Southern Spicy Chili
This chili is super quick & easy. You can add any beans if you like and top with your favorite toppings. We like corn chips, cheese & sour cream. Yummm!
Southern Spicy Chili
feeds about 4 - 6 adults
1 lb ground port, beef or venison
1 lb breakfast sausage
1 packet of Williams Chili Seasoning
1 can V-8
1 can diced tomatoes & green chilies
salt, pepper & sugar to taste
Brown meats & pour off grease. Add all other ingredients & simmer for an hour, if possible. Top with your favorite toppings!

Sausage Wads
My friend Lauren gave me this recipe years ago and it is still a favorite breakfast item. My son-in-law asks for it every time I'm in town. They are really fast and easy. You can make them up the night before, cover with some plastic wrap sprayed with non-stick cooking spray, and put them in the fridge. Just remove the wrap & pop them in the oven. I always forget that I can get 3 cans of crescent rolls out of them. I'll remember from now on, since I did a video on it. ha ha They store well in the fridge and you can reheat in an air fryer or microwave. Still delicious! Y'all go make you some!

Sausage Wads
1 lb breakfast sausage
8 oz cream cheese
shredded cheddar cheese
3 cans crescent rolls
Preheat oven to 375 F. Brown sausage and drain off fat. Cut up cream cheese and add to sausage. Melt until incorporated. Line cookie sheets with parchment paper or spray with non-stick cooking spray. Lay out crescent rolls and add a heaping tablespoon of sausage mixture to the widest side of the roll. Top with cheddar cheese and wad it up, making sure to seal all of the edges. Bake for 10 - 12 minutes, or until golden brown. Let sit about 5 minutes. That filling is very hot! Store in the fridge and reheat in an air fryer or the microwave.

Water Glassing Eggs
We run out of room in our fridge every Spring when our hens are laying their best. This process allows us to store our eggs on a shelf instead. They last longer, too! Eggs must be fresh & clean, but not washed! Use 1 oz pickling lime to 1 qt water. Keep in a jar or bucket with a lid. Some just add oil to the top instead of a lid, but I would definitely make a mess. It's my middle name! Keep your eggs in a cool, dry & dark place and remember to date them. When you need an egg, just take one from the bottom & wash the lime water off. These should last about a year. Go water glass you some fresh eggs, y'all!

Homemade Dog Treats
We love feeding our pups treats and food that is good for them...not full of preservatives & sugar. These treats are wholesome and our pups absolutely love them. The are cost effective, too! I can get approximately 60 dog treats from a 15 oz can of pumpkin and a small amount of peanut butter. I have to say the pumpkin treats are my favorite to make, because they are MUCH easier to roll out. :-) Keep them in a container with some of those silica packs you get in some products. It keeps them fresher. Your pups will love them! Go make them some!
Peanut Butter Treats
2 cups whole wheat flour
1/2 cup peanut butter (NO XYLITOL)
2 large eggs
1/4 cup water (approximate)
Directions:
Preheat oven to 350 F. In a mixer bowl, add flour, peanut butter & eggs. Mix until crumbly. Add 1 TBSP of water at a time until dough comes together. You don't want it too wet that it won't roll out. Roll onto a pastry mat with some flour. Roll to 1/4" thick and cut with cookie cutters. Bake for about 15 minutes. Cool completely before putting in container. Makes about 30 treats, depending on size.

1/2 tsp salt
1/2 tsp cinnamon
1/2 of a 15 oz can pumpkin
2 TBSP peanut butter (NO XYLITOL)
2 large eggs
1/4 cup water (approximate)

Preheat oven to 350 F. In a mixer bowl, add flour, salt, cinnamon, pumpkin, peanut butter & eggs. Mix until crumbly. Add 1 TBSP of water at a time until dough comes together. You don't want it too wet that it won't roll out. Roll onto a pastry mat with some flour. Roll to 1/2" thick and cut with cookie cutters. Bake for about 35 minutes. Cool completely before putting in container. Makes about 30 treats, depending on size.

Waffle Iron Grilled Cheese

Canning Crowder Peas
My Granny used to grow Crowder peas just for me. They've always been my very favorite. I hadn't had any in many, many years and was so excited when my favorite local market, Happy Heart Homestead said they were getting some. I bought a whole bushel, shelled them and we are canning half of them in this video. I will add another video later to show how I freeze the rest. Don't be intimidated by a pressure canner. You can do it! :-)

Cheater Lasagna
I love lasagna, but I hate how long it takes to make it. So, I created a quick shortcut that you can make in about 30 minutes! I hope you enjoy it!
Ingredients
1.5 lbs ground beef
1 24 oz jar spaghetti sauce
garlic salt
Italian seasoning
about 6 oz egg noodles
3 cups Mozzarella cheese
15 oz Ricotta cheese
Preheat oven to 350 F. Cook egg noodles, strain and set aside. While egg noodles are cooking, brown ground beef adding garlic salt & Italian seasoning to your taste. Add spaghetti sauce to beef after it is browned. Put noodles in a greased 9 x 13 casserole dish. cover with Ricotta cheese. Add beef mixture on top and cover with Mozzarella. Bake for 20 minutes or until cheese is melted. Serve with garlic toast.
