.when filling is ready the sauce will be reduced and lamb will be tender, leave to cool
.remove dough from fridge & cut in half
.roll 1 half until flat & smooth
.place on top of baking dish & work into dish
.fork the base of dough
.pour in filling & spread evenly
.roll 2nd half of dough until flat & smooth
.place on top of pie
.cut off any excess dough & tuck in edges
.pierce a hole & slits on
.beat 1 egg
.brush egg wash on to pie top
.place in preheated oven 200 c / 392 f for 25 to 30 minutes

INSTRUCTIONS :
.season 1 chicken breast with salt & ground black pepper on both sides
.place in preheated oven 200 c / 392 f for 20 minutes
.meanwhile in a bowl add 2 egg yolks, 25 grams mustard
.add 5 grams Worcestershire sauce, 20 grams red wine vinegar & mix well
.add 100 ml olive oil while mixing
.add 3 minced garlic cloves, 30 grams minced anchovies
.add 35 grams lemon juice & mix well
.add 30 ml spring water & mix well
.add 30 grams grated parmesan & mix well
.remove chicken from oven & drizzle some dressing on both side
.place back in oven for 5 to 10 minutes
.in a frying pan on medium heat add 30 ml olive oil
.once heated add 160 grams chopped sourdough bread
.add 1/4 teaspoon salt, 1/4 teaspoon ground black pepper
.mix well & cook until golden brown ( 3 to 5 minutes )
.sprinkle some grated parmesan, mix well & cook for 1 minutes
.in a large mixing bowl add 250 grams chopped romaine lettuce, 8 to 10 spoonfuls of dressing
.work dressing into lettuce
.add some parmesan, croutons and work into salad
.remove chicken, cut into slices
.place salad in bowl & add chicken
.sprinkle parmesan & drizzle dressing
.cover & store leftover dressing for up to 3 days

15 grams chopped parsley ( 0.52 oz )
15 grams chopped scallions ( 0.52 oz )

30 grams mayonnaise ( 1.04 oz )
2 teaspoons Worcestershire sauce ( 4.92 ml )
1/8 teaspoon ground black pepper ( 0.29 grams )
1/4 teaspoon paprika ( 0.57 grams )
1/8 teaspoon salt ( 0.28 grams )
1/8 teaspoon chili powder ( 0.24 grams )

INSTRUCTIONS :
.in a mixing bowl add 260 grams chunk tuna, 40 grams chopped celery
.add 15 grams chopped scallions, 25 grams chopped gherkin
.add 15 grams mustard, 30 grams mayonnaise
.add 1/4 teaspoon paprika, 1/8 teaspoon chili powder
.add 1/8 teaspoon salt, 1/8 teaspoon ground black pepper
.add 2 teaspoons Worcestershire sauce & mix well
.in a bowl add 700 grams grated white cheddar, 15 grams chopped parsley & mix well
.butter sourdough bread slices on both sides
.place on a baking dish lined with parchment paper
.toast in a oven grill until golden on both sides
.layer tuna mixture on top off bread & spread evenly
.layer with sliced tomato
.top with cheddar & parsley mixture
.sprinkle with chili powder
.place back in oven grill until cheddar has melted
