Sourdough Spelt Bread
Here's my recipe for amazing 100% whole grain sourdough bread made with SPELT flour. Spelt, an ancient-grain relative of wheat, has apparently been cultivated since the Bronze Age. You might have come across it in a health food store as it's known for producing soft and airy whole grain bread. If you've already made my 100% whole wheat sourdough bread (link below) and you're trying to incorporate a variety of whole grains into your sourdough bread baking, try giving this "Spelt Sourdough Bread" a shot too! ✏️ The recipe that I used for each loaf:
Bread Flour................................................360g
Whole Wheat Flour....................................60g
Whole Grain Rye Flour...............................30g
Water.........................................................300g
Sourdough Starter (100% hydration)......100g
Salt.............................................................10g
Final dough weight comes out to 860g per loaf. When I made each loaf for this video I scaled them out to be 845g each, so I must have lost a little mass along the way through mixing and shaping. Stuff happens!

The trick to this recipe is an overnight cold rise in the fridge.This allows the dough to rise slowly while you are sleeping so that you don't have to fuss about your dough all day. PLUS the cold dough is way easier to handle when you're shaping your baguettes. The recipe in this video makes two 180 gram baguettes (or demi-baguettes). Give these a try! I hope you enjoy.

Learn how to shape a SOURDOUGH BATARD. Shaping a batard (oval) is slightly more advanced than shaping a sourdough boule (round), but this technique makes it easy! Check it out, and give the video a thumbs up if you found it helpful!
This is a 72% hydration dough, and this shaping technique should work for doughs anywhere between 65%-80% hydration. (If you don't know what I'm talking about, don't worry about it. Making delicious bread is more important than technicalities!)
