Cranberry Apple Pie

1 1/2 c. fresh cranberries
1 c. sugar
2 T. flour
3 T. cornstarch
1 t. cinnamon
1/2 t. nutmeg
1/4 t. allspice
2 t. orange zest
1/4 c. boiled cider or undiluted apple juice concentrate
8 c. thinly sliced baking apples (I used honeycrisp)
2 t. pure vanilla extract
1/3 c. coarsely chopped pecans or walnuts

Christmas Salad ~ Holiday Side Dish
This beautiful salad is loaded with lots of amazing flavors. A lovely Orange White Balsamic Vinaigrette tops a bed of greens, oranges, fennel and pomegranate seeds. Beautiful and delicious with the wonderful flavors of the season.
Vinaigrette:
1/4 c. White Balsamic Vinegar
1/4 c. Salad oil (I used olive oil)
1 T. Fresh orange juice
1 t. Honey
S&P to taste
Salad greens
Sliced red onions
Sliced fennel bulb
Peeled and sliced oranges or home canned Honey Orange Slices
Pomegranate seeds
Shaved, shredded or grated Parmesan cheese

Candied Nuts ~ Christmas Treats
Candied nuts are a great way to elevate salads, veggies or meats. Great for a charcuterie board or just snacking. So addictive!
Raw nuts, any variety
For every cup of nuts you will need:
1/4 c. sugar (white, brown, honey or maple syrup)
1 T. butter
1 - 2 t. water (more water will make a glaze)
Spices and vanilla to taste
I used:
1 lb. raw pecans
4 T. butter
1 c. lightly packed light brown sugar
1 t. cinnamon
1/8 t. cayenne pepper
1 1/2 T. water
1/2 t. sea salt
1 t. vanilla

Baked Apple Cider Donuts
Enjoy the flavors of fall in a delicious quick and easy baked donut. Wonderful for breakfast or as a snack with afternoon coffee.
Donuts:
1 3/4 c. flour
1 t. baking powder
1/2 t. baking soda
1 t. cinnamon
1/4 t. allspice
1/4 t. nutmeg
1/8 t. cardamom
1/2 t. salt
1/3 c. sugar
1/3 c. packed brown sugar
1/2 c. milk
1/4 c. oil
1/3 c. boiled cider (reduced from 2 c. fresh cider)
1 large egg
2 t. vanilla
Caramel Glaze:
4 T. butter
1/2 c. brown sugar
1/3 c. heavy cream
1 T. boiled cider
1 t. vanilla
1 1/2 - 2 1/2 c. powdered sugar

Maple Walnut Syrup ~ Canning
Perfect for Christmas morning pancakes or for gifting. Easy to make, delicious to eat and share.
1 1/2 c. corn syrup (light or dark)
1 c. pure maple syrup
1/2 c. granulated sugar
1/2 c. water
2 c. walnut pieces
Ladle hot syrup into hot half-pint (8 oz) jars leaving 1/4” headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
Process for 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Black Forest Preserves ~ Canning
Decadent preserves perfect for the holidays.
3 c. coarsely chopped dark sweet cherries, firmly packed
1/3 c. sifted cocoa powder
1/2 c. lemon juice
4 T. powered pectin
6 1/2 c. sugar
4 T. Amaretto or 1/2 t. almond extract

Simple enough for any occasion, decadent enough for a special occasion and absolutely perfect for Christmas morning.
1 2/3 c. flour

Adjustments for waffles:
1 T. baking powder instead of 2 t.
2 eggs instead of 1
1 stick of melted butter instead of 2 T. oil
