Shepherd's Pie ingredients: Olive oil (or cooking oil of preference) Salt & pepper About 6 russet potatoes (about 2-1/2 lbs) peeled & cut into chunks 1/2 cup milk 1/2 cup heavy cream 2TBS butter 1 tsp nutmeg (optional) 2 lbs fresh green beans (ends snapped, cut into 2-inch pieces & steamed 1 small white onion diced up 1 garlic clove minced 2 carrots peeled and diced 1 bay leaf 2 lbs ground beef (or ground lamb) 2-1/2 TBS all purpose flour 3 TBS tomato paste 2 TBS hot water 1-1/2 tsp Worcestershire sauce Dried or fresh parsley for garnish, you could also use minced chives How to make it: 1. Preheat oven to 350 degrees F. Oil/grease 9X13 baking pan. 2. Add potatoes to a pot of water & boil/cook until tender, about 15-20 minutes. Drain & return to the pot. 3. Mash potatoes & add milk, heavy cream, butter, nutmeg & a dash of salt/pepper, mix well. Set aside. 4. If you haven't steamed your green beans, steam them now. I simply add about 2-3 TBS of water to a microwave safe dish with my green beans, cover with plastic wrap & microwave for about 4-5 minutes. Immediately remove from the microwave and strain them, allowing cold water to run over them for several minutes to stop the cooking process. Set aside. 5. In a large skillet, heat oil over medium-high heat. Stir in onion, carrots, garlic, and bay leaf & cook until vegetables begin to soften. Add the beef & cook, stirring until no longer pink. Pour off any standing liquid. 6. Push all ingredients to one side of the skillet. On the other side, add the tomato paste, flour, Worcestershire sauce, hot water & a pinch of salt & pepper. Stir until blended, then combine with the beef mixture. Cook until the mixture is thickened. Remove from heat. Remove & discard bay leaf. 7. Spread the beef mixture in the prepared baking dish & layer the green beans on top. 8. Spoon the mashed potatoes over the green beans & smooth the top. (You may cover at this point & refrigerate for 1 day before baking. Let it stand at room temp 1 hour before baking). 9. Bake until heated through & the potatoes are lightly browned on top, about 30-40 minutes. Sprinkle with parsley & enjoy! 🎼 Music by Epidemic Sound! #HomeFreeAlaska #OffGrid #Alaska Usually it's MOOSE on our Alaskan homestead that we run into, but today, we have an unexpected visitor! With winter on the horizon shortly, we're focused on filling our wood shed with firewood as that's our source of heat in our off grid cabin. After a hard day's work, Joe surprised me with a delicious homemade salmon chowder! Thanks for joining us for another video, cheers! 📌 Spanish sauerkraut: https://youtu.be/vG2vBk3nuqE?si=lnmQ3QyWKwGBHM4B 📌 Regular sauerkraut: https://youtu.be/XFkld33oUNU?si=yaY85ZWJ-HHiZaRM SALMON CHOWDER: 2½ lbs of fish (whatever fish you’d like; skinless, boneless, and chopped into chunks) 3 med. POTATOES (peeled/cut into ½ inch pieces) 4-5 slices BACON (chopped) 1 Lg ONION (chopped) 1 cup CELERY (chopped) ½ cup CARROT (chopped) 2 Tbsp FLOUR 1 tsp dried OREGANO 1 tsp dried THYME 1 BAY LEAF Salt/pepper to taste ½ cup HALF N HALF or HEAVY CREAM (add more for more creaminess) Heat a large pot and add chopped bacon. When bacon is cooked, add onion, celery, and saute for 2-3 minutes. Add black pepper, oregano, and thyme. Mix ingredients and cook another minute. Add chopped potato and carrot, cover with water (use half water half chicken or veggie stock if desired), add bay leaf. Stir, cover and raise pot to a boil, then reduce and simmer approx. 10 minutes, or until the potatoes soften. Add fish. Return pot to boil, then reduce and simmer about 5 minutes. In a small mixing bowl, add 1/2 cup water or broth & flour, mix well. Stir this into the pot and cook 2 minutes until chowder thickens. Turn off heat & add half and half or heavy cream. Top with a sprinkle of parsley or chives and serve with crackers or thick-sliced bread. 🎼 Music by Epidemic Sound! After the hustle & bustle of the summer season, all the projects, work & adventures, I know that in about a month it'll all slow down. Winter is that way isn't it? Ready or not, here it comes & it forces you to slow down & hunker in more by the fire. I'm grateful for the seasons changing as a lot of us would just keep going full steam ahead with no slow down amen? But the slow down is desperately needed, even if we don't realize it. Besides who am I kidding, there's still a lot of work to do once the temperatures drop. Spend a couple days with us on our Alaska homestead as we continue work on our cabin addition, cook a delicious sausage sauerkraut soup for dinner, homeschool + I'm feeling artsy/crafty & decided to make a beautiful, easy, FALL garland for the kitchen window in the cabin. Bamboo drinking glasses: https://geni.us/ZlDRj5 SAUSAGE & SAUERKRAUT SOUP Ingredients: 1 lb sausage (I used mild Italian sausage) 2 tbsp of butter 2 small onions or 1 large onion, diced 2 garlic cloves, minced 3-4 white potatoes (peeled and cut into small bite sized cubes) 3 tbsp tomato paste 2 carrots, grated 5-6 cups beef or chicken stock (preferably homemade) 1/2 tsp caraway seeds (optional) 1/3 to 1/2 cup of pearl barley 8-12 oz/225 grams of sauerkraut (liquid drained off) Salt/pepper to taste 2-3 tsp Italian seasoning DIRECTIONS: In a large pot over medium heat, melt butter. Adds onions & garlic to the melted butter and cook until onions are translucent. Dice potatoes into bite size pieces and grate carrots. Add potatoes and carrots to the pot with tomato paste, barley, caraway seeds, and chicken stock. Cook for 20-25 minutes. Meanwhile, in a separate frying pan, cook sausages & set aside to cool. You may deglaze the sausage pan with a bit of warm stock to add some extra sausage flavor to the soup. Add the sauerkraut to the soup pot and cook soup for another 15-20 minutes until the barley is tender. Once the sausage is cool enough to handle, slice it into small rounds and add to the soup. Pretty soon everything will be covered in a blanket of snow which makes everything a little more difficult. We're finally getting to the lean to that we need for the sheep pasture to cover their hay from the outside elements. Though we're facing 10 days of rain in our area of Alaska, we're still gettin' it done! Thermacell refills: https://geni.us/izrBWh BLUEBERRY-ORANGE BREAD RECIPE: Ingredients: 2 cups all purpose flour (I use Einkorn flour) 1 tsp baking pwdr 1/2 tsp salt 3/4 cup softened butter 3/4 granulated sugar 2 large eggs 1TBS orange zest 1/2 cup fresh orange juice 1/2 cup milk 1 tsp vanilla extract 1 cup fresh, frozen or dried blueberries 1/2 cup walnuts (optional) 1. Preheat oven to 350. Butter a 8X4 loaf pan. 2. Combine flour, baking pwdr, & salt in a medium-size bowl. Set aside. 3. Beat butter & sugar in a large bowl with electric mixer on medium speed until fluffy. 4. Add eggs, one at a time, mixing well. 5. Stir in orange zest, orange juice, milk, and vanilla. 6. Stir flour mixture into butter mixture, just until dry ingredients are moistened. (Do not over mix). 7. Fold in berries & walnuts. Spoon batter into prepared pan. 8. Bake 55-60 minutes or until center is dry when tested with a wooden pick. (Add 5 to 10 min if using frozen berries). Cool in pan 10 minutes, remove loaf & transfer to a wire rack to cool. One of the things we need to get done is clear a spot for our future greenhouse build. This means cutting up a bunch of downed trees & hauling them away for firewood. We plan to lay the foundation for the greenhouse this summer so that we can continue to work on the greenhouse build even after the 1st snowfall. And HOPEFULLY by spring 2024, we can plant our first garden! With hard work comes a little play right? So the boys & I are picking cloudberries down by the pond & making homemade cloudberry jam! CLOUDBERRY JAM: Ingredients: 500g fresh cloudberries or "bakeapples" as some say 125g sugar ¼ cup (50g ) water Instructions: 1. Place berries into a heavy pan; heat gently until juice starts to flow. 2. Add sugar and water, bring to a boil, stirring constantly. 3. Cook, stirring frequently until thickened (8-10) minutes 4. Pour into hot sterilized jars, leaving ¼ inch head space; wipe jar rims thoroughly. 5. Seal and process in a boiling water bath for 10 minutes or store in refrigerator for up to 3 months. Riding the rivers in the boat with Joe, the sun shining on our faces, the fresh breeze & complete silence & serenity out at the remote cabin was nothing short of amazing! Can't wait to go back again. I was afraid of the river after the incident last time we tried to go out but today I overcame that fear & I'm so glad I did! The A frame cabin addition on our main cabin is coming along nicely & super fast. We'll definitely have it completed before winter! It's going to give us much needed space for food storage so NEXT year we can start growing fresh veggies & preserving food for the homestead again! #HomeFreeAlaska #OffGrid #Alaska I'm really excited about today's video because we are finally starting our cabin addition but we've made some changes to our original plans. This addition to our 576 sq ft off grid Alaska cabin, will give us some much needed food storage space. I love our cabin just the way it is but as homesteaders, we garden & raise a lot of our own meat so food preservation & storage is a big deal for our family. Starting this addition early in the summer will ensure that we can have it completed before the cold dark winter arrives! We're dispatching two of our roosters in today's video & processing them for meat & homemade bone stock. Busy busy on the homestead, thanks for joining us for another video! Cheers... ************* Homemade bone stock: You will need: 3.5 to 4 lbs beef bones or 1-2 chicken carcass (plus a handful of chicken feet optional) A couple of carrots chopped A couple of celery stalks chopped 1 onion 2 TBS apple cider vinegar Toss any saved veggies in there that you may have been tucking away for your stock! Fresh herbs: (optional) Thyme Rosemary Oregano Salt/pepper Throw everything in a pot with water (I use 1 quart of water for each pound of bones/meat). Bring to a boil & then reduce heat to low. Simmer for 3-4 hrs. Strain solids out through a tea towel & then ladle your stock into jars or ziplock baggies. Stock will keep in your fridge for 4-5 days, you can also freeze or can your stock for long term storage. Keto cheesy/garlic bread: You will need: 1 cup grated mozzarella 1 cup grated parmesan 1/4 cup almond flour 2 eggs, lightly beaten 1 tsp each of garlic powder & onion powder Mix all ingredients together in a bowl. Line a cookie sheet with parchment paper & pour out mixture. Smash the mixture into a rectangle about 1/2 inch thick. Bake at 350 degrees for approx 20 min until golden on top. I like to make a simple butter garlic dip by simply melting butter in a bowl & adding a bit of salt & garlic powder to taste. Enjoy! 🎼 Music by Epidemic Sound! Homemade playdough! PLAYDOUGH: 2 cups all purpose flour 3/4 cup salt 4tsp cream of tartar 2 cups lukewarm water 2TBS vegetable or coconut oil Food coloring 1. In a pot over medium heat, stir together flour, salt & cream of tartar. 2. Add water & oil. (If you're only using 1 color, add it to your pot now and combine. If using multiple colors add color in step 5). 3. Stir constantly to remove clumps. Continue to stir until the dough thickens & forms into a ball. 4. Remove from heat & divide dough into separate chunks. Place chunks into individual ziplock baggies. 5. Add desired food coloring to each bag & knead the dough inside the bags, with your hands until the color is completely incorporated. Store play dough in air tight containers.
