The 'Fermchamberator': a Kegerator Turned Refrigerator Turned Fermentation Chamber (and Back Again)
I repurposed and converted an old kegerator turned fridge in my garage into a fermentation chamber capable of heating and cooling batches of fermenting wort (beer) up to 10 or more gallons to maintain a desired fermentation temperature even in extremely cold winters and hot summers without having to transport difficult to carry fermenters into my house and down flights of stairs to ferment in the basement. Now, I can just brew in my garage, rack it to fermenter, and toss it into the nearby fermentation chamber. BONUS: It is easily convertible back to a fridge or kegerator if needed.

Flow Control Faucets and Balanced Draft Systems Working Together
I bought an Intertap flow control faucet (model 8473) to help minimize foam while pouring more highly carbonated beers, ciders, and even root beers from my kegerator. Chicken Pot Pie from Scratch
Homemade chicken pot pie from scratch; a real comfort food for the cold weather and a great use of leftover chicken or turkey. It's even better when using stock made from a smoked turkey (or chicken). Here is the recipe I've been using recently:
Thyme Pastry Crust:
3 cups all-purpose flour
1 teaspoon salt
1 1/2 cups (3 sticks) cold unsalted butter
1 egg
5 tablespoons cold water
1 tablespoon distilled vinegar
1 teaspoon fresh thyme leaves
Pot Pie Filling:
1-2 chicken breasts depending on size (goal is 2 cups worth)
3 celery stalks
3 medium carrots
1 large yellow onion
1/4 cup all-purpose flour
1/2 stick unsalted butter
2 cups homemade chicken or turkey stock (smoked poultry stock is an even better option. Here is a link to making your own smoked turkey stock: https://youtu.be/-CN1J7GalKg)
1 teaspoon chicken base (paste)
1/2 cup frozen peas
1 cup heavy cream
1 Tbsp fresh thyme
1 teaspoon coarse salt
1/4 teaspoon fresh ground black pepper or more to taste
Pastry Crust Directions:
1) Combine flour, butter, thyme, and salt in stand mixer bowl.
2) Use paddle attachment on low to mix until pebbly looking (a couple minutes).
3) Beat egg with fork and add to mixture with cold water and vinegar.
4) Mix until just combined.
5) Divide in half.
6) Form into rounds and flatten each a bit.
7) Separately wrap in plastic or place in sealed plastic bag.
8) Place in freezer for at least 30 minutes.
Filling Directions:
1) Boil breasts in water for 20-25 minutes or until cooked. Shred.
2) Take out pastry dough from freezer to thaw a bit (but not too much).
3) Dice the carrot, celery, and onion.
4) Melt butter in pot over medium heat.
5) Add diced vegetables. Saute until translucent.
6) Add the shredded chicken.
7) Add flour. Mix.
8) Add chicken stock and chicken base. Stir in.
9) Add peas.
10) Add cream.
11) Stir and let cook over low heat allowing it to thicken for a few minutes.
12) Season with thyme and more salt and pepper if desired.
Assembly Instructions:
1) Roll out one piece of the dough slighly larger (an inch all around) than pie pan.
2) Form into pie pan.
3) Add filling.
4) Roll out other dough piece slightly larger than pie.
5) Fit over the top pinching and forming a bead/ridge all around with the bottom dough.
6) Cut little slits in the top for steam to escape.
7) Bake at 400 degrees until golden brown: ~30 minutes
8) Let cool before serving: ~10 minutes
Frozen option:
1) Let filling cool before adding to pie and sealing with pastry dough.
2) Cover with plastic wrap.
3) Freeze.
4) Remove pie from freezer.
5) Brush with egg wash.
6) Bake in 375 degree oven until browned: ~30-45 minutes.

Brewing on The Grainfather in Manual Mode Using My Brewing Spreadsheet (and Why I Did It)
I used the Grainfather Connect in manual mode (without the use of its mobile app or related https://brew.grainfather.com website) along with my freely downloadable Brewing Recipe Spreadsheet to design and brew a recipe due to a limitation of the Grainfather recipe website that doesn't support accounting for, nor reporting on, the mash extract efficiency; a value critical to successfully reproducing a recipe from another brewing system and process than your own.
Mash extract efficiency impacts the quantities of grains and hops required to brew a recipe to match the output specifications of the recipe.
The Grainfather doesn't use this value and instead uses a more generic and less useful 'Brewhouse Efficiency' value that includes losses not directly related to the scaling/conversion/adaptation of a given recipe from one brewer to another or from one brew system/process to another.

Bell's Two Hearted Ale Clone: Grain to Glass, Triangle Taste Testing, & Comparison to the Real Deal
After seeing a Bell's Brewery provided Two Hearted Ale recipe published in a recent issue of Brew Your Own magazine (byo.com), I adapted it for the Grainfather and brewed up a batch with Chad. The recipe, brew day, fermentation, dry hopping, and the results are covered.
Via a side-by-side blind triangle taste test, Chad and I compare the clone with the real beer and the results surprised us both!

English Brown Ale #2: Recipe and Tasting
Another English brown ale is kegged, tapped, and ready to drink! Brewed on the Grainfather and fermented under pressure in the new Spike Brewing Flex+ fermenter, this beer turned out great. There were some changes from the original Brother's Brown recipe including substituting Briess Special Roast for Victory biscuit malt, Challenger hops for Fuggles, and Lallemand Windsor (British Ale) yeast for the Wyeast British Ale 1098. Send in the Clone! Bell's Hopslam Clone Recipe & Taste Comparison
Confident after a brewing a successful clone of Bell's Brewery Two Hearted Ale as published in a recent issue of Brew Your Own magazine (byo.com), Chad and I took up the challenge of brewing another one of Bell's recipe from that same issue; Hopslam (a seasonal double IPA brewed with honey). Quick and Easy Pastrami
An alternative to made from scratch pastrami, corned beef brisket allows you to skip the lengthy brining process and gets you pretty darn tasty pastrami within a single day's time.
Pastrami Recipe:
2.5 lb corned beef brisket
.5 Tbsp Whole Black Peppercorns
.5 Tbsp Coarse Ground Black Pepper
.25 Tbsp Whole Coriander Seed
.25 Tbsp Ground Coriander
.25 Tbsp Brown Sugar
.25 Tbsp Paprika or Chile Powder
.5 tsp Garlic Powder
.5 tsp Onion Powder
1/8 tsp Mustard Seed

Hot Wings Recipe:
Ingredients
Dozen or more chicken wings cut into drumettes and wingettes
ABC 'Not Just for Beef' Rub: https://abcbarbecue.com/product/rubs/
ABC 'Rocky's Rub': https://abcbarbecue.com/product/rubs/
Salt
Hot wing sauce (I used Frank's RedHot Buffalo Wings Sauce.)
Optional Tabasco sauce and melted butter added to hot sauce.
Olive Oil.
Directions
Dry brine wings one day before by sprinkling with salt and placing uncovered in fridge.
Sprinkle on both ABC rubs in about 50/50 ratio.
Brush wings lightly with olive oil.
Heat grill indirect to 425 deg F (~218 C). Add just a little light smoking wood.
Bake wings for ~40 minutes or until at least 190 deg F (88 C) and skin is crispy.
Toss in bowl with hot sauce.

Smoked Salmon on the Slow 'N Sear Kamado
Wild caught salmon cured then smoked on the Adrenaline Barbecue Company Slow 'N Sear Kamado similarly to how I previously prepared it on the Kamado Joe Big Joe a while back, but this time it was even better! I've discovered that the SNS Kamado has a big advantage over other kamados. Check out what that is and how I made use of it.

The Cure (not the band):
Half Coarse Salt (~1/2-1 cup)
Half Brown Sugar (~1/2-1 cup)
A little black pepper (~1 Tablespoon)
Optional: Dill or other fresh herbs
Additional Ingredient:
Maple syrup for a glaze
Directions:
1) Debone fish if necessary.
2) Coat both sides with cure in a nonreactive dish.
3) Cover and place in fridge.
4) Wait 1-2 days.
5) Smoke fish at 150-170 degrees F until internal temperature is 135 or higher for wild caught; closer to 150 for farm raised. Will take 2-3 hours or maybe longer in some cases.

Compact Secondary Pressure Regulators for Draft Beer: ITW PRT Gov Reg Dispensing Regulator
I bought these miniature secondary regulators for my new 3-tap kegerator (a Kegland Series 4) to independently control the pressure in each of the three kegs while at the same time fitting all three secondary regulators inside the kegerator. I could not do this with three full size secondary regulators.

Grain to Glass Lager in 11 Days! Wow! I'm doing this again!
I brewed a "quick lager" in a fraction of the time it takes to make a typical lager. I used the Spike Flex+ fermenter to ferment a lager under pressure at room temperature without the need for cold temperature control and "lagered" it by fining the finished beer with gelatin instead of spending weeks in a cold fridge. Also, since the beer was half carbonated already from the pressurized fermentation process, it only took a couple more days to be drinkable making this beer drinkable in only 11 days!

Grilled & Braised Beef Short Ribs
Braised short ribs done on the Slow 'N Sear Kamado. Browned via high temperature searing over coals and braised in a dutch oven on the grill, I made use of fresh herbs and peppers grown on my patio to infuse flavor into the meat. Served on a bed of Yukon mashed potatoes with a side of my homemade 2018 Merlot.

Lodge 5 Quart Cast Iron Dutch Oven: https://amzn.to/31NuTMv
Ingredients:
4 pieces of beef short rib
~1.5-2 cups beef stock (broth will work in a pinch)
~1.5 cups chopped onion
~1 cup chopped sweet pepper
~1 cup sliced carrot
~1/4 cup flour
1 ripe small tomato cut up
2-3 garlic cloves
Sprigs of rosemary and thyme
~2 Tbsp cooking oil (I tend to use olive oil.)
Salt
Pepper
Directions:
Dry brine meat overnight by salting both sides and put exposed in fridge.
Before cooking, blot dry the meat if necessary.
Add black pepper to both sides.
Prepare a two zone fire.
Heat a dutch oven over hot side.
Add cooking oil to pan.
Add onion, carrots, peppers, and tomato.
Cook till softened.
Add flour a bit at a time and stir in until everything is coated.
Move to indirect side of grill.
Add garlic.
Add beef stock and deglaze the bottom.
Sear ribs on hot side. Place in dutch oven.
Add herbs.
Cover with lid and close grill.
Braise @350-400 F (176-204 C) for 2-3 hours until tender.
Remove dutch oven from grill.
Remove herb sprigs.
Remove the ribs to a plate.
Finish up the gravy by;
-Pouring through a strainer, or if preferred, use all of it, chunks and all.
-Adding roux (flour and butter mixed together) as thickener if too thin.
-Adding some beef stock if too thick.
Final touch:
Serve ribs on a bed of mashed potatoes or risotto and topped with gravy.

Award Winning Ribs (and Recipe) at the 2nd Annual BBQ Cookoff in Crown Point, Indiana
It was that time of year again to travel to Crown Point, Indiana for the second annual Pentwater rib competition. This time I won first place! See how I did it. Recipe below.
Award Winning Rib Recipe:
1) Peel them. (Remove the membrane.) (https://youtu.be/MJuocxr-GGg)
2) Apply a dry rub at least a couple hours in advance.
For this version, I used a Steven Raichlen #ProjectSmoke rub called "Kansas City Smoke Rub".
3) Cook indirect on a hickory and natural lump charcoal fire @225-250 for 2 hours or until bones start to show and meat is becoming bendable.
4) Place double lined foil sheet on a table.
5) Add 3-4 slices of butter, a few lines of honey, and a sprinkle of turbinado sugar to the sheet.
6) Remove ribs and place on double lined foil sheet meat side down.
7) Add another layer of butter, honey, and turbinado sugar to the top (bone side) of the slab.
8) Add a splash of apple cider( or juice) to the foil pack.
9) Wrap it up tightly and place back on cooker for 1 hour.
10) Remove from cooker and unwrap ribs.
11) Move ribs aside for now.
12) Pour liquid from foil into a sauce pan over med-high heat to reduce to a glaze.
13) Add a BBQ sauce to the pan. I used Steven Raichein's Project Smoke Lemon Brown Sugar BBQ sauce.
14) Place ribs back on cooker and sauce both sides leaving the meat side up before closing the lid.
15) Cook for 1 more hour adding more BBQ glaze during that time.
16) Remove and serve.

Grain to Glass Oktoberfest (Märzen) in Under a Month
The end of Summer was fast approaching and I had not yet brewed an Oktoberfest beer. What was I to do? The answer: Make it in three weeks using the quick lager method; a combination of pressure fermentation and gelatin fining. A ten gallon batch was split in half to ferment under pressure; half in the Spike Flex+ and half in the Fermentasaurus.
Brewed in mid-August, I had my first pour on Labor Day. Was delicious but still a tad cloudy. However an extra week in the keg cleared it right up, now in mid-September at the height of Oktoberfest season, I have 10 gallons of incredible Märzen to drink.
