How to use unripe peaches... (pickled peaches, poached peaches, Maesil Cheong)
Important! In one part of this video it looks like I eat a peach pit. I am just sucking on it and then spit it out (which I edited out, as it's not visually appealing). If you pickle peaches, you should not eat the pit. The seeds of stonefruit trees contain small amounts of cyanide. While it's not in a concentration that will hurt you, if you eat enough of them it will. Definitely never eat the seeds of stonefruit (peaches, plums, cherries, nectarines, apricots, etc). So all these peach pickles, you should be eating around them and discarding the pit. Again, if you eat 1-2 it's fine, don't freak out, but just don't sit down and eat 10 peach pickles, pit and all, every day.

Thinning my peach tree to improve yield and health of the tree

Back to Eden garden - How do I amend my soil?
Are you doing a deep woodchip mulch like Back to Eden no till method, and then wonder...how can I amend my soil?
you may have watched my video on common ways people mess up back to Eden method. in that video I talk about soil ecological transition. woody plants want fungal dominated soil, and leafy plants want bacterial dominated soil. Trees want woodchips and tomatoes want compost and manure. So why do I use a wood chip mulch for my tomatoes? Don't I need to add compost and manure each year? How do I do that when I have a deep woodchip mulch and still keep the woodchips on top so they don't nitrogen deplete my soil - like all those people who messed up their back to Eden beds?
Well, there are 3 ways to amend compost and manure into a woodchip mulched annual bed, and I go through the pros and cons of each one, and tell you which method I use!
Fear not, you can still amend your soils in the no till methodology. Let's go!

9 Essential Watering Tips for your garden or food forest
The most common question I get is "how often should I be watering?". If anyone gives you an answer like "X times per week for Y amount per watering" throw that advice out. Why?
Because why use "averages" when there are SO MANY MOVING PARTS. Am I going to follow the same watering advice that someone in Arizona is? Am I going to water my watermelons the same amount as my cacti? Am I going to follow the same watering schedule for my deep mulch garden that someone who grows in bare soil does?
Does wind not matter?
Does shade not matter?
Does sun aspect not matter?
In this video we talk about THE ACTUAL THINGS YOU SHOULD BE DOING if you want to water your plants properly. Then we discuss things you can do in your design and planning, to minimize how much you have to water.

These 9 things will not only reduce your work, and money spent on watering, they will also completely change the moisture profile that the plant sees. We must always mimic what nature creates so that we can allow our plants to exist inside the environments that they spent billions of years evolving inside - and not these man-made artificial environments which just lead to work, disease and death for our plants.

Building an Ecosystem with a Recreational swim pond - Planting Niches everywhere!
I wanted to do a thorough update of the pond, some of the plantings in and around the pond. Although this video is about the pond, I talk about a lot of the plants, and the different niches they are enjoying. This can help you decide if you want to add these plants to your food forests based on your own climate conditions and niches. What is doing well in the hot sunny rocky areas? What is doing well in the cooler shadier woodland areas? What is doing well in areas with wet saturated soils? You can take this information and apply it to your own land.

Snow almost in June?

Solar, Septic, invasives and discussing plant density.
More morning walkarounds. I show progress on the solar install (almost done!!!), and some other stuff I've had to do lately (digging the septic). It's a good moment to teach people how a septic works (briefly). You know me, I always like to teach something. I want you guys to get value out of this channel.
I also talk about taking a pause on consultations for a bit. I didn't want to talk about this much in the video, but I do know some people only watch and don't read this. However I did want to elaborate a bit on it here. I want to be clear, I have LOVED doing these. I have met some incredible people, seen your lands, helped create a design that will last a lifetime. Just seeing your energy and excitement has filled me with renewed vigor, and I've channeled that energy into more expansions on my own property. I may not have worked so hard this spring without you guys.
However, now that things are ramping up, and I have annuals to plant, trellises to build, new gardens to sheet mulch and ammend, compost to turn, all with a full time job, 3 kids, 4 dogs, a wife and family time being required (and desired), all while managing to put out new videos, answer all my comments... it's just... well, a LOT. I feel like I've been burning the candle at both ends for a while now, and although I've really enjoyed it, something has to give, or I won't have annuals this year.
So for the time being, I'm putting a pause on consultations. I think I will pick these back up in the fall or early winter. Thanks for everyone who is interested in getting my help designing your food forests. It's truly humbling how much demand there was for this, as I was regularly turning people away, just because there was so much demand.
With all that being said, come walk with me on my morning walkabout with the dogs. I believe in getting out on your land often, so I make a point to spend my mornings outside, see what's changing, see what's new, see if I want to take action to intercept something going on and return my food forest development to where I want it going.
A good farmer casts a light footprint but a long shadow.
(A saying meant to articulate how we should be out and observing our lands a lot, but only taking minimal action to set it back on course).

Looking for volunteer plants and which cuttings survived the winter in the food forest
Early morning walkabout. Lets find out which plants are volunteering here. Let's learn about what wants to grow. often the volunteers are the strongest plants for the season. Their germination triggered because the conditions are perfect for their survival. Let's learn from what nature wants to plant here. Maybe we will find natures plan is pretty darn good.
Then let's also go finding which cuttings and baby plants survived the hard Canadian winter, so we know what holes we have to fill in spring planting.

List of ongoing maintenance required for a permaculture food forest
A long time viewer had a question on what kind of long-term maintenance is required for the food forest. I get this question a lot from non-gardeners, isn't this all a lot of work to keep going? And I completely understand why, because most people try to garden, do the whole bare soil, spaced plants thing - maybe they try square food gardening method. Struggle struggle struggle, then give up. And they see my massive gardens and extrapolate their experiences onto this footprint size.
But remember, this is a lot of work to set up. We don't just put trees in grass, we are sheet mulching to reset the ecosystem. We are chipping up tons of trees (literally) and dropping their organic matter to the ground. We are giving it time to transition the soil over. We are planting extremely densely and with extreme diversity. We aren't only planting things for ourselves, we are planting things to feed the ecosystem we are creating.
We aren't just planting trees. We are creating an ecosystem here.
The REASON we do this is because this way nature sinks her teeth in and takes over. We hand off the long term maintenance, nutrient cycling, pest control to nature and her (literally) billions of helpers.
We must have a mindset change from "this is all mine" to "I'm part of this, and thus my share is only part of it also". We WILL get pest damage, but it will be vastly reduced. We WILL get plant loss, but the survivors become stronger. We WILL have creatures such as wasps and slugs and rabbits, but their impact will be mitigated, and their benefits will be celebrated.
If you want to grow your food in a dead ecosystem because you must control and eat every last berry and veggie, if you refuse to eat a piece of lettuce with a bug bite in it (it must be PERFECT), if you remove every wasp nest you see, kill every slug, and spray neem oil on every aphid, then the price for those actions is one of long term pain and work and maintenance. Because we DEPEND on the ecosystem of life to produce our food. The food is the reproductive consequence of the plant component of that ecosystem. If we remove the entire rest of the ecosystem, then we create such a large imbalance that constant work and struggle is the punishment for that choice.
This is binary folks. We either live within and with nature, or we constantly fight against it. And nature always wins.
The long term maintenance of a food forest? Sure you can (optionally) add some woodchips every few years. You can (optionally) prune your trees. You can (optionally) remove the odd plant and re-plant another more desired plant. You can (optionally) add more fertility with chop and drop, natural teas like comfrey/nettle tea, animal manures and compost. You can optionally do a few things and since you are out here enjoying your land, why not. But if you don't? Well, that's kind of the point here isn't it? To design in a way which removes the human from the equation. To hand off the reins to nature.
So what work MUST we do in our food forest to keep the food coming? Tune in and find out.

Early May walkabout - Learning to love a plant I used to despise.
Today we pick up the camera and do a May tour. Getting out and observing your land is critical. I would have never learned about the use of this plant had I not started doing that 4 years ago. We humans tend to really hate on stuff we don't understand. A little bit of listening, watching and an open mind can go a long way to heal those natural tendencies - whether it's just about plants, or it's something deeper like racism. Maybe take the time out of your day go learn about things that are different than you, cultures, plants, whatever.
There's a lot of hatred of this plant from grasholes around the world. Why? Because it shows up in a perfect monoculture ornamental lawn and just wants to exist also. And that's enough for us to hate it. Meanwhile, nature certainly doesn't, as I observed (yet again) today.
Other observations that are critical at this time are the bloom time on all your trees. Go see if they are lining up. Today I observe cherries and I will continue to watch them. It may mean a slight adjustment of adding a few more cherry bushes into the mix this year - if the timings aren't lining up properly.
Ditto with apples and pears and everything else which isn't self-fertile. Go out there and observe your land. You never know what lessons it will teach you. Today it reinforced a previous lesson about creeping charlie. And it went from one of my most hated plants (back in my Suburbia pre-permaculture-Keith days). Now, I wouldn't say I LOVE it, but I will say that I will certainly allow it to exist in my gardens.
It is a wonderful naturally spreading groundcover which is pumping root exudates into the soil, doesn't super vertical to shade other plants out, can be chopped and dropped if needed to build soil, and well, one other really nice benefit that is waiting at the end of this video.

Grass to Food Forest - Part 2: Lets jump into dumpsters, shall we? Dumpster diving for trees
Today we continue the grass to food forest conversion process. Yesterday we planted trees right in grass. Today we begin the long term soil transition from bacterial dominated soil which grasses like, towards a fungal dominated soil which trees and bushes like.
Part of this is dumpster diving during covid. So we brought lots of hand sanitizer and hit the bins.
Funny story, so I'm standing in a bin at a pet store and one of the employees walks out for his break. He notices a strange and slightly disheveled man in track pants standing in his dumpster and (very politely) asks ... "why?".
I mentioned what I'm doing and, well, I think I may have a new subscriber. So hello Tim if you are reading this. Welcome to the channel.
Then later at a Chinese restaurant, again, standing in their bin, I meet a lady named Susan. Very scared at first, as her bin is behind a small gate with a latch. So there I am standing in her bin (these bins are VERY clean by the way, just filled with boxes), and she gives a bit of a gasp when she swings the gate open and sees me. The strange thing is, she recognized the truck and trailer and asked me if I'm the guy who goes around planting trees in the town.
So apparently word is spreading. I'm not sure if that's a good thing, because technically planting trees on public land isn't exactly "legal". Either way, was a neat interaction.
I'm certainly meeting my fellow townsfolk in interesting settings, that's for sure.
I can't believe I got here. If you asked me if I would be in people's dumpsters when I'm 42 I would have started to wonder how it all went wrong and how it came to this. What am I doing with my life?
Hopefully something meaningful.

Grass to Food forest conversion - Part 1, planting trees
Youtube Post-processing cut 16 seconds off this video at the end. Forgive the odd-end to it, but it mostly just cut the subscribe end-screen. Seeing as I have a few videos queued up for upload (and it takes me 10 hours to upload a video this long), I'm just going to leave this. It really only cut out 20 words and 9 of them were "thanks for watching, see you on the next video".

We are going to do a series on how to convert your lawn into a food forest, starting from scratch.
Part 1 begins today.
So you find yourself with a grass lawn that you finally realized was taking money and time off of you, and you decide to plant a food forest which GIVES you money via fresh healthy food. You decide "enough is enough, lets do this" and buy trees. You have trees ready to go into the ground and you haven't done anything to prepare for it.

7 things you can do to make a difference, which also improve your life
"The ongoing sixth mass extinction may be the most serious environmental threat to the persistence of civilization, because it is irreversible. Thousands of populations of critically endangered vertebrate animal species have been lost in a century, indicating that the sixth mass extinction is human caused and accelerating. The acceleration of the extinction crisis is certain because of the still fast growth in human numbers and consumption rates. In addition, species are links in ecosystems, and, as they fall out, the species they interact with are likely to go also. In the regions where disappearing species are concentrated, regional biodiversity collapses are likely occurring. Our results reemphasize the extreme urgency of taking massive global actions to save humanity’s crucial life-support systems." - Gerardo Ceballos, Paul R. Ehrlich, and Peter H. Raven, Proceedings of the Natural Academy of Sciences.
For land vertebrate species alone, 515 species currently face extinction with populations under 1000. Another 388 species have populations under 5000. Data shows that many of these species have lost more than 77% of their populations in the last 100 years, something that researchers estimate would have normally taken 10,000 years at crisis levels. Of the species with fewer than 5000 members remaining, 84% live in the same affected areas as the species with 1000 members remaining. Wildlife scientists are warning that extinctions beget further extinctions. This snowball effect can irreversibly impact all living organisms on earth.
The world is nothing but a tapestry of symbiotic relationships and interdependence's. The documentary "How Wolves Change Rivers" demonstrated the power of trophic cascades, where the re-introduction of wolves into Yellowstone national park actually changed where the water flows were going through a series of trophic cascades.
Today we face the challenge of our species history: the complete and utter collapse of our natural ecosystems. This isn't just about climate change, this is about the coming together of dozens of existential threats to the continued existence of the human race, all coalescing at the same time, largely due to one thing: the way we live our lives.
The good news is, we still have time to reverse this. And many of the actions we need to take actually IMPROVE our lives at the same time. Maybe not in terms of the amount of things we have, but in the quality of the time we enjoy on this earth. It's our duty, our responsibility as not only the cause of this problem, but also as the most powerful species on this planet, to make the changes necessary to preserve our natural ecosystems for the generations to come.
It's easy to point the finger at the Exxon Mobil and Shell of the world and say "see those guys there, they are the bad guys", without understanding that it's our demand that they are supplying. And in the end, history has shown that if there is money to be made, then unchecked capitalism will provide someone to fill that demand. So the ONLY way to solve this is via Death by 1000 cuts. It is by a groundswell of change, which begins at home.
Today I focus on 7 changes that each person can make, which not only make a positive impact but also make our lives better for doing them.
