BEANS 2lb pinto beans 2 large onions(white or yellow) 1 ham hock, salt pork, or bacon 2 cloves garlic 1-2 tbs chilli powder(can also use dried chillies) 2 tbs paprika 2 tbs white pepper (can also use black pepper) 1 tbs cumin salt to taste CORN BREAD 1 corn meal 1/3 cup flour 2 tsp baking powder 3 tbs oil 1 tsp salt 1 tsp sugar 1 egg beaten 2 small to medium onion diced wash and sort beans place beans, pork, dices onion, and 2 smashed or minced garlic cloves in pot, cook medium high, stirring occasionally, until shell of bean starts cracking or peeling, abt an hour, then add spices, cook 30 to 40 more minutes. stir more frequently after spice is added. mix batter for cornbread until pancake consistency, fry in oil.

2 tbs butter 3 medium yellow onions 4 carrots 4 celery stalks 2 large garlic cloves 1 tsp marjoram 2 bay leaves 6 boneless skinless chicken thighs 12 oz yolkless egg noodles 1/8 cup chopped parsley (a few fingers full) **salt to taste ** chop up onions, carrots, and celery, then Sautee them in 2 tbs butter, add 2 large smashed garlic cloves after abt 5 mn, add 1 tsp marjoram, when veggies start getting soft add 2 bay leaves, and 2 quarts chicken stock, bring to a near boil then add the chicken, bring to a boil and reduce heat, after about 20mn chicken should be done, remove it (also remove the 2 bay leaves), add noodles, boil and reduce heat again, while noodles are cooking shred the chicken with a fork, and return it to the pot, add a few fingers of parsley and stir, when noodles are done the soup is done. taste the soup, if it needs salt, add salt.

my son is cooking for me due to recent injuries, and we made jambalaya with what we had, and ingredients we needed to use up. 2lb boneless skinless chicken thighs 12 oz maple chicken sausage 1 tbs onion powder 1 tbs garlic powder 1 tbs paprika 1 tsp white pepper 1/2 tsp cayenne 2 tbs canola oil 1 medium to large yellow onion 1 green bellpepper 4 celery stalks 3 crushed garlic cloves 2 cups rice 3.25 cups water 2 bullion cubes

due to a motorcycle accident, my son is caring for me, and he fixed me this wonderful lunch! it turned out awesome, with the ingredients we had available, times being what they are, we made due. 1/2 cup oil 5 large onions 2 lbs boneless skinless chicken thighs 1 tbs pepper 1 tbs salt 2 bell peppers 3 tbs sweet paprika (preferably Hungarian) 1 cup parsley leaves (we used 3/4 cups dry, due to availability, and it turned out well, but I would cut it back to 1/4 to 1/3 cups if using dry parsley from a spice bottle/can) about 6 red potatoes thank you for watching! hopefully I will be able to stand longer soon, and with no crutches, or walker, so I can get back to cooking. and of corse a special thanks to my totally awesome son Cameron, for doing literally everything but hold the camera to make this video!! as well as for everything else he is doing for me!! thank you so much for watching!!

an update on what's going on, I hit a tree on my bike, and am beginning the recovery process.

please wear all the gear you can if you ride, more would've helped me greatly, but at least a full face helmet saved my face, and possibly my life. ATGAT, all the gear all the time! I'm a faithful follower of this concept now!! too bad I can't use my left arm, or right leg for a while, and that's what it took to convince me! I spared everyone the gore, and will probably post pre accident, post accident, and after repairs pics & videos.

spent all day at the dealership...... bought a really expensive hat, so they gave me 2 bikes!
