We're continuing work on our DIY chicken coop build + taking ya'll along for what a typical supply haul looks like for us here in Alaska. The nearest big town from our off grid cabin is an hour away. There's a lot to do, but we're most excited about picking up our new chicks to add to our Alaska homestead! This day has been much anticipated! Our new chicks will be our future laying hens & mark the beginning of getting back to self-sufficiency...our pursuit to live a self-sustaining lifestyle as much as possible. CHOCOLATE CHIP COOKIES: 2 1/2 cups all-purpose flour 1 heaping teaspoon baking soda 1/2 teaspoon sea salt 8 tablespoons (1 stick) unsalted butter, at room temperature 2 cups packed light brown sugar 2 large eggs 1 1/2 teaspoons vanilla extract 1 1/2 cups semisweet chocolate chips 1. Arrange a rack in the center of the oven and heat to 350°F. Line a baking sheet with parchment paper. 2. Place the flour, baking soda, and salt together in a medium bowl; set aside. 3. Place the butter and sugar In a stand mixer fitted with the paddle attachment. (Alternatively, use an electric hand mixer and large bowl.) Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Add the eggs and beat until blended. Add the vanilla and beat until blended. 4. Turn the mixer off and add the flour mixture. Mix on medium speed just until the flour is mixed in, then turn the mixer to high speed for a few seconds to pull the dough together; it will be chunky. Add the chocolate chips and beat on high speed to thoroughly and quickly mix in the chips, about 5 seconds. 5. Drop the dough by large spoonfuls onto the prepared baking sheet; don’t flatten them. Bake until lightly browned on top, 10 to 11 minutes. Cool on the pan on a rack for 1 minute, then transfer the cookies to the rack to cool completely. Long chunky knit sweater: https://geni.us/hkFY MOOSE STEW & DINNER ROLL RECIPE: 2lbs moose meat (or beef) cut into 2-inch chunks Salt/pepper 2TBS all purpose flour 2TBS olive oil 1 small onion chopped About 4 garlic cloves minced 2-3 large carrots peeled & sliced 2-3 medium potatoes 2-3 cups beef broth 1/4 tomato paste 1TBS worcestershire sauce 1 bay leaf 2tsp thyme (optional) 1. Preheat oven to 325F. 2. Season meat with salt/pepper. Sprinkle flour over top & mix to coat well. 3. Heat oil in dutch oven over med heat. Add the meat & brown on all sides. Don't worry about cooking it all the way through at this stage. Remove meat & set aside. 4. Add onions, garlic, and carrots to dutch oven, cook stirring occasionally for 2-3 min. 5. Add potatoes, beef broth, tomato paste, bay leaf, thyme, and worcestershire sauce. Use wooden spoon to scrape brown bits from the bottom of dutch oven. 6. Bring mixture to simmer, stirring occasionally. Return meat to pot. Cover the dutch oven & transfer to the preheated oven. 7. Cook for approx 2-2/5 hours. Remove the bay leaf before serving. Season to taste with salt/pepper! Check out this video for my homemade sandwich loaf recipe. (Full recipe is written out in the video description). When we purchased our off grid cabin in Alaska, the only structure on the homestead was our cabin. We don't have anything to store our garage equipment in, to include our snow machines. Today we're going to fix that. We're installing a ShelterLogic pop up garage. Thanks for joining us for another video! Cheers... SOURDOUGH FLAT BREAD: You'll need: 1) Some sourdough discard (however much you want for the size flat bread you want). 2) Diced chives or regular onions. (Optional) 3) Everything bagel seasoning or whatever seasoning you'd like! 4) Olive oil & soy sauce. Heat your skillet nice & hot over medium heat. Then add your discard to the pan. It should be sizzling! Try to flip only once. Sprinkle your seasoning & diced chives on top...flip the flat bread, allow to cook a few more minutes. While it's cooking, whisk up a simple sauce with a dash of soy sauce & olive oil. Slice it up with a pizza cutter & enjoy! Mayonnaise 3. Mustard 4. Green olives (optional) 5. Dried parsley 1. Boil your eggs. 2. Strain them & refill the pan with cold water. Allowing them to sit for at least 30 minutes in cold water, makes peeling them a breeze! 3. After you've peeled your eggs, cut them in half. 4. Empty the yoke of each egg into a bowl. I like to rinse the whites of my eggs & rest them upside down on a paper towel just so they're clean & pretty before filling. 5. Smash the yolks with a fork. Smash 'em good so they're not clumpy. 6. Add your mayo & mustard. There is no exact measurement for this because it all depends on how many eggs you're working with. You don't want it too runny, but you also don't want it too thick. I'd say a cake frosting like texture is perfect. 7. You can either use a piping bag or just cut the corner of a ziplock baggy & fill the baggy with your yolk mixture. 8. Squeeze the baggy & fill your eggs with the mixture & top each egg with a green olive (optional) & sprinkle a little crushed dried parsley on top. Chill & serve! These bad boys are a lot of fun...and they will really come in handy for hauling wood & gettin' chores done around the homestead! Living in Alaska almost requires snow machines. We also picked up some super sweet & adorable surprises for the cabin! Come take a peek... MEATLOAF DINNER RECIPE: Meatloaf: 2lbs of meat (ground beef or turkey) 1 pkg. McCormick seasoning mix 2 eggs, lightly beaten ½ cup milk ¼ cup dry bread crumbs or 1 cup soft bread crumbs (2 slices of bread) ½ cup ketchup or tomato sauce (optional) Mix all ingredients except ketchup in a large bowl until well blended. Shape meatloaf into foil-lined pan. Top with ketchup if desired. Bake in preheated 375 degree oven for 1 hour or until cooked through. Mashed potatoes: 4-5 potatoes ½ stick of butter (less if you choose) About ¼ cup milk Salt/pepper to taste Garlic pwdr Dried parsley (sprinkle for pretties if desired) Peel/slice & chop potatoes & boil them in water until you can insert a fork through them. Strain the potatoes & put them back in the pot or a bowl. Add the butter, milk & seasonings & mash/blend until smooth. My mashed potatoes are totally done by taste & texture. If you like your taters thicker, add less milk & butter. If you like them chunky instead of smooth, don’t mix for too long. Mashed potatoes are super easy, just add things until it tastes & feels the way you like them! Gravy: 2 cups beef or chicken broth (or bone stock) 3TBS flour ¼ cup water 1TBS garlic powder 2tsp onion powder 1TBS Worcestershire sauce Salt/pepper to taste Bring broth to a boil, whisk in your seasonings & worcestershire sauce. In a separate bowl, mix together flour & water. Slowly pour into your broth, whisking the whole time. Turn your heat down & continue to whisk until it’s the thickness you like. #HomeFreeAlaska #OffGrid #Alaska Two months ago, we moved our family from Virginia to Alaska. We live off the grid & mainly heat our cabin with wood. We do have a small wall propane heater that we use to keep the cabin at a steady temp & to keep it from freezing when we're away for extended periods of time. It's a lot of work, but there's nothing like wood heat. The warmth, the smell...the ambience & coziness that it provides. I wouldn't want it any other way. #HomeFreeAlaska #Christmas #GingerBread Merry Christmas to our wonderful YouTube family! We hope this holiday season is a blessing to you & yours. Sharing a delicious gingerbread cookie recipe with you + we got the opportunity to ride on the Alaska dog sleds! And then we're taking you along for a little tour of our off grid Alaska homestead in the winter. It truly is magical! Cheers... GINGERBREAD COOKIES: 3 cups all-purpose flour ¾ cup dark brown sugar, packed ¾ tsp baking soda 1 TBS ground cinnamon 1 TBS ground ginger ½ tsp ground cloves ½ tsp salt 12 TBS butter, almost room temp, diced ¾ cup molasses 2-4 TBS milk 1. Add flour, brown sugar, baking soda, cinnamon, ginger, cloves & salt to a mixing bowl & mix. 2. Add butter pieces until the mixture resembles a fine meal. 3. With a mixer running low, gradually add the molasses & milk & mix until combined, about 30 seconds to a minute. 4. Divide the dough in half, forming each into a ball. If the mix is crumbly, add another TBS of milk. Wrap each in plastic wrap & refrigerate for 2 hours or overnight. If you’re in a hurry, you can put them in the freezer for 20 minutes. 5. Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. 6. Remove one ball of dough. Roll out on a clean surface to about ½ inch thick. (Flour rolling pin if needed). Cut gingerbread cookies & place them on prepared baking sheets. 7. Bake the cookies until set, about 10-12 minutes (depending on your oven). Dough should barely retain imprint of your finger when touched. DO NOT OVER BAKE! 8. Remove cookies & place on wire rack. Allow to cool completely before decorating. 👍 Let’s Connect! Flexible utility pull sled: https://geni.us/ASJRpWj PRETZEL RECIPE: 1. ¾ cup milk 2. ¼ cup water 3. 2-1/2 TBS sugar 4. 1 pkg. active dry yeast (2-1/4 tsp) 5. 2-1/2 cups all purpose flour 6. 2 TBS softened butter 7. 1-1/4 tsp fine sea salt 8. 5 cups of water 9. 1/3 cup baking soda 10. 1 egg yolk-lightly beaten 11. 1 TBS cold water 12. Coarse salt (optional) 1. In small saucepan heat & stir milk, the ¼ cup water, and the sugar over low until warm (about 105 to 115 degrees). Pour into bowl of stand mixer fitted with dough hook. Sprinkle with yeast; let stand 5 minutes or until foamy. Add flour, butter, and the 1-1/4 tsp sea salt. Beat on low 2 to 3 minutes or until combined, scraping sides occasionally. Beat on medium low for 6-8 minutes or until soft dough forms. 2. Turn dough out onto clean surface. Knead a few times by folding & pressing dough. Turning dough to knead, uniformly shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover & let rise in a warm place until double in size (about 1 hour). 3. Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Punch down dough. Turn out onto a work surface. Divide into 8 portions. 4. Roll & stretch each portion into a 30” long rope. If the dough does not want to stretch, cover & let rest for 10-15 minutes. 5. To shape each pretzel, form each rope into a U shape & cross ends over each other, then twist once. Bring ends down to bottom of the U shape, press to seal. 6. In a deep skillet or wide pot, stir together 5 cups of water & the baking soda. Bring to a simmer. Using a slotted spoon, lower pretzels one at a time into the water (10-20 seconds). Remove pretzels & place on paper towels. Arrange pretzels 2” apart on the prepared baking sheet. 7. In a small bowl, combine egg yolk & 1 TBS cold water. Brush pretzels with egg mixture. If desired sprinkle with coarse salt. You may also add jalapenos or desired topping. Bake 11-13 minutes or until deep golden brown. Cool slightly on a wire rack, serve warm. EASY CHEESE DIP: Hand shred 3 oz. medium cheddar cheese (3/4 cup). In a small saucepan, melt 1 TBS butter over medium. Add 1 TBS all purpose flour & whisk to combine. Continue cooking & whisking 1 minute. Slowly whisk in ½ cup whole milk. Bring mixture to a simmer, whisking constantly. Simmer 1 minute or until mixture coats back of spoon. Remove from heat, whisk in cheese until smooth. Season to taste with salt/pepper. If you like a lot of dip, double the cheese recipe! 👍 Let’s Connect!
