A natural and humane winter Rabbit defense?

Today we use the permaculture principle of observing your land, and we might have learned a natural and humane way to deal with rabbits in the food forest. This method may or may not work, but it MAY and that's what is important. If it does, it could turn one of the largest cold hardy food forests pests into a tremendous source of fertility and joy.
Can we deal with rabbits by.... feeding them?
What if we could feed them with a plant that we are going to cut back in the spring anyways?
What plant?

Rabbits attack the food forest!

How I defend against rabbits (and I'm not perfect, I should have double checked all my trees!). Life gets busy though, and mistakes were made...
So now... how can we maybe save some damaged trees using bridge grafts....
This doesn't mean fences are going up. It doesn't mean I will trap them (although I would if my family would eat them - but we really don't eat enough meat to do that). It means that if I TRULY believe I want an ecosystem, that part of that price is having animals be animals. So it doesn't become about "how do I eradicate them", but instead how do I mitigate their damage?
.. and mitigation doesn't mean elimination. It means that I need to be mentally okay with losing a tree now and then.
I'm either a hypocrite or I'm not. So part of the price of being attuned to my belief system, is that I need to accept where my belief system causes my food forest damage. Then I try to minimize it.
I could have done a better job this year. I will try to do better from now on. In the end, time is finite, and we can only do so much. I will use this information to re-evaluate my position on having a truly open and wild system. However so far my stance still hasn't changed. These guys do more good than harm, and I want them here. I just need to protect my trees better - specifically "higher" during large snow accumulation.

Permculture Gardens, Your Viewer Vids - Fall 2021 continued
The last series of our viewer vids for the year of 2021 is now ready for your viewing enjoyment! For anyone new to these, this series of videos is my attempt to help build community online... to showcase YOUR gardens and new food forests - whether you live on 5 acres, or a patio pot garden in an apartment. I want to showcase how people are using permaculture to create self-resiliency in their lives.
As always, my goal in this channel isn't to become some famous youtuber. I'm much too introverted to care about that kind of thing. My ideal lifestyle is to be alone in the mountains somewhere, in the middle of nature. No, my goal for this channel is to INSPIRE YOU to start planting trees - because that's what I want my legacy to be. And the best way to inspire people to start some massive movement isn't by telling them how good it is, or telling them how critically important it is (even though both are true)... it's by SHOWING them how amazing this life is. And you do that with examples of people DOING IT!!!
So strap in, check out all these fellow community members - members of the collective human beings WHO CARE ABOUT THIS PLANET and want to leave a beautiful home for our future generations. People who don't want to just hide and watch the world burn and collapse, but we want to be the people who stood up when we were challenged, and we fought for the world we want.

It has a bit of a different slant to the writing style - which I would probably re-do, but at least it has my general position on this topic... that carbon is great to sequester (it builds soil), but that if humanity's approach is to just sequester carbon and ignore the root cause of the problem - which is humanity treading all over nature, then we won't actually accomplish anything.
The house of cards is falling, and the carbon approach - while important, is only caring about the spades falling, while we let the rest of the deck crumble.
The approach has to be wide-spread restoration of wildlife, habitat, forests, combined with a restructuring of political systems which promote corporate funded destruction of our world for profit and short term thinking to get re-elected, combined with a systematic overhaul of what we call "normal" in our daily lives, and combined with the creation of the infrastructure we need (using the last carbon we have) in order to progress through our 3rd industrial revolution. Guide to creating microclimates in your garden
In today's video we talk about the 4 main ways to create microclimates in your garden. Each one of these can be delved into deeper - for example, there can be a drastic difference between morning, afternoon and evening sun. Gradients can be created where full shade transitions to full sun, and plants can find the perfect environment they want, using broad sowing techniques.
For now we'll keep it general and teach the basics of how to adjust climates. Each of these tools can nudge a location slightly. You may be able to cheat a zone or two. You may be able to save plants from a winter death. Or you may just simple be rewarded with improved yields, or drastically reduce watering.
Each one of these will also have lingering effects, often those which build upon itself year upon year. Introducing native fast growing pioneers in a dry area can grow a forest upon a desert, in time.
These tools are ones that we will need to rebuild the earth.

Timelapse of a full season of a 5 year old permaculture food forest
So as I hinted at last episode, I had a nice surprise for everyone. I've been taking little shots of the food forest and pond every few weeks all season long. Today is the culmination of that effort - a full season in the food forest from snow to summer to snow.
One thing I wish I did was to just set up a tripod and put the camera in the same spot and do a MUCH shorter video, but way more often. Also to have it still, and not moving. That is an improvement I can make for next year. I still think this one turned out okay.
A few notes:
It's super fun for me to watch Lucy grow up, from the first shot to the last shot. She got so big!
It's also sad to see the peach tree before and after it lost a few limbs from over bearing too much fruit. I even thinned 75% of it off!! I guess lesson learned, and I need to do more thinning even!
I did also include 4 sequences. Looking at it from the side and from front on. Then for the pond, scanning across the pond, and then just the waterfall area. I hope it's not too repetitive (I fear it may be), but I figured more info is always good. I plan on looking back on this video as the years go by, and well, to be honest, I wanted more shots rather than less. I hope you all don't mind, and you enjoy it!
Another season has come and gone. I hope you made the most of it, and if not, then make sure to make the most of the next one. We're in planning season now, so get busy planning your future! And make sure that future includes trees!

SEED SEASON! Free plants are everywhere!
It's that time of year everyone... The time of year where millions of free plants are just sitting out there waiting for you to come scoop them up.
These days we are all so impatient. We are all also resource strapped. The world is go go go go and sometimes we have a hard time connecting to small things that our ancestors did, which paid them back over decades. Today we're going to tap into our inner troglodyte and go collecting seed to bring back to our cave.
Today's video was very hard to edit, because I had over 4 hours of footage to try to condense into a small video on seed collecting. Seeds I collected in the last 2 weeks:

How to make the BEST apple cider vinegar - using science.

Most of the apple cider vinegar videos on the internet make vinegar that has a hint of apple flavor. Here is how we can make a very small adjustment and crank the flavor up tremendously. Lets do this RIGHT.
A typical apple cider vinegar recipe is quite simple:
Cut/mash apples, stick in a bucket, fill with water, add sugar, cover with a towel or something, let it sit for a few weeks to a month. Bam, vinegar.
And while that's technically a way to make vinegar, it's not actually making apple CIDER vinegar, because apple cider is never created. Okay so why is that important? I will get technical here...
What is happening in that process is that wild strains of yeast found on the apple skin are going to start a reaction to convert sugars into alcohol, CO2 and some byproducts. The main byproducts we care about are esters and phenol groups. The reason for this is that when we drink the final product, these are what register on our taste buds. The more esters and phenols we create, the more flavor we have.
Okay, so why is the simple recipe above bad?
Since it's not kept anaerobic, what happens is that the yeast culture can't really build up. Not only that, but the wild yeasts will only be able to get the alcohol content up to about 1.5%. As the alcohol is being made, it's immediately being consumed by acetobacter and converted into acetic acid. The acetic acid then kills the yeast that is making all our flavor! This is a bad thing.
So a PROPER recipe needs to have 2 phases:
1) Anaerobic step.
2) Aerobic step.
In doing so, we allow the yeast to really take off and go crazy. When then also next-level this by using specific kinds of yeast which can crank the alcohol volume WAY up. Wine or Champaign yeast will crank this up to 10-20% alcohol. And remember, the more alcohol production we get, the more esters and phenols we make (actual chemical formulas are in the video). The more esters and phenols we make, the more flavor we get.
ONLY NOW, once the CO2 production slows, we know that most of the sugars have been converted to alcohol, and now we uncover the batch. We add in some culture from a previous batch (and if you don't have a previous batch, you can do what I show in this video) to inoculate the culture. We are now adding not only the acetobacter (which makes the acetic acid), but also the "mother" which is a mix of various bacteria and yeast which will produce a cellulose layer called a pellicle, which allows gas exchange, but does not allow contamination. This pellicle protects the batch.
Now we are firmly in the aerobic step, so we don't lock the lid airtight with an airlock, but rather NOW we allow air exchange in an aerobic lid such as a towel. Now the acetobacter converts alcohol into vinegar, and this acetic acid will kill off much of the yeast and stop the flavor production (but all that nice flavor remains in there).
This 2 step process makes a tremendous difference. I can't understate the difference.
TLDR recipe:
1) Crush, smush, or ideally masticate apples.
2) Add wine or champaign yeast. Cover air tight, for about 1 week.
3) Vent as gasses are produced. Once gassing stops, start aerobic phase:
4) Add culture from previous batch. Cover with cloth.
Last step takes about 1 month. You are now done.
This is almost as simple, but produces an infinitely better product. All done using science principles.
