Ingredients
1kg ripe figs , quartered
1 large orange , zested
400g granulated sugar
1 lemon , juiced, plus strips of zest, to serve (optional)
Method
STEP 1
Put the figs and 150ml water in a large heavy based saucepan. Bring to a simmer and gently bubble for 5 mins or until the figs have softened and released their juices. Add the orange zest, sugar and lemon juice. Bring to a boil and cook, stirring regularly for around 5-7 mins or until thick, skimming off any skum that rises to the surface. Remove from the heat and leave to sit for 10 mins.
STEP 2
Ladle the mixture into sterilised jars. Seal with the lids and leave to cool completely.

For the cookie:
100g Butter 454g
150g brown sugar
1 tsp vanilla essence
1 egg (M)
180g self raising flour
1 tsp baking powder
150g chocolate chopped/chips
For the Buttercream:
200g Butter 454g
200g icing sugar
1 tsp vanilla essence
DIRECTION
Preheat your oven to 180°C/160C Fan/ Gas 4
In a mixing bowl, cream the butter and brown sugar together, scraping down the bowl throughout mixing.
To this mix in he egg and vanilla essence
In a separate bowl, sieve the flour & baking powder
Add the dry to the wet ingredients and mix
Finally, add the chocolate chips and mix until combined
Divide the dough into 16 balls and place on two lined baking trays and flatten slightly with a clean hand
Place in the preheated oven and bake for 12-15 minutes
Once baked, remove and allow to cool on the tray
While the cookies are cooling, you can make the buttercream. In a bowl, beat together the Kerrygold butter, icing sugar & vanilla essence until smooth and creamy.
Once the buttercream is ready, spread on the base of 8 cookies and top with another cookie and serve.

Instructions
In a large bowl, combine all the seasonings, add chicken wings and mix by hand ensuring even coating.
Transfer the wings to a suitable size Ziploc bag. Refrigerate for at least half an hour. Marinating up to 24 hours is perfectly acceptable and will only be beneficial.
Preheat a large frying pan. Sear chicken wings on both sides over high heat for about one and a half to two minutes per side.
Reduce heat to low, cover with a lid leaving a small crack, and continue cooking for about 20 minutes until the meat is tender. Flip the wings twice or three times during cooking.

Making the cuts

Rub the skin all over with oil.
Cooking time
Cooking times will vary depending on the size of the fish. Sardines will cook in about 5 minutes, fish weighing about 500g will take 15-20 minutes and fish weighing about 1kg will take 20-30 minutes. Cook the fish on indirect heat for half the cooking time until the skin crisps. Turn it over and cook for the rest of the time or until the fish flakes easily.
Serve and garnish

Ingredients
1-1.25kg ripe tomatoes
1 medium onion
1 small carrot
1 celery stick
2 tbsp olive oil
2 tsp tomato purée
a good pinch of sugar
2 bay leaves
1.2 ltr hot vegetable stock
Method
STEP 1
First, prepare your vegetables. You need 1-1.25kg ripe tomatoes. If the tomatoes are on their vines, pull them off. The green stalky bits should come off at the same time, but if they don't, just pull or twist them off afterwards. Throw the vines and green bits away and wash the tomatoes. Now cut each tomato into quarters and slice off any hard cores (they don't soften during cooking and you'd get hard bits in the soup at the end). Peel 1 medium onion and 1 small carrot and chop them into small pieces. Chop 1 celery stick roughly the same size.
STEP 2
Spoon 2 tbsp olive oil into a large heavy-based pan and heat it over a low heat. Hold your hand over the pan until you can feel the heat rising from the oil, then tip in the onion, carrot and celery and mix them together with a wooden spoon. Still with the heat low, cook the vegetables until they're soft and faintly coloured. This should take about 10 minutes and you should stir them two or three times so they cook evenly and don’t stick to the bottom of the pan.
STEP 3
Holding the tube over the pan, squirt in about 2 tsp of tomato purée, then stir it around so it turns the vegetables red. Shoot the tomatoes in off the chopping board, sprinkle in a good pinch of sugar and grind in a little black pepper. Tear 2 bay leaves into a few pieces and throw them into the pan. Stir to mix everything together, put the lid on the pan and let the tomatoes stew over a low heat for 10 minutes until they shrink down in the pan and their juices flow nicely. From time to time, give the pan a good shake – this will keep everything well mixed.
STEP 4
Slowly pour in the 1.2 ltr of hot stock (made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes), stirring at the same time to mix it with the vegetables. Turn up the heat as high as it will go and wait until everything is bubbling, then turn the heat down to low again and put the lid back on the pan. Cook gently for 25 minutes, stirring a couple of times. At the end of cooking the tomatoes will have broken down and be very slushy-looking.
STEP 5
Remove the pan from the heat, take the lid off and stand back for a few seconds or so while the steam escapes, then fish out the pieces of bay leaf and throw them away. Ladle the soup into your blender until it’s about three-quarters full, fit the lid on tightly and turn the machine on full. Blitz until the soup’s smooth (stop the machine and lift the lid to check after about 30 seconds), then pour the puréed soup into a large bowl. Repeat with the soup that’s left in the pan.
STEP 6
Pour the puréed soup back into the pan and reheat it over a medium heat for a few minutes. Serve

Method
Cook the potatoes in a pan of boiling salted water for 5 minutes, then drain. Meanwhile, heat the oil in a frying pan and gently fry the onion and spices for 5 minutes.
Add the wine and reduce by half. Add the tomatoes and potatoes, season and simmer for 10 min.
Add the prawns and bubble for 3-4 minutes until the prawns are cooked. Stir in the coriander and serve.

Method
1. Freeze the crab for about 1 hour until immobilized. Scrub the crab clean. Pull back the apron and remove the top shell (it should come off easily and in one piece). Remove the intestines and the grey feathery gills. Twist off the legs and claws. Using a sharp, heavy knife, chop the body into 4 pieces.
2. Crack the claws with a good hit with the back of a knife. Beat the egg with the chilli, garlic, salt and pepper in a large bowl. Put the crab pieces in the mixture, cover and refrigerate for 1 hour.
3. Sift the seasoning ingredients together onto a large plate. Dip all the crab segments in the seasoning and dust off any excess.
4. Fill a heavy-based pan one third full of oil and heat to 180°C (350°F), or until a cube of bread dropped into the oil browns in 15 seconds. Carefully cook the claws in batches for 7-8 minutes, the body portions for 3-4 minutes, and the legs for 2 minutes. Drain on crumpled paper towels before serving.

Method
STEP 1
Heat 2 tbsp olive oil in a large saucepan, then gently cook 2 finely chopped onions for 5 mins, until soft but not coloured.
STEP 2
Add 1kg pumpkin or squash, cut into chunks, to the pan, then carry on cooking for 8-10 mins, stirring occasionally until it starts to soften and turn golden.
STEP 3
Pour 700ml vegetable or chicken stock into the pan and season with salt and pepper. Bring to the boil, then simmer for 10 mins until the squash is very soft.
STEP 4
Pour 150ml double cream into the pan, bring back to the boil, then purée with a hand blender. For an extra-velvety consistency you can pour the soup through a fine sieve.

Instruction
In a shallow bowl or deep plate, combine the flour, paprika, salt, and pepper and mix well.
Dip 1 or 2 fish fillets into the flour mixture. Make sure they are completely coated on all sides and gently shake off any excess. Repeat the process with the remaining fillets.
Pour oil into a skillet and heat over medium-high heat to 375 F.

Instructions
To a high-speed blender, add frozen banana, avocado, of choice, greens, and dairy-free milk.
Blend on high until creamy and smooth, scraping down sides as needed. If smoothie is too thick, add more dairy-free milk to thin. If too thin, add more frozen banana or avocado.
Taste and adjust flavor as needed, adding more banana for sweetness, avocado for creaminess, or greens for vibrant green color. Protein powder can also be used to add more sweetness (depending on brand / flavor).
Divide between serving glasses and enjoy! Best when fresh, though leftovers will keep covered in the refrigerator up to 24 hours or in the freezer up to 2 weeks.
