totally worth it. And after you've made it once and have a feel for the flow, you'll be banging these out regularly. Recipe is listed below. I can't promise you'll get the same results if you make any substitutions.
In terms of the extracts/flavoring, you will get 24 batches out of a bottle of Amoretti and 12 batches out of a bottle of OOOFlavors. Based on the prices on Amazon, you looking at using $2 worth of extract for each batch (or 25 cents per tortilla).

Instant Pot - Cola (or Dr Pepper) Braised Short Ribs - Keto Style
This is a keto-fied version of a recipe I used to regularly make in my pre-keto days. Before keto, I found this recipe worked equally well with either Coca-Cola or Dr. Pepper. For this recipe, I'm using Dr. Zevia, which I found tasted a bit sweeter than the Zevia cola. If you can't get Zevia soda where you live, you'll have to decide which sugar free soda to use. From a flavor standpoint, Coke Zero would probably be the best, if you're not opposed to Aspartame.
By using the pressure cooker function of the Instant Pot, we can speed up the braising process considerably. You'll still be looking at over an hour of total cooking time between browning short ribs, sauteing the aromatics, the pressure cook, and the natural release -- but most of that time is "inactive".
In the video, I use 2.5 lbs of meat, but there's enough spice rub and sauce to do 4 lbs, and though this dish has yellow onion (kind of carby), the net carbs per 1/2 lb serving of meat is only 4g.

Something I plan to start doing on this channel is a thing I call "recipe sequencing". This is where I will take a leftover ingredient, leftover recipe, or a useful kitchen technique and do a follow-up video that show more uses.

Low Carb, Smooth Cranberry Sauce / Spread plus Cream Cheese Mousse Two Ways
You're going to get some bang for your buck with this video. I start with a cranberry sauce that is silky smooth and would be great as a topping for ice cream, pound cake or a keto waffle. Then I use the sauce to make a cranberry cream cheese mousse -- both with a whipping siphon and without. If you use a whipping siphon, I recommend storing upside down for the 30 minutes it spends in the fridge, then serve all 4 servings at once. I found that after a day in the fridge, it doesn't dispense all that well.
The way I topped the mousse (with about a TB of the cranberry sauce and a bit of 90% dark chocolate) adds less than 1g of net carbs -- with total net carbs still less than 4g.

Keto Corned Beef Hash w/Turnips instead of Potatoes
I have several simultaneous experiments going on as I try to find specific root vegetables that can emulate potatoes but with fewer carbs.
