Make at your Home Turkish Chicken Shawarma
Shawarma is one of the world's most popular street foods. Invented in Turkey in the 18th or 19th century, doner kebab means “rotating grilled meat.” When it spread through the Middle East, it was called “shawarma,” an Arabic word for “turning.” Thin slices are shaved off the cooked surface as it continuously rotates. These slices are made up into a sandwich wrap with pita bread, vegetables and dressing. Ingredients 350 gm chicken breast 3 tbsp yogurt 1 tsp cinnamon powder ½ tsp cardamom powder ½ tsp ginger powder 1 tsp garlic powder 1 tsp onion powder 1 tsp red chili powder ½ tsp mixed spices powder 1 cup sunflower oil kuboos (pita bread) 8-10 nos. garlic cloves ½ cup toum (garlic sauce) 1 cup tahini (sesame paste) salt as required Toum Recipe For garlic sauce (Toum): 1/2 cup garlic cloves peeled 1/2 cup lemon juice divided 1/2 cup ice cold water divided 1 3/4 tsp salt Garlic sauce preparation: In a food processor, combine garlic cloves, salt, 1/4 cup of the lemon juice and 1/2 cup of the ice cold water. Process until smooth, then stop and scrape the sides of the food processor with a spatula. Turn the food processor back on and drizzle the oil through the top as SLOWLY as possible, one cup at a time. After each cup of oil, add 1 tbsp each of the lemon juice. Add oil until you've reached the texture you desire - you may only need 3 1/2 cups to achieve the proper texture. Store toum in an airtight container in the refrigerator. Tahini Sauce Recipe For tahini sauce: 1 cup tahini sesame seed paste 3/4 cup lukewarm water 3 cloves garlic 1/4 cup fresh lemon juice 1/4 tsp salt Tahini sauce preparation: grind tahini paste, lukewarm water, garlic, lemon juice and salt together in a food processor or blender until sauce is creamy. If mixture is too thick, slowly add more water until it reaches the preferred consistency. Preparation: Prepare Marinade: Slice the chicken breasts into 5-6 pieces each. In a small bowl, whisk together cinnamon powder, cardamom powder, ginger powder, garlic powder, onion powder, red chili powder, mixed spice powder & salt to taste. Stir with a spoon till all the chicken pieces are evenly coated in the marinade. Place chicken in the refrigerator and let it marinate at least 1 hour, up to overnight. Heat 4 tbsp of oil in a pan on the stovetop over medium. Place the chicken pieces on the pan, evenly spaced. Fry for about 15 minutes or until cooked through, turning the chicken pieces once with tongs halfway through cooking. Take the fried chicken, use a sharp knife to slice the meat into small thin shawarma-like pieces. For the wrap build: First, warm up the pita or flat bread (you can use the grill, pan, oven or toaster), spread toum (garlic sauce) on the pita bread, top with shawarma chicken, french fries, cucumber pickle & lettuce. Finally top it up with tahini sauce, roll up tight using a butter paper!

Crispy Suji Semolina Dosa Recipe
A recipe for Instant Rava Dosa:
Ingredients:
1 cup semolina (rava)
1 cup rice flour
1/4 cup all-purpose flour
1 tablespoon curd (optional)
1 teaspoon salt
2.5 cups water
1 green chili, finely chopped (optional)
1/2 teaspoon ginger, finely chopped (optional)
1/2 teaspoon cumin seeds
1/2 teaspoon crushed black pepper
8-10 curry leaves
2 tablespoons chopped coriander leaves
1 onion, finely chopped (optional)
Instructions:
In a large bowl, combine the semolina, rice flour, all-purpose flour, curd (if using), salt, and water.
Whisk until smooth and lump-free.
Add the green chili, ginger, cumin seeds, black pepper, curry leaves, coriander leaves, and onion (if using).
Mix well.
Cover and let the batter rest for at least 30 minutes, or up to overnight.
Heat a non-stick tava or griddle over medium heat.
Grease the tava with a little oil or butter.
Pour 1/4 cup of batter onto the hot tava and spread it out into a thin circle.
Cook for 2-3 minutes per side, or until golden brown and crispy.
Serve hot with your favorite chutney or sambar.
Tips:
For a crispier dosa, heat the tava over a high heat.
To prevent the dosa from sticking to the tava, make sure it is well-greased.
If the batter is too thick, add a little more water until it reaches the desired consistency.
If the dosa is not cooked through, cook it for a few minutes longer.
Serve hot with your favorite chutney or sambar.

Vinayki Chaturthi Special Traditional Sweet by Sadhguru
A recipe for traditional Sweet Karanji:
Ingredients:
1 cup all-purpose flour
1/4 cup semolina
1/4 teaspoon salt
1/2 cup ghee, melted
1/2 cup water
For the filling:
1/2 cup grated coconut
1/4 cup sugar
1/4 teaspoon cardamom powder
1/4 teaspoon saffron strands (optional)
Enough oil for deep frying
Instructions:
In a large bowl, combine the flour, semolina, and salt.
Add the ghee and mix until the mixture resembles coarse crumbs.
Add the water and mix until a soft dough forms.
Cover the dough with a damp cloth and let it rest for 30 minutes.
Meanwhile, make the filling by combining the coconut, sugar, cardamom powder, and saffron strands (if using).
Divide the dough into equal portions and roll each portion into a thin circle.
Place a spoonful of the filling in the center of each circle.
Fold the dough over the filling to form a semicircle.
Press the edges of the dough together to seal.
Heat the oil in a deep frying pan over medium heat.
Fry the karanjis in batches until golden brown and crispy.
Remove the karanjis from the oil and drain on paper towels.
Serve hot or at room temperature.
Tips:
For a more flavorful dough, you can add 1/2 teaspoon of ground ginger and 1/4 teaspoon of ground cardamom to the dough mixture.
If you don't have saffron strands, you can substitute 1/4 teaspoon of ground saffron.
To prevent the karanjis from sticking to each other, you can lightly grease a plate with oil before placing the karanjis on it.
To make the karanjis ahead of time, you can fry them and then store them in an airtight container at room temperature for up to 3 days. When you're ready to serve, reheat the karanjis in a preheated oven at 350 degrees Fahrenheit for 5-10 minutes, or until heated through.

A recipe for Spicy Schezwan Egg Fried Rice:
Ingredients:
2 cups cooked rice, cooled
2 eggs, beaten
1 tablespoon vegetable oil
1/2 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 tablespoon ginger-garlic paste
1 tablespoon soy sauce
1 tablespoon Schezwan sauce
1 tablespoon chili sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped green onions
Instructions:
Heat the oil in a large wok or skillet over medium-high heat.
Add the eggs and cook, stirring constantly, until scrambled.
Add the onion, green bell pepper, and red bell pepper and cook, stirring occasionally, until softened.
Add the ginger-garlic paste, soy sauce, Schezwan sauce, chili sauce, salt, and pepper and cook, stirring constantly, for 1 minute.
Add the rice and green onions and cook, stirring constantly, until heated through.
Serve immediately.
Tips:
For extra heat, add more chili sauce or a pinch of cayenne pepper.
For a vegetarian version, omit the eggs.
You can also add other vegetables to the fried rice, such as carrots, peas, or mushrooms.
If you don't have Schezwan sauce, you can make your own by combining equal parts soy sauce, chili sauce, and rice vinegar.

Instant Crispy Cabbage Pakoda Snacks Recipe
Here is a recipe for instant crispy cabbage pakora snacks:
Ingredients:
1/2 cup cabbage, finely chopped
1/2 onion, finely chopped
1 green chili, finely chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon cumin powder
1/4 teaspoon garam masala powder
1/4 teaspoon salt
1/4 cup chickpea flour
1/4 cup rice flour
1/4 cup cornstarch
Enough oil for deep frying
Instructions:
In a large bowl, combine the cabbage, onion, green chili, ginger-garlic paste, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Mix well.
In a separate bowl, combine the chickpea flour, rice flour, and cornstarch. Mix well.
Add the cabbage mixture to the flour mixture and mix well.
Heat the oil in a deep frying pan over medium heat.
Once the oil is hot, drop spoonfuls of the cabbage mixture into the hot oil.
Fry the pakoras for 2-3 minutes per side, or until golden brown and crispy.
Remove the pakoras from the oil and drain on paper towels.
Serve hot with your favorite chutney or sauce.
Tips:
For extra crispy pakoras, you can double-fry them. To do this, fry the pakoras for 2-3 minutes per side, remove from the oil, and drain on paper towels. Then, heat the oil again and fry the pakoras for an additional 1-2 minutes per side, or until golden brown and crispy.
You can also add other vegetables to the pakora mixture, such as carrots, potatoes, or peas.
If you don't have chickpea flour, you can use all-purpose flour. However, chickpea flour will give the pakoras a slightly more crispy texture.
