Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make green Schug sauce, a middle eastern hot sauce. Here is the recipe:
Ingredients
• 4-jalapeno peppers
• 1 Tablespoon minced fresh garlic
• ½ cup fresh parsley
• ½ cup fresh cilantro
• 1 Tablespoon freshly squeezed lemon juice
• ½ teaspoon salt
• ¼ teaspoon cumin
• 1 teaspoon coriander seeds
• ½ cup olive oil
Method
• De-seed the jalapenos if you wish to
• Add half the olive oil into a food processor or blender, along with the jalapeno peppers and pulse a few times to break down the peppers.
• Add the rest of the ingredients and the remaining olive oil and continue to pulse to emulsify the mixture. The results should be a chunky sauce with pieces of the herbs in it.

How to make homemade gingerbread spice mix

Ingredients
• 2 Tablespoons cinnamon
• 2 teaspoons ground ginger
• 2 teaspoons ground cloves
• ½ teaspoon allspice
• ½ teaspoon cardamom
• ½ teaspoon coriander
• 1 star anise
• ¼ teaspoon nutmeg
• ¼ teaspoon black pepper
Method
1. Mix all the ingredients in a bowl
2. Grind in a coffee mill, nutra bullet or a mortar and pestle to achieve a nice powder.
3. Use in bread, cookies, or all manner of doughs.
Makes 4 ½ Tablespoons. Enjoy!

How to make delicious French chicken and potatoes
Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make French Chicken and Potatoes. Here is the recipe:
Ingredients
• 6 boneless skinless chicken thighs
• Salt and pepper
• 2 Tablespoons butter
• 1 Tablespoon fresh minced garlic
• 1 cup diced celery
• 1 cup diced onion
• 1 cup sliced mushrooms
• 3 small russet potatoes-washed and quartered
• 3 Tablespoons flour
• ½ cup white wine
• 2 cups chicken stock
• 1 sprig fresh thyme
• 1 branch fresh rosemary
• 1 bay leaf
• ½ cup heavy cream
Method
1. Melt butter in large saucepan at medium heat. Salt and pepper both sides of the chicken and brown the chicken for 5 minutes on each side, getting a nice color.
2. Remove chicken after browning and set aside. Add mushrooms, onions, and celery and sauté for about 5 minutes until onions are translucent.
3. Add the garlic and stir for about 1 minute
4. Whisk in the flour and let cook for about 1 minute
5. Add the chicken stock, fresh herbs and stir well.
6. Add the wine and stir well, add the potatoes and the chicken into the pan.
7. Cover and cook over medium heat for about 30 minutes, checking the potatoes halfway through.
8. When the potatoes are fork tender and the chicken has reached an internal temperature of 165 F, stir in the heavy cream, and let cook for 1 more minute.
Serve with French bread and a glass of white wine
Make 6 servings

Ingredients
• 1 Tablespoon ground bay leaves

Ingredients:
Garlic Aioli
• ½ cup mayo
• 1 Tablespoon lemon juice
• 1 Tablespoon minced garlic
Bravas Sauce
• 2 Tablespoon Olive oil
• ½ yellow onion diced
• 1 Tablespoon minced fresh garlic
• 2 Tablespoons smoked paprika
• 1 14 oz can dice tomatoes
• 1 teaspoon sugar
• ½ teaspoon salt
• ½ teaspoon black pepper
• ¼ cup white wine vinegar
Potatoes
• 3 medium russet potatoes-cut into ½ inch cubes
• Vegetable oil for frying
Method:
1. Make the garlic aioli by mixing the ingredients. Chill in refrigerator until potatoes are done.
2. In a large pot heat about 2 inches of oil to 300 degrees F.
3. Working in small batches, fry the potatoes for about 5 minutes, then remove from oil and place on a lined cookie sheet to cool. Continue this process until all the potatoes are fried.
4. While the potatoes cool, make the brave sauce by heating the olive oil in a saucepan and sautéing the onions until soft and translucent. Add the garlic and sauté for 2 more minutes. Add the paprika, tomatoes, salt and pepper, vinegar, and sugar. Mix well and cover and let simmer for 10 minutes.
5. Reheat the oil and fry the cooled potatoes for 5 minutes until golden brown. Place them back on the cooling rack.
6. Place the bravas sauce in a blender or processor and blend until smooth
7. Place the cooked potatoes in a serving bowl and add some of the bravas sauce and mix well. Top with the garlic aioli and serve.
Makes 4 servings. Enjoy!

• 2 pounds flank, chuck, or top round
• 1 onion sliced
• ½ red pepper sliced
• ½ yellow pepper sliced
• ½ orange pepper sliced
• 1 Tablespoon fresh minced garlic
• 1 Tablespoon smoked paprika
• 1 Tablespoon cumin
• 1 Tablespoon oregano
• 15 ounce can crushed tomatoes
• 14.5 ounce can petite diced tomatoes
• ½ cup white wine
• ½ cup beef broth
• 2 bay leaves
• ¾ cup pimiento stuffed olives
Method
1. Preheat oven to 300 degrees F. Heat oil in a large pot or Dutch oven over medium heat.
2. Season the beef with salt and pepper
3. Add the meat to the hot oil and brown on each side for about 4-5 minutes each.
4. Remove the meat and set aside
5. Place the onions and the peppers into the pot and cook for about 7 minutes or until the vegetables are tender.
6. Add the garlic and stir well, pour in the wine, and simmer and reduce by half.
7. Add the paprika, cumin, oregano, both cans of tomatoes, beef broth and bay leaves. Stir to combine.
8. Place meat back into the pot, cover the pot and place back into the oven or simmer on the stovetop for about three hours, or until the meat is tender.
9. Shred the meat into pieces in the pot, add the olives and stir well. Simmer for about 10 more minutes.
10. Serve with rice and beans
Yields about 6 servings. Enjoy!

Method
1. Melt butter in a large Dutch oven or pot. Add the diced onions and sauté.
2. Once the onions have become fragrant, add the mushrooms, and cook down until the mushrooms are soft and halved in volume
3. Add the dill weed, thyme, garlic, and paprika, stir well, then add the lemon juice and stir again, and let cook for about 2 minutes.
4. Add the flour little by little until a roux forms, cook the roux for about 2 minutes.
5. Add the soy sauce and milk, and stir, continuing to cook.
6. Add the chicken stock and using a whip, mix the soup until it begins to thicken.
7. Lower the heat to medium and simmer the soup for about 10 minutes.
8. Garnish with sour cream and fresh parsley.
Makes about 4-6 servings. Serving sizes vary. Enjoy!

Method
1. Preheat oven to 300-degree F. Line a baking pan with parchment paper
2. Separate egg yolks and whites
3. Mix the egg whites and cream of tartar on high speed in mixing bowl until it forms stiff peaks
4. In a large bowl mix the egg yolks and the yogurt until smooth.
5. Gently fold about 1 cup of the egg white mixture into the yolk mixture until well combined. Slowly fold in remaining egg white mixture until gone.

Ingredients
• 5 dried Arbol chilies
• 4 dried Puya chilies
• 1 quart chicken stock
• 1 onion diced
• 1 jalapeno pepper-diced
• 2 teaspoons dried oregano
• 1 ½ teaspoon ground cumin
• 1 teaspoon garlic minced
• 1 teaspoon smoked paprika
• 2 ½ pounds beef stew meat
• 3 Tablespoons flour
• 2 Tablespoon oil
• 1 bay leaf
• Juice of 1 lime1 Tablespoon cornstarch
• 1 Tablespoon water
Method
1. Remove stems and seeds from the peppers. Place chilies in a saucepan and cover with chicken stock. Bring to a boil, then reduce heat and simmer uncovered for about 30 minutes.
2. Add the flour, and salt and pepper to the stew meat and mix well. Add the oil to a large skillet and on medium high heat, brown the beef in the hot oil. Remove meat from pan and set aside
3. In the same pan, add the onion and jalapeno pan and sauté for several minutes. Then add the chicken stock with the chilies-stir well, then remove and set aside to cool. When cooled enough to handle. Blend all the ingredients into a puree and set aside.
4. While sauce is cooling, add the meat and the accumulated juices back into the pan, bring back up to heat, then add the pureed sauce, oregano, cumin, paprika, and garlic into the pot, stir well.
5. Bring to a boil, reduce heat to low, and cover and simmer for an hour, or until the meat is tender.
6. When meat is tender, add the lime juice, make the cornstarch slurry with the cornstarch and water, and stir in as well until slightly thickened.
7. Serve with tortillas and rice. Makes 8 servings. Enjoy!

Ingredients
• 4 whole dried Ancho chilies
• 4 whole dried Pasilla chilies
• 1 quart chicken stock
• 1 cup frozen OJ concentrate
• 1 7 ounce can chipotle chilies in adobo
• 2 Tablespoons white vinegar
• 2 Tablespoons fish oil
• 3-pound pork shoulder trimmed and cut into cubes
• 2 Tablespoon vegetable oil
• 2 onions
• 2 Tablespoons minced fresh garlic
• 2 teaspoons dried oregano
• 3 bay leaves
• Salt and pepper to taste
Method
1. De-seed and trim off the stems of the dried chilies.
2. Over medium heat, place the chilies in a large Dutch oven or stock pot and toast until fragrant, stirring frequently, until slightly darkened-about 5 minutes.
3. Add the chicken stock, orange juice, chipotles, vinegar, and fish stock and bring to a boil then reduce to a simmer
4. Cook on simmer for about 15 minutes until the chilies are completely soft.
5. Remove the sauce and cool-then blend into a smooth puree.
6. Add the vegetable oil to the pot and heat. Add the diced pork and stir well. Add the onions, garlic. After onions have softened a bit, add the oregano and cumin. Continue to stir.
7. Add the pureed chili mixture to the pot, add the bay leaves and bring to a boil.
8. Reduce to a simmer, then cover and cook for about 2 hours, stirring frequently.
9. The sauce should be thick as a ketchup when it is finished, and the pork tender-season to taste with salt and pepper.
10. Serve with tortillas. Cilantro, limes, and radishes.
11. Cool properly and store in refrigerator for up to a week in an airtight container.

How to make your very own Thai seasonings

INGREDIENTS
• 2 teaspoons paprika
• 1 teaspoon turmeric
• 1 teaspoon coarse black pepper
• 1 teaspoon coriander crushed
• 1 teaspoon fenugreek
• ½ teaspoon mustard powder
• ½ teaspoon ground cumin
• ½ teaspoon ground ginger
• ¼ teaspoon cayenne powder
INSTRUCTIONS
• Mix all the seasonings in a bowl. Store in an airtight container out of sunlight. Makes about 3 Tablespoons. Enjoy!

Mouthwatering salmon stroganoff recipe

INGREDIENTS
• 1-pound fresh salmon, cubed
• 8 ounces sliced mushrooms
• 3 Tablespoons salted butter
• 2 cloves garlic, chopped
• 1/3 onion-diced
• 1 teaspoon beef base
• 2 cups heavy whipping cream
• 1/2 cup fresh parmesan cheese
• 2 Tablespoons chives, chopped
• 1 teaspoons basil
• 1 teaspoons oregano
• ½ bag egg noodles
INSTRUCTIONS
• In a large pot, begin boiling water for noodles.
• Warm a large frying pan on medium/high heat, melt the butter and cook the garlic and onion
• Once the butter begins to melt, add the mushrooms, and cook until the butter absorbs into the mushrooms.
• Add in heavy whipping cream and increase the heat to high.
• Once the cream begins to boil, reduce the heat to medium, add parmesan cheese and other seasonings, and stir.
• Once all the ingredients are combined, add the salmon, and cook for 3-5 minutes.
• Salmon will appear a pinkish white when finished. Remove a piece of the salmon and check to make sure it is fully cooked.
• Combine salmon mixture with noodles in a large bowl and top with chives.

Ingredients:
• ½ cup Mayo
• ¼ cup ketchup
• ½ teaspoon garlic powder
• ¼ teaspoon Worcestershire sauce
• Black pepper to taste
Method
1. Mix the mayo, ketchup, garlic powder, Worcestershire sauce into a bowl
2. Cover the top of the ingredients with black pepper and stir well.
3. Add another layer of black pepper onto the surface area of the mixture and stir again
4. Let the sauce sit in the refrigerator for up to two hours for maximum flavor
Makes ¾ cup. Enjoy!

Ingredients:
• 1 Zucchini
• 1 Yellow Squash
• ½ onion
• 2 small, sweet peppers
• 2 teaspoons fresh minced garlic
• ¼ cup olive oil
• 1 ½ Tablespoon Italian seasonings
• Salt and pepper to taste
Method
1. Slice zucchini lengthwise and slice into half medallions. Add to a large bowl.
2. Julienne the onions and the sweet peppers. Add to bowl.
3. Add olive oil, Italian seasoning, and fresh garlic. Stir well.
4. Add salt and pepper. Stir again.
5. Place on a sheet tray in 1 layer and bake in a preheated oven at 450 degree for 10-15 minutes.
Makes 4 servings. Enjoy!
