High Protein Low calorie Egg Fried Rice with Leftover Rice and Veggies

This egg fried rice recipe is a high protein and low calorie version of a very popular takeout meal. This is the fastest and budget friendly way of reusing food that you would normally throw out. I had some veggies (cauliflower, butternut squash, some brussel sprouts) leftovers with roasted chicken and rice. Leftover meals are just amazing. Not only do you reuse food but also you create amazing flavors. And you also save tons of calories and your health by not ordering that take out.
This is a 'anything goes' recipe. So whatever leftovers you have in your fridge you can use.

Ingredients
- 2 slices of bacon
- 8 oz mushroom
- jalapeno
- half large onion
- 2 cloves of garlic
- leftover veggies (I had brussel sprouts, butternut squash and cauliflower - you can use whatever you have)
- 6 oz leftover roasted chicken - I used breast (any other protein you have is fine - even if it's breaded)
- 1 cup of rice
- 1 egg
- 1 tbs sriracha
- 2 tbs oyster sauce
- 2 tbs soy sauce
- 2 tbs cilantro
- green onion would be great as well, I didn't have any at home but if you do use it
