Homemade Dijon Mustard With Canning Instructions ~ Making Mustard

For all of you condiment lovers, this is a must have for your home canned pantry. So worth the effort.
2 c. chopped onion
2 c. dry white wine, I used Pinot Grigio
1 c. white wine vinegar
1 t. salt
6 garlic cloves, chopped
peppercorns
1 rosemary sprig or dried rosemary
1 c. yellow mustard seed
1/3 c. dry mustard
2 2/3 c. water
Ladle hot mustard into a hot 4 oz. jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Homemade Scalloped Potato Mix (Better Than Betty's) Using Dehydrated Potatoes ~ Stocking Your Pantry

Skip the box and make your own shelf stable Scalloped Potato Mix. You control the ingredients, no artificial flavors, colors or fillers. This is a delicious way to use your dehydrated potatoes.
Bulk Mix:
2 c. powdered milk
1 c. white flour
1 c. corn starch
1/2 c. dried onion flakes or 8 t. onion powder
1/2 c. dried chives or parsley flakes
2 - 3 T. seasoned salt
2 T. dried mustard powder
1 T. black or white pepper
1 T. garlic powder
(Add 1 c. powdered cheese to make Potatoes Au Gratin)
To make scalloped potatoes:
1/2 c. mix
3 c. dehydrated potatoes
1 c. cold water or milk
2 c. hot water
4 T. butter
For long term storage Scalloped Potatoes in a Jar (or other air tight container)
1/2 c. Mix
3 c. Dehydrated potatoes
Single batch:
3 c. dehydrated potatoes
1/4 c. powdered milk
2 T. flour
2 T. cornstarch
2 t. onion flakes or 1 t. onion powder
1 T. dried parsley or chives
1 t. salt
1 t. mustard powder
1 t. pepper
3 c. water
4 T. butter
Add 1/4 c. powdered cheese to make potatoes Au Gratin or add fresh shredded cheese to taste
Potatoes Stroganoff:
Add 1 lb. browned ground beef, 1 c. fresh sauteed mushrooms, 2/3 c. sour cream and 2 T. Worcestershire Sauce to above mix before baking.
To use sauce mix with fresh potatoes:
use about 1 1/2lbs of sliced fresh potatoes, 2 cups of milk or water (or combination), 1/2 c. dry mix.

Home Canned Chicken Pot Pie Base ~ Canning Safe Recipe For Chicken Pot Pie & More ~ Pressure Canning

This soup base is perfect for making Chicken Pot Pie. At the end of the video I show you how. Also a great starter for Chicken Stew and Creamed Chicken (see instructions below). You need this on your shelf!
For ~6 quarts:
6 T. butter (permitted as this is a tested recipe)
3 c. diced onion
1 c. diced fresh mushrooms, optional (can in pints only if using)
3 c. diced carrots
2-3 c. diced potatoes
1 c. diced celery
16 c. chicken stock OR 14 c. chicken stock and 2 c. white wine
1 T. lemon pepper
1 t. celery seed
2 t. thyme
1 1/2 T. dried parsley flakes
2 t. seasoned salt
1 T. Organic Roasted Chicken Better Than Bouillon
1 bay leaf
6 c. cubed or shredded cooked chicken
1 1/2 c. green peas
2 T. bottled lemon juice
Fill hot jars with hot soup base to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

For Pot Pie:
Crust:
2 1/2 c. flour
1 t. salt
10 T. butter
4 T. shortening
8-10 T. ice water
Filling:
4 T. butter
4 T. flour
1 quart jar of Chicken Soup Base
For Creamed Chicken:
Thicken as described in the video but replace half of the stock with cream. Proceed as for making pot pie filling. Serve over biscuits.

Holiday Carrot Cake Jam ~ Holiday Canning ~ Canning Jam ~ Christmas Gifting
Elevate your jam with a fancy holiday flare. Gran Marnier makes this jam over the top delicious and extra special for the holidays. Makes a great Christmas gift.

To thicken upon opening, stir 1 T. of cornmeal or masa into a bit of water then add to soup before heating. Bring to a simmer. Add tortilla strips (fresh or fried) and your favorite toppings and enjoy!

Fill hot jars with hot soup to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:

This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

Home Canning Peaches or Nectarines ~ Hot Packing ~ Infused Sugar Syrup ~ Fruit Float ~ Siphoning

This is a chatty video but I had a lot of information I wanted to share :). Learn how to can up peaches, make infused sugar syrups and tips and tricks to prevent siphoning and fruit float.
For a canner load of 8-9 pints you will need:
~10 lbs fresh yellow peaches or nectarines
5 1/4 c. water
2 1/4 c. sugar
Optional flavor additions:
vanilla bean
peach schnapps or other liquor
dried spices: star anise, all spice berries, cloves, cinnamon sticks
For hot packing: In a large saucepan place drained fruit in syrup, water, or juice and bring to boil. Fill jars with hot fruit and cooking liquid, leaving ½-inch headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process pint jars for 20 minutes, quart jars for 25 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Perfect fall jam. Add a few tablespoons of an apple flavored liquor and you have the perfect jam for holiday gifting.
3/4 cup (175 ml) raisins or dried cranberries
6 cups (1.5 L) chopped cored peeled Granny Smith or other tart apples
Grated zest and juice of 1 lemon
1 cup (250 ml) unsweetened apple juice
1 pkg (57 g) BERNARDIN® Original Fruit Pectin
9 cups (2.25 L) granulated sugar
1 tsp (5ml) ground cinnamon
1/2 tsp (2 ml) ground nutmeg
Optional: 2-4 T. apple flavored liquor

2 1/2 c. firmly packed brown sugar

Canning Asparagus Soup ~ Cream of Asparagus Soup Base

You can never have too many soups in your arsenal. Stock your shelves with this easy to can soup base. Just a few basic ingredients. Eat as is or take it up a notch and create a creamy dreamy Cream of Asparagus Soup. Tasty and comforting.
6 lbs. fresh asparagus spears, rinsed, trimmed and cut into 1" pieces
3 quarts of chicken or vegetable stock
1 large onion, chopped
2 T. Seasoned Salt
2 T. Lemon Pepper
1 T. Garlic Powder
2 t. Dried Tarragon
1 T. Dried Parsley flakes
To make Cream of Asparagus Soup (Optional):
1 T. butter
1 T. flour
1/3 c. cream
OR
1 T. cornstarch mixed with cold water
1/3 c. milk or evaporated milk
Fill hot jars with hot soup to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints and quarts for 40 minutes, adjusting for altitude as follows:
Weighted gauge Dial gauge
0-1,000 ft 10 11
1,001-2,000 ft 15 11
2,001-4,000 ft 15 12
4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

This dessert topping is so easy and delicious. Blueberry Moscato adds an elegant touch and takes this topping to the next level. Pour on pancakes or waffles, drizzle over cake, cheesecake or ice cream... yum!
12 c. fresh or frozen blueberries
2 1/2 c. Blueberry Moscato (water or apple juice)
3 c. sugar
1/4 t. salt
1-2 t. pure vanilla extract
Ladle hot sauce into a hot pint or half pint jar leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 15 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

3 c. Dried pinto or black beans, rehydrated and partially cooked
4 lb. beef stew meat or Chuck roast cut into 1/2” cubes

1/4 c. Olive oil

2 t. Mexican oregano, optional

Full Recipe
4 to 5 lb beef stew meat, cut into 1 1/2-inch cubes
1 Tbsp vegetable oil
12 cups cubed and peeled potatoes (about 12 medium)
8 cups sliced carrots (about 16 small)
3 cups chopped celery (about 5 stalks)
3 cups chopped onion (about 4 small)
1-1/2 Tbsp salt
1 tsp thyme
1/2 tsp pepper
Water
7 Ball® (32 oz) quart or 14 (16 oz) pint glass preserving jars with lids and bands
Half Recipe
2 to 2-1/2 lb beef stew meat, cut into 1 1/2-inch cubes

6 cups cubed and peeled potatoes (about 6 medium)
4 cups sliced carrots (about 8 small)
1-1/2 cups chopped celery (about 3 stalks)
1-1/2 cups chopped onion (about 2 small)
3/4 tsp salt (I used 1 t. seasoned Salt)
1/2 tsp thyme (I used 1 t. and 1 t. dried parsley flakes)
1/4 tsp pepper
Water
3 Ball® (32 oz) quart or 7 (16 oz) pint glass preserving jars with lids and bands
*You must process at least 2 quart jars or 4 pint jars in the pressure canner at one time to ensure safe processing.
Fill hot jars with hot stew to 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 75 minutes and quarts for 90 minutes, adjusting for altitude as follows:

This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 12-24 hours, remove rings, check seals, wash jars and store in a cool dark place.

Use this method to safely can your favorite soup recipes.
For the White Chicken Chili:
3 large breasts poached until tender then shredded
1 lb. dried Great Northern Beans, quick soaked then brought to a boil
2 c. frozen corn defrosted
1 large onion chopped
2 cans diced green chilies
3 qt. chicken stock
1 qt. roasted corn stock
2 T. lime juice
2 t. each garlic powder, seasoned salt, chili powder, cumin
1 t. each smoked paprika, corriander
1 T. Mexican oregano
1/2 t. pepper
Fill hot jars half full of solids then top off with liquid leaving 1" headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can pints for 60 minutes and quarts for 75 minutes, adjusting for altitude as follows:

To make Creamy White Chicken Chili add 2 oz. of cream cheese, 1/4 c. sour cream and 1/4 c. mexican or monterey jack cheese to each quart of soup and heat through.
