Crockpot breakfast casserole recipe
Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make a Crockpot Breakfast Casserole. Here is the recipe:
Ingredients:
• 10.5 oz can of cream of celery
• 1 cup milk
• 32 ounces of thawed frozen hashbrowns
• 1 pound of diced breakfast sausage-cooked
• 1 diced yellow onion
• 1 ½ cup grated pepper Jack cheese
• Salt and pepper to taste
Method
1. In a saucepan, simmer the soup and the one cup of milk to heat
2. Put the onions, sausage, ½ the cheese, and the hashbrowns in the crockpot
3. Pour the heated soup mixture into the crockpot and stir in salt and pepper
4. Place the remaining cheese on top, cover and leave on high for 3 hours, or low for 6 hours.
5. Enjoy with eggs and toast!
Yields 8 servings.

Lemongrass Beef | It's Only Food w/ Chef John Politte
Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make Beef Lemongrass. Here is the recipe:
Ingredients:
• 11 ounces of beef sirloin
• ¼ cup vegetable oil
• ½ medium onion julienned
• ½ red pepper julienned
• ½ yellow pepper julienned
• 1 Tablespoon fresh minced garlic
• 2 stalk sliced lemongrass
• 2 Tablespoons soy sauce
• 1 Tablespoon fish sauce
• 1 Tablespoon red pepper flakes
Method
1. In a wok or medium sized frying pan, heat 1 Tablespoon oil and place beef in the hot pan in a single layer, when one side is browned, flip and brown other side.
2. Remove beef and juices from the pan into a plate or bowl.
3. Add remaining oil and sauté the onion, peppers, garlic, and lemongrass until onion is soft.
4. Add the red pepper flakes and stir well.
5. Add soy sauce and fish sauce, continue to stir fry for 2-3 more minutes
6. Add the beef back into the pan and stir fry until heated through.
7. Serve with rice and top with fresh cilantro and more red pepper flakes

Thanks for watching Its Only Food w/Chef John Politte. In this video we are showing you how to make Ground Beef Mongolian Noodles. Here is the recipe:
Ingredients
• 1 pound ground beef
• 8 ounces pre-cooked soba noodles
• ½ cup beef broth
• ½ cup soy sauce
• ½ cup sliced green onions
• ½ cup brown sugar
• 1 Tablespoon Hoisin sauce
• 1 Tablespoon minced fresh ginger
• 1 Tablespoon minced fresh garlic
• 1 teaspoon red pepper flakes
• 2 tablespoon cornstarch
• 3 Tablespoon water
Method
1. In a large skillet, cook the ground beef.
2. When the beef is almost cooked, add the ginger and garlic and stir well
3. Add the soy sauce, beef broth and hoisin sauce, and continue to stir and cook
4. Add the green onions and the red pepper flakes, stir well, and bring mixture to a medium high heat
5. Mix the cornstarch and the water and add to the skillet and stir well to incorporate the slurry.
6. As mixture thickens, add the noodles, and mix well, lower heat to a simmer. And cover to let the mixture incorporate.
7. Serve with more sliced green onions, peanuts, and sesame seeds.
Makes 4-3/4 cup servings

Ingredients
• 1 large red onion peeled and sliced very thin
• ¾ cup apple cider vinegar
• ¼ cup water
• 1 teaspoon salt
• 1-2 Tablespoon sweetener of your choice
Method
• In a small saucepan heat all the ingredients except the onion. Cook over medium heat and bring to a simmer.
• Slice the onion very thinly and place in a mason jar
• Pour the heated mixture into the jar to evenly covering the onion. Put the lid on and shake well
• Marinate the onions for about 30 minutes
• Serve immediately. Onions can be kept in the jar for up to two weeks.

• 1 teaspoon red pepper flakes
• Salt and pepper to taste
Method
1. Place the drained and rinsed chickpeas in a large bowl and mash with a fork to desired consistency.
2. Add the mayo, red pepper flakes, salt and pepper, onion, relish, celery, and garlic powder and mix well.
3. Refrigerate for at least an hour and serve on toast, bread or in a wrap.
Makes 4 servings. Enjoy!

Ingredients
• 1 cup cheddar cheese
• 1 large 12-inch flour tortilla
• 1-pound spicy Jimmy Dean sausage
• 2 Jumbo eggs
• 2 Tablespoons vegetable oil separated to one each for eggs and tortilla
Method
1. Cook sausage until fully cooked and crumbled well. Set aside
2. After sausage is fully cooked, cook eggs in 1 Tablespoon of the oil until fluffy.
3. In a large saucepan, on medium high heat, place the rest of the oil in the pan and use the tortilla to spread the oil around, place the cheese on the top of the tortilla and let it melt. Turn off the heat.
4. Add the sausage and the egg on half of the tortilla, fold it over. Slide the tortilla onto a cutting board and cut in diagonal pieces like a pizza.
5. Add your favorite condiments to serve with.
Serves 1 per tortilla. Makes 3 servings. Enjoy!

• 3 celery stalks diced
• 2 Tablespoons cornstarch

• ½ Tablespoon onion powder
• 1 Tablespoon garlic powder
• ½ Tablespoon diced ginger
• ½ cup vegetable oil
For the sauce
• ½ cup chicken broth
• ¼ cup oyster sauce
• ¼ cup rice vinegar
• ½ Tablespoon minced garlic
• 1 Tablespoon black pepper
• 1 Tablespoon chili powder
• ½ tablespoon minced ginger
Method
1. Cut chicken into 1-inch cubes
2. Place chicken in a bowl and toss well in the cornstarch and pepper
3. Heat oil in skillet and cook the chicken quickly, being sure not to overcrowd pan.
4. Add the garlic, ginger, onion powder and garlic to the chicken and stir well.
5. Add the celery and cook for 2 minutes, then add the peppers and onions, sauté for about 5 minutes until the vegetables are tender.
6. Add sauce to the pan, bringing the mixture to a boil, reduce heat and simmer for about 10 minutes allowing the mixture to thicken.
Serve with rice (serves 6) and enjoy!

Ingredients:
• 1 walleye filet (6-8 ounces peeled and deboned)
• 2 cups AP flour
• 2 cups milk
• 2 cups panko breadcrumbs
• 2 hamburger buns
• 2 Tablespoons tartar sauce
• 1 cup shredded lettuce
• 4 sliced tomatoes
• Oil for frying
Method:
In 3 separate dishes place the flour, milk, and breadcrumbs for dredging. Dip the walleye in the flour and cover, then dip in the milk, and then the panko breadcrumbs and cover completely so the breadcrumbs adhere to the walleye.
On a heated flat top grill or heated frying pan, add oil and place the fish in the oil to start frying. After about 2-3 minutes, flip the fish when it has a nice golden brown color crust. Repeat the process on the other side until the inside of the fish is opaque and completely cooked through.
Toast the buns on the grill, add the tartar sauce on both buns with the lettuce and the tomatoes. Enjoy!

Ingredients
• 8 ounces angel hair pasta
• 8 ounces sun dried tomatoes
• 1 roasted pepper-jarred is fine
• 3 cloves garlic
• ½ cup fresh basil leaves
• ½ cup fresh shredded Parmesan cheese
• Olive oil as needed
• Salt and pepper to taste
Method
1. Cook pasta n salted water-reserve 1 cup of the pasta water before draining.
2. As the pasta cooks, blend the sun-dried tomatoes, roasted pepper, garlic, basil and Parmesan cheese in a food processor or blender until it forms a thick paste.
3. Add a bit of olive oil until the paste becomes smooth.
4. Add salt and pepper to taste.
5. Drain pasta and place in a large bowl with the tomato mixture.
6. Add the reserved water to the mixture so it begins to form a sauce. Continue to add the water until you reach the desired consistency.
7. Serve hot and top with more Parmesan cheese. Serve with garlic toast or a breadstick

Ingredients
• 2 Tablespoon black pepper
• 2 Tablespoon lemon zest
• 1 Tablespoon Sea salt
Method
1. Zest the lemon and place the zest and the pepper on a cookie sheet with foil. Place in a 200-degree oven for about a half hour, just enough time to dry out the lemon zest.
2. Pull mixture from oven and mix in a bowl with the sea salt.
3. Grind seasonings with a mortar and pestle or in a food mill to reach the desired consistency.
4. Keep in a n airtight container out of the sunlight for a couple of months.

Ingredients
• 1-pound large shrimp-peeled and de-veined
• ½ cup chicken broth
• 2 teaspoon rice wine
• 1 ½ teaspoon soy sauce
• 1 ½ teaspoon cornstarch
• ¾ teaspoon sugar
• 1 Tablespoon plus 2 teaspoon vegetable oil
• 2 Tablespoon minced garlic
• 1 teaspoon minced ginger
• 6 ounces washed and dried snow peas
Method
1. In a bowl, combine the broth, soy sauce, rice wine, sugar and cornstarch.
2. Heat wok over medium high heat. Add oil to the wok and cook shrimp for 3-4 minutes in a single layer until pink. Add the ginger and the garlic and stir fry for another 15 seconds. Add the peapods and stir fry another minute more.
3. Stir the cornstarch mixture, add it to the wok and bring to a boil. Stir fry the shrimp and pea pods for about 2 minutes until the sauce thickens.
4. Serve immediately with rice or noodles.

Ingredients
• 3 Tablespoons olive oil
• 3 large, sweet onions diced
• 2 shallots minced
• 1 ½ Tablespoon sugar
• 1/3 cup balsamic vinegar
• 1/3 cup sour cream
• 3 Tablespoon mayo
• Salt and pepper to taste
Method
1. In a large, covered saucepan over medium high heat, sauté the onions in the olive oil until translucent.
2. Uncover the pan and continue to cook the onions until they begin to brown, turn heat to low
3. Add the shallots and continue to sauté until softened.
4. Add the sugar and continue to cook and stir until the onions turn a caramel color.
5. Add the vinegar and continue to cook and stir until it evaporates
6. Remove the onions from the heat and allow to cool-
7. Add the cooled onions to a bowl and combine with the sour cream and mayo, season with salt and pepper to taste, adjusting as needed.
Serve with chips, crostini, bruschetta, or crudité. Yields 2 cups.

Ingredients
• 1 pound breakfast sausage
• ½ diced onion
• ½ diced red pepper
• 7 ounces green chilies
• 2 cups cheddar cheese
• 8 large eggs
• 10 can of green chili sauce
Method
Preheat oven to 350 degrees
1. In a large skillet cook the sausage, onion, and red pepper
2. When the sausage is cooked, and the onion and pepper are soft add the green chilies and stir well
3. Add the eggs to the pan, stir well and cook until set
4. After eggs are set, remove the pan from heat and assemble the enchiladas by rolling about ¼ cup of the mixture in the flour tortilla, roll tightly and leave the ends open, place the filled tortilla seam side down in a 7 x 11 casserole dish or aluminum baking dish.
5. When all eight tortillas are in the dish, cover with the enchilada sauce, cover with cheese, and bake covered, in the oven for 20 minutes, so cheese is melted, and the sauce is piping hot.
