Lasagna; Noodles Made from Scratch
I had planned an in depth recipe video, but since this footage is a year old already and am just now posting it, I decided a quick version worked better.
Fresh Egg Pasta Recipe:
Yield:Makes about 1-1/4 pound
Ingredients:
4 large eggs (7/8 cup, if less add water until 7/8 cup)
17.5 oz (~3.5 cups) AP flour
.6 oz (1 tsp) salt
.42 oz (1 Tbsp water)
Directions:
Add flour and salt to stand mixer.
Use beater attachment on speed 2.
Gradually add eggs and 1 Tbsp water.
Mix 30 seconds.
Exchange beater with dough hook.
Knead two minutes on speed 2.
Let dough rest 20 minutes.
Divide into 4 pieces.
Process with Pasta Roller Attachment.
Flatten each piece.
Set roller spacing to 1.
Use speed 2 to feed dough through rollers.
Fold dough in half and roll again lightly dust with flour to prevent sticking and aid drying.
Repeat until dough is smooth and pliable and covers width of roller.
Set roller spacing to 3.
Repeat feeding and decreasing roller spacing until desired thickness is reached.
Lasagna Recipe:
Make 1 lb fresh egg pasta.
Make a Bolognese or Raju.
Cook fresh pasta in salted water (~2-5 minutes depending on thickness).
Grease bottom of 9x13 baking dish.
Add raju to bottom.
Layer with pasta, raju, ricotta (or bechamel sauce), parmesan-reggiano, spinach (optional).
Repeat until dish is full.
Bake until bubbling and brown ~35 minutes @ 375 F.
Use a rimming baking sheet underneath to catch any overflow from burning on the oven bottom.

Pizza Pot Pie: A Chicago Food Favorite
If you've ever had the pizza pot pie from the Chicago Pizza and Oven Grinder Co., you will appreciate this inspired homemade version.
My apologies for the very rough and short recipe. This was filmed in October 2019 and am just now getting this posted. LOL I also ad lib when I cook. I don't write down exact quantities very often.
Recipe Below:
Ingredients:
Italian sausage
Onion
Sweet Peppers (Melrose and Cubanelle shown in video)
Garlic
Roasted peeled tomatoes (Sam Marzano is best; Roma second.)
Oregano (fresh is best)
Basil (fresh is best)
Salt
Black pepper
Wisconsin Brick cheese
White button mushrooms
Pizza dough
Melted butter for coating inside of ramekins
Directions:
(Follow video.)
Make sauce.
Brush bottom and sides of ceramic bowls with butter.
Layer cheese slices.
Add mushrooms.
Add sauce.
Top with dough and form around sides of bowl.
Baking temperature (~400-425 deg F) until done (~15-20 min).

Homebrewing Hose Cleaning Tip: Keg Wands!
A little trick I use to make my life so much easier when it comes to rinsing, cleaning, and sanitizing various hoses used in home brewing including jumper hoses, picnic tap hoses, and other kind of transfer tubing where ball lock beverage disconnects are used.

Chicago Italian Beef Sandwiches; Cooked Sous Vide and Seared with the Su-V Gun by GrillBlazer
In my question to make the best Italian Beef sammiches around, hopefully even better than the famous local Chicagoland favorite restaurants such as Johnny's or Al's, I have made another iteration of sous vide cooked beef roast, but this time I sear the roast using the Su-V Gun by @GrillBlazer . It turned out excellent!

Larry's Berries: Cherry Saison (Recipe & Live Stream Brew Day Followup)
I brewed another batch of Larry's Berries homebrew, but this time the fruit was several pounds of fresh cherries instead of raspberries, blackberries, and/or blueberries.
Made with a grain and hop bill designed to be a neutral background with good head retention in support of emphasizing the cherry addition and Lallemand Belle Saison yeast flavor contributions, this beer definitely delivered. It went faster than any other fruit beer I've made; especially after offering it to fellow BBQ enthusiasts and competitors in a recent rib cookoff I participated in. Everyone loved it.

An American Standard (Corn) Lager Homebrew Recipe: WAY Better Than The Commercial Versions!
A homemade version of Coors Banquet or Miller High Life beer? Possibly, but WAY better when made fresh at home. This video is about the American Standard Lager beer style; specifically the kind brewed with corn as an adjunct. Beer was pressure fermented to minimize off flavors, gelatin fined for clarity, kegged, carbonated, and ready to drink in just three weeks. It was a hit!

This information is useful for beer recipe design by increasing the total amount of brewing water required to account for loss due to evaporation so that your brew day wort volumes align with expectations.

Grain Absorption Rates: Cooler Mash Tun Versus BIAB (An Experiment)
Wanting to a handle on the differing grain absorption rates of my various all-grain home brew systems, I did some experiments to determine the real values to use for each type of system when designing a beer recipe so that I can make beer that closer resembles the recipe.
Two types of brewing systems are examined: cooler based mash tuns and brew in a bag (or basket).

Oatmeal Stout Beef Stew
Another 'BEER-N-BBQ by Larry' food pairing, but this time the beer is IN the food; not served alongside it. Of course, you can still drink some homebrew with it.
Oatmeal Stout Beef Stew Recipe:
Ingredients:
1 chuck roast, 2.5-3 lb
1/8-1/4 cup flour
a dozen or so small potatoes, red & yellow mixed
4-5 medium/large carrots, sliced into 1/4-1/2 inches pieces
3 celery stalks, sliced in 1/8-1/4 inch wide pieces
1 onion, cut into 1/2 inch pieces (used half red, half white)
24 oz oatmeal stout, homebrewed (see recipe on my YouTube channel)
~3 oz tomato paste
Salt
Pepper
Fresh thyme sprigs, several
Olive oil
Directions:
1) Cut chuck roast into ~1.5 inch chunks.
2) Put meat chunks into a bowl.
3) Sprinkle with salt, pepper, and flour.
4) Mix it together until meat is well coated.
5) Heat a dutch oven over high heat.
6) Add some olive oil.
7) Brown the meat in batches and remove.
8) Deglaze dutch oven with some of the beer.
9) Add onion, carrots, and celery. Brown them.
10) Add browned meat and thyme.
11) Add potatoes. Cut larger ones in half if desired.
12) Add 16 oz or more of the stout.
13) Add tomato paste.
14) Braise in 300 deg F oven for 1-1.5 hours.
15) Check on the liquid level and add more beer if necessary/desired.
16) Finish cooking for another 2-2.5 hours or until food is tender.

How To Clean a Kamado
Another reason why I like kamados: They are self-cleaning. This is how I clean each of my kamados a couple of times per year. A SNS Deluxe Kamado is used in this tutorial but this will work on any ceramic kamado as well as on some of the insulated double walled metal versions I have including the Char-griller Akorn and the Broil King Keg.

RECIPE: Chicago Italian Beef Sandwiches
Ingredients:
1 boneless beef roast (sirloin or round), fat trimmed. (~3 lb)
8-10 high gluten sandwich rolls such as Turano or Gonnella
Several sweet and/or zesty frying/roasting peppers such as Melrose peppers, anaheims, or even pepperoncini as a last resort. Or, just make/buy a jar of giardiniera.
Cheese (fontina, asiago, scamorza my preference)
Olive oil for searing.
Rub:
1 Tbsp ground black pepper
2 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp crushed red pepper
(Salt should be skipped or reduced if the boullion is already salted.
Otherwise, if boullion is not salted, some salt (1 Tbsp) would be nice.)
Gravy:
6+ cups worth of beef bouillon
Meat drippings from roast
Deglazing liquid
Directions:
1) Heat sous vide water bath to 135 deg F (57 deg C).
2) Trim excess fat off roast.
3) Coat roast with the rub.
4) Put roast in a plastic sous vide bag (either vacuum sealed or ziplock style).
5) Place in water bath for 18 hours.
If using a ziplock type bag, let the water bath push out all of the air in the bag before sealing it.
6) Remove bag from bath. Remove roast from bag.
7) Add the meat juices in the bag to the beef boullion.
8) Brown the roast on all sides with a little oil. Use hot cast iron pan or griddle for best results.
9) Chill the finished roast in the fridge to firm it up for slicing later.
10) When chilled, slice the roast thinly.
11) When ready to eat,
Heat up the gravy.
Fry/roast the peppers. Coat them with a little olive oil.
Dunk some slices of meat in the gravy.
Place in a roll.
Add peppers.
