St. Louis Trimmed Spare Ribs on the Slow 'N Sear Kamado in Turbo Slow Mode
I decided to whip up a couple slabs of St. Louis cut spare ribs on my SNS Kamado. Dry rubbed, apple wood smoked, and coated with a sweet tomato based BBQ sauce, it turned out very well.

Recipe:
Marinara Ingredients
• 28 oz San Marzano tomatoes, whole peeled
• 1 sweet onion, chopped
• 4 cloves garlic, minced
• 2 Tbsp fresh oregano, chopped
• 2 Tbsp fresh basil, chopped
• 1-2 Tbsp El Yucateco Red Chile Habanero Hot Sauce (https://www.shopelyucateco.com)
• 1 tsp salt
• 1/2 tsp black pepper
• olive oil for sauteeing
Marinara Directions
• Cook onion in some olive oil over medium heat for ~10 minutes.
• Add garlic for ~30 seconds.
• Add everything else except fresh basil.
• Crush up tomatoes while cooking.
• Simmer and reduce for 20+ minutes or until sufficiently reduced.
• Add fresh basil and cook a few more minutes.
• If a more homogeneous consistency is desired, run an immersion blender through it.
The Sandwich Ingredients
• ~2 cups frying oil, canola or vegetable
• 6 sandwich steaks (or thin cut round steaks) pounded very thin (1/8” thick or less), and mechanically tenderized (Meat Tenderizer https://amzn.to/2X7832m)
• ~1.5 cups flour
• 3-4 eggs
• 2+ cups Marconi Italian Seasoned Breadcrumbs
• Salt and pepper to season
• ~3 cups marinara
• 6 Turano French rolls, Gonnella Italian/French rolls, or other brand of high gluten rolls
• ~2 cups shredded scamorza, fontina, or mozzarella cheese
• Hot or mild giardiniera, optional (https://amzn.to/2P5yxwG)
The Sandwich Directions
• Heat oven or indirect grill to 350-400 F.
• Warm marinara in a sauce pan.
• Cut steaks into sizes that will fit the rolls.
• Heat frying oil in a skillet to 350-375 deg F.
• Season steaks with salt and pepper, then lightly coat in flour.
• Dip steaks in egg wash, shaking off the excess.
• Press steaks into breadcrumbs on both sides.
• Fry steaks 1-2 at a time in the oil for about 1-2 minutes per side, or until deep golden brown.
• Add a layer of cheese to the rolls.
• Dip the steaks one at a time into the marinara.
• Add to the rolls, folding them if necessary.
• Add cheese and giardiniera into the fold of the steaks.
• Wrap each sandwich in foil.
• Place wrapped sandwiches in the oven.
• Bake for 3-5 minutes.
• Mangia!

Larry's Berries Saison: A Tale of Two Fruits
I made 10 gallons of excellent fruit beer; 5 gallons of all raspberry saison and 5 gallons of mixed berry (raspberry, blackberry, and blueberry) saison.
Brewed on the Spike Solo and fermented in a variety of fermenters (multiple carboys, a Fermentasaurus, and a FermZilla) including some pressure fermentation and closed system racking, the resulting fruit ale was spectacular! Recipe is below.
WARNING: I forgot to mention an important tip for making fruit beers. DO NOT throw the fruit directly into the fermenter as shown in this video unless you have a way to separate the fruit from the beer well enough to not clog your tubing and disconnects!
I know what I'm talking about here. I learned that lesson the hard way.

Sausage Ingredients:
8.5 lb pork butt (shoulder)
Seasoning per lb of pork:
1 tsp coarse salt
1 tsp rubbed sage
1/2 tsp cayenne (Larry's family version: 1/8 tsp)
1/4 tsp black pepper
1/4 tsp red pepper flakes (Larry's family version: skip)
1/4 tsp coriander
Sausage Directions: See video on Brian's Patreon page, or...
Cut up pork butt. Chill to firm up pieces. Grind. Mix in seasoning. Beat in stand mixer with paddle attachment to better meld ingredients. Form into 1 lb chunks and roll up in plastic wrap. Refrigerate or freeze.
Biscuit Ingredients:
2.5 cups self-rising flour (or make your own from 2.5 AP flour, 3.75 tsp baking powder, .625 tsp fine salt)
1 stick very cold salted butter
1 cup whole milk
Biscuit Directions: See video. Bake @425 F for 12+ minutes.
Gravy Ingredients:
1 lb sausage
1/3 cup AP flour
2 cups whole milk
black pepper
~1 tsp coarse salt

Munich Dunkel Recipe: Which Yeast Strain, Wyeast Bavarian 2206 or Munich 2308, is Better for Dunkel?
After brewing a ten gallon batch of Munich Dunkel on my Blichmann BrewEasy, it was split into two 5 gallon batches and pressure fermented separately with different yeast strains; a Wyeast Bavarian Lager 2206 in a FermZilla All Rounder and a Wyeast Munich Lager 2308 in a Spike Brewing Flex+.
Now, it's time for my informal and completely unscientific opinion on which is the better yeast strain for Dunkel.

SousVide Prime Rib on the Blichmann BrewEasy
Home brewing equipment isn't only for making beer. It can also be used to cook delicious food including an 18 lb prime grade boneless ribeye roast. I cooked this roast for nearly 10 hours sou vide style in my 10 gallon electric Blichmann BrewEasy system before reverse searing it on my SNS Grills Deluxe Kamado. The result was perfectly medium rare interior throughout with a great exterior crust.
