How to make Montreal steak seasoning
Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make Montreal Steak Seasoning.
Here is the recipe:
Ingredients
• 2 Tablespoons whole peppercorns
• 1 Tablespoon whole coriander seeds
• 1 Tablespoon dehydrated onion
• 2 Tablespoon dehydrated garlic
• 1 Tablespoon dill seed
• 1 Tablespoon red chili flakes
• 1 Tablespoon paprika
• 2 Tablespoon kosher salt
Method
1. Place the garlic, paprika, onion and kosher salt into a small bowl.
2. Lightly toast the coriander and dill seeds, pepper flakes and peppercorns in a small pan over medium heat until fragrant.
3. Place the toasted ingredients into the bowl with the rest of the seasonings and mix well.
4. Place the mixture into a food mill, food processor or coffee grinder, or use a mortar and pestle to grind down the seeds.
Place the mixture in a sealed container and keep out of the sun. Makes ¾ cup.

Ingredients
Chicken
• 2 large eggs
• 2 Tablespoons cornstarch
• Salt and pepper
• 1-pound boneless skinless chicken thighs cut into small pieces
• 2 Tablespoons vegetable oil
Sauce
• ¼ cup soy sauce
• 2 Tablespoon water
• 1 Tablespoon sesame oil
• 3 Tablespoon brown sugar
• 1 Tablespoon rice wine vinegar
• 1 teaspoon grated fresh ginger
• 2 Tablespoon fresh minced garlic
• 1 Tablespoon sesame seeds
• ½ Tablespoon cornstarch
Method
1. Prepare the sauce. Mix all the ingredients for the sauce in a bowl and set aside.
2. In a large bowl, whisk together the egg, cornstarch, and salt and pepper.
3. Trim any excess fat on the chicken and cut into small pieces. Toss the sauce and the chicken in a bowl and set to the side.
4. In a large skillet, add the cooking oil and heat over medium high heat. Wait until the skillet and oil is hot and add the chicken into the pan in a single layer, being careful not to crowd the pan.
5. Allow the chicken to cook on one side, undisturbed, until golden brown. Flip and repeat the process. Stir the chicken as little as possible to avoid breaking the egg coating on the surface of the chicken.
6. Once the chicken is cooked thoroughly on all sides, pour the sauce over the top. Toss the chicken in the sauce, as the sauce comes up to a simmer it will begin to thicken. Continue to gently stir the chicken in the sauce until thickened.
7. Serve the chicken over a bed of rice and sprinkle with more sesame seeds and sliced green onion

• 1 English cucumber peeled and sliced
• 1 teaspoon kosher salt
• 1 Tablespoon minced garlic
• 1 teaspoon white vinegar
• 1 Tablespoon olive oil
• 2 cups Greek yogurt
• ¼ teaspoon black pepper
Pulse the cucumber in a food processor, add to a fine mesh strainer to drain the liquid. In a large bowl, place the remaining ingredients and mix to combine. Add the drained cucumber and combine until well combined. Refrigerate for 2 hours until well chilled. Serve with warm pita bread or vegetables, or use a as a dip for chips and crackers!

How to make jalapeno pepper jelly

Ingredients:
• 10 jalapeno peppers
• 1 cup white vinegar
• 2 ½ Tablespoons powdered pectin
• 4 cups sugar
Method:
Cut the peppers and remove the seeds and pith. Either mince or put the peppers in a food processor to grind them up. Add the vinegar and the peppers into a small stockpot and add the pectin. Stir well and bring to a boil.
Turn down to a simmer and slowly add the sugar and stir well. Turn heat back up and bring mixture to a boil for a bout 5 minutes. Let simmer for about 5 minutes. Turn off and cool a bit to add to jars or containers. Refrigerate uncovered for 4 to 5 hours. Cover after it is completely cool. Keeps for about 4 weeks with refrigeration.

Delicious chicken paprikash recipe

Ingredients:
• 4 chicken thighs
• 1 Tablespoon vegetable oil
• 3 Tablespoons salted butter
• 1 large onion
• 1 Tablespoon crushed minced garlic
• 3 Tablespoons Hungarian paprika
• 3 Tablespoons all-purpose flour
• 1 cup canned crushed tomatoes
• 1 cup chicken broth
• ½ cup sour cream
• Kosher salt
• Ground black pepper
Method:
Season both sides of the chicken with slat and pepper. Dice onion.
In a large skillet or frying pan add the oil and butter and melt on medium high heat. When butter is foaming, add the chicken and brown on both sides for 6 to 7 minutes. Remove from pan onto a separate plate and set aside.
In the same pan on medium heat, add the diced onions and cook until translucent. Add the garlic and continue to cook until garlic is tender. Add the paprika and flour and stir to cook the roux, about 4 to 5 minutes. Add the chicken broth and the tomatoes and whisk until smooth. Add the chicken and cover the pan and continue to cook for 30 minutes, until the chicken is cooked through.
Add the sour cream to the sauce and whisk until smooth. Serve with egg noodles, rice or mashed potatoes. Enjoy!

Mouthwatering spicy honey dip recipe

Here is the recipe:
• ½ honey
• 1 Tablespoon hot sauce
• 1 Tablespoon apple cider vinegar
• ¼ teaspoon crushed red pepper flakes
• ¼ teaspoon salt
Place all ingredients in a small saucepan over medium heat. Stir to combine and heat until mixture comes to a boil. Boil for 4 minutes while mixing. Remove from heat and let cool completely. Serve over crispy fried chicken, pizza or grilled meat.
Store in the refrigerator or in the pantry at room temperature.

Dice the onion, avocado, jalapeno, and the tortilla and place in separate bowls. Slice the lime into wedges. Melt the butter in a small frying pan and fry the diced tortillas until slightly crispy and bubbly. Add the eggs to the mixture and scramble. Add ½ the cheese and turn off heat. In another pan over medium high heat, place a tortilla into the pan and heat on both sides for about 15 seconds until the tortilla is pliable and can be used for a taco. Place all the fried tortillas into a towel to keep warm. Arrange all the ingredients onto the table or tray and serve and enjoy!

How to make braised short ribs
Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make Soy Braised Short Ribs.
Mix beef broth, soy sauce, pear, honey, gochujang, sesame oil, garlic, ginger, and salt in a bowl. Set aside 3 Tablespoons for later.
Pour the larger amount of sauce into a slow cooker and set ribs meat side down into the sauce and cover. Cook on high for 4 hours or low heat for 6 hours. Or any time combination you wish.
When ribs are done cooking, preheat oven broiler to 450 degrees F.
Transfer the ribs to a sheet pan-brush the ribs with the reserved sauce from earlier, and broil for 5-10 minutes until the meat is slightly crispy.
Sprinkle with scallions and sesame seeds. Serve with rice. Enjoy!

Here is the recipe:
Spicy Thai Basil Chicken (Pad Krapow Gai)
Yields 2 servings
Ingredients:
• 1 ½ pounds de-boned chicken thighs diced
• 1/3 cup chicken broth
• 1 Tablespoon oyster sauce
• 1 Tablespoon soy sauce
• 2 teaspoon fish sauce
• 1 teaspoon white sugar
• 1 teaspoon brown sugar
• 2 Tablespoon vegetable oil
• 1 Tablespoon minced garlic
• 2 Tablespoons minced hot chilies
• 1 cup chiffonade fresh basil leaves
Method:
1. Mix the chicken broth, oyster sauce, soy sauce, fish sauce. Both sugars together in a bowl.
2. Heat a large skillet or wok over medium high heat. Add oil.
3. Add the chicken and stir fry for about 3 minutes.
4. Stir in the chilies and the garlic and keep cooking for another 3 minutes.
5. Add about a tablespoon of the sauce mixture and stir fry for another 5 minutes until sauce begins to caramelize.
6. Add the rest of the sauce and continue cooking until the sauce has deglazed the bottom of the pan and glazes onto the chicken.
7. Remove from heat. Stir in fresh basil and continue stirring until the basil has wilted.
8. Serve with rice.

Stir Fried Bok Choy
Yield 4 servings
Ingredients
• 1-pound bok choy
• 2 Tablespoon soy sauce
• 2 Tablespoons beef broth
• 1 Tablespoon rice vinegar
• 1 Tablespoon sesame oil-divided
• 1 teaspoon honey
• 1/8 teaspoon red chili flakes
• 2 Tablespoon vegetable oil-divided
• 1 Tablespoon minced garlic
• 2 teaspoons minced ginger
• ¼ cup sliced green onions
• ¼ teaspoon sesame seeds
Method
1. Rinse the bok choy with water. Dry with paper towel. Cut in half lengthwise.
2. In a small bowl combine the soy sauce, broth, vinegar, 2 teaspoons of the sesame oil, honey, and red chili flakes.
3. In a wok or skillet add 1 Tablespoon vegetable oil and 1 teaspoon of sesame oil over high heat to the point of smoking.
4. Set the bok choy into the hot oil cut side down in one layer. Cook until lightly browned, about 1-2 minutes. Flip the bok choy over and repeat the step. Transfer browned bok choy to a plate.
5. Add one tablespoon of oil to the wok, add garlic, ginger and green onions and stir fry until fragrant.
6. Add soy sauce mixture to the wok and simmer until thickened.
7. Add the bok choy back into the wok and stir fry until the sauce glazes the greens
8. Transfer to a platter and garnish with sesame seeds
