INSTRUCTIONS :
.in a mixing bowl add 200 grams tomato passata, 200 grams chopped tomatoes in juice
.add 1 tablespoon olive oil ( leave some for dish ), 1/2 teaspoon salt, 1/2 teaspoon ground black pepper
.add 1/2 teaspoon dried basil, 1/2 teaspoon italian herb seasoning & mix together
.in a baking dish brush remaining olive oil
.place 4 chicken Breasts halves into baking dish
.pour in tomato sauce mix and spread evenly
.sprinkle 50 grams grated parmesan
.layer on 125 grams sliced mozzarella
.layer 8 pepperoni slices on top
.cover baking dish with Aluminum foil
.place in preheated oven 180 c / 356 f for 25 minutes

.remove from heat and leave to cool, remove lime leaves and lemon grass
.preheat oven 180 c / 356 f and roll out a short crust pastry sheet
.cut out medium size circles
.spoon filling into centre of each circle
.fold and seal the pastry
.make small hole on top of each pie
.place pies on baking tray lined with parchment paper and brush with beaten egg
.repeat process with 2nd short crust pastry sheet
.bake for 20 to 25 minutes until golden
.serve with lemon / lime slices & sweet chilli sauce

.place 500 grams cubed butternut squash on baking tray with parchment paper

.boil 350 grams fusilli pasta
.once pasta is al dente add 100 grams kale, cook for approximately 4 minutes and drain water
.in frying pan add 40 grams butter
.once melted stir in 50 grams plain flour
.add 450 ml skimmed milk and whisk together for a couple of minutes on low heat
.add 1/4 teaspoon nutmeg and continue whisking
.add juice of half lemon, 120 grams cream cheese
.add 100 grams grated cheddar and mix together
.pour pasta and kale into sauce mix
.add 2 tablespoons pine nuts, 1/4 teaspoon salt and stir well
.add cooked butternut squash and stir well
.place in a baking dish, add 20 grams grated parmesan
.cover with foil and bake for 15 to 20 minutes in preheated oven 180 c / 356 f

1 vegetable stock cube
