Im trying out a new type of subtitles in this video , let me know if you like them more than the ones that I have been using :) Recipe: -4 hotdog sausages cut in "pendant" shape(watch the video :P) -5 cherry tomatoes cut in half. -2 tomatoes grated. -Saute the sausages in 2 tablespoons of olive oil until they get some color. -Add the grated tomatoes and the cherry tomatoes and cook until the sauce becomes thickish and the cherry tomatoes become a little bit soft. -Do not add salt at this point. -After the sauce is ready add grated Feta cheese and mix with the sauce. the feta cheese will be salty enough in my opinion. You can add some spices if you like but I kept mine simple :) -Cook the feta in the sauce for 3 minutes and stir gently to combine. -Heat up your bun and fill with the sausage sauce. -Add ketchup and mustard to finish and Enjoy! -Thanks for watching !

You never put a lid on a veloute soup because you lose colour) -After all the vegetables softened up remove some of the liquids and use a hand blender to make it smooth ( TIP! Αν κανουμε λάθος και δούμε το αυγό να ξεκινάει να σφιγγει πολυ ριχνουμε λιγο κρυο νερο και επαναφέρουμε. Βαζουμε 1 με 2 κρόκους ανα μερίδα αναλογα με το ζυμαρικο και αναλογα με το ποσο σαλτσα θελουμε. Αν θελουμε να το κανουμε με ριγκατονι θελουμε σιγουρα 2 μεγαλους κροκους γιατι κραταει πιο πολυ σαλτσα. Η original συνταγη ειναι με πεκορινο αλλα εγω προτιμω την παρμεζανα γιατι εχει πιο γλυκια γευση. Ευχαριστω! Recipe: -1000gr type 00 flour(but normal works as well) -700ml warm water(not boiling) -10gr salt for the dough and a generous pinch at the pan -25gr dry yeast -Cherry tomatoes and Rosemary (optional) Method: -Mix the warm water with the yeast and a few tablespoons of flour. -Let it activate for 30 mins at least. -Add the rest of the flour in the water. -Work the dough with a spoon and continue with your hand. -After a while add the salt and mix again. -You need a sticky dough so you may need a bit more water. -Let it rest for 1 hour or until double size(a warm spot is recommended) -Oil up your fingers to prevent sticking -Add some salt on the oil (flake salt if you have) -Extra virgin olive oil is the best choice -Spread the dough gently and let it rise for at least 30 mins(or until fluffy) -Add your cherry tomatoes skin down and your rosemary -Bake in a preheated oven at 220C (428F) for 25-30 mins -You can prepare the dough and leave it in the fridge for 2 days for maximum bubbles. Εύκολο και παντα ίδιο κοτοπουλο. - Στήθος κοτόπουλου με το δέρμα, λίγο αλάτι, πιπέρι, σκόρδο σε σκόνη. -Σφραγίστε το με μια κουταλιά της σούπας ελαιόλαδο και λίγο θυμάρι σε σακουλα vaccum. -Μαγείρεμα σε sous vide για 1:30 ώρα στους 65,6 βαθμούς Κελσίου (150,08 Φαρενάιτ) -Μολις ειναι ετοιμο βγαζουμε απο τη σακουλα και με λιγο χαρτι στεγνωνουμε την πετσα του κοτοπουλου. -Σωταρουμε με το δέρμα κατω με λίγο ελαιόλαδο μέχρι να ροδίσει και να γίνει τραγανη η πετσα. -Απολαμβάνουμε! Τέλειο κάθε φορά! Tip: Μπορείτε να ετοιμάσετε γεύματα με sous vide και να έχετε έτοιμο το κοτόπουλο σας. This is a recipe that I love! Pumpkin pie risotto with Raisins, Pumpkin Cream, Cashew Pesto(with a few basil leaves) and Crispy Crust Pastry. Thanks for watching! Hope you love it ! Recipe for 3 servings: (1)Pumpkin Cream -500gr Pumpkin in cubes( keep 100gr and fry them) -Half Onion chopped -300gr Milk Cream -1 shot of cooking wine -1teaspoon Salt - 1 teaspoon Sugar -2 tablespoons of Parmesan cheese -50gr butter for the Sauté (1)Method -Sauté the vegetables with the butter in low heat until they are seared -Be careful with the butter it can burn easily -1teaspoon salt-1teaspoon sugar -One shot of wine and reduce in low heat -After the alcohol evaporates add the cream and simmer until done -Use a hand blender to make it creamy and add 2 tablespoons and lemon juice from 1/4 lemon. (2)Cashew Pesto -100gr Cashew Nuts -5 Basil leaves(Optional) -30ml Olive Oil -A pinch of salt and black pepper -1 clove of Garlic -20ml water (2)Method -Blend Everything together until creamy -You may need to add more liquid. -You can add some avocado for extra flavor. (3)Risotto -Sauté half onion with olive oil -Add the 1+1/2cups rice and continue to sauté to sear the rice (you can go for arborio or carnaroli rice) -Add a shot of cooking wine -After the alcohol evaporates use chicken of vegetable stock gradually to boil the rice. -Always be careful when using store bought stock because sometimes they are too salty. -While you make the rice Fry 100gr of the pumpkin cubes in 150 Celsius, then fry the crust pastry cut in triangles or any other shape you want. -When the rice is almost ready remove from heat and add the Raisins, the Fried Pumpkin cubes( keep some one the side) 50gr butter, 4 tablespoons of parmesan, pumpkin cream and mix all together. - Use a few fried Pumpkin cubes, raisins, fried crust pastry and the cashew pesto as toppings. -If your pumpkin cream is thicker you may need to leave some more moisture in the risotto before you finish!
