Bryson City, NC Trip | CLICK to See All Our Adventures | Feb. 2021 |
Greetings Food Junkie Followers,
Today is less about food and more about adventures. This is our Bryson City, NC trip that we took on Feb. 2021.
This past weekend we went off the map and went to Bryson City, NC to unplug for a bit. Day 1 consisted of driving there and we grabbed some pizza that evening in Downtown Bryson City. The video picks up on Day 2.
We had so many adventures that we crammed into just a few short days. Hopefully, I will be able to get back to some food videos in the next week or so but I wanted to take some time off. I haven't shared a family adventure on this channel in a while and one of the main reasons I put them on here is so I can personally look back on them in the future. Normally I will put them on this channel and my Williams Party of 5 so I have them in two places just in case something happens to one. These are basically my home videos that I share with my audience. So I hope you enjoy this video. If so give it a thumbs up! While we were here we visited Deep Creek area of The Great Smoky Mountain National Forest. We also checked out the road to nowhere, Cades Cove in TN, Oconoluftee Visitor Center outside Cherokee, NC, Soco Falls in Maggie Valley, NC, and Downtown Waynesville, NC. We made a trip to Nantahala Outdoor center but it was pretty much dead this time of the year.

No, this isn't all of them and only a snippet of how much fun we had, how much enjoyment you have brought into my life, and the love I share for you. Have there been sad times, of course! The happiness and good times sure outweigh the bad times though. God has truly blessed me by allowing us to meet. He has blessed our marriage as well. Before You Cook Pork Tenderloin, WATCH This! 🤤
Hello Food Junkie Followers,
The last few weeks I have been tinkering around with creating a Pork Tenderloin Recipe that I truly like. This is what I have come up with so far. This is an easy and quick pork tenderloin recipe that you can cook in the crockpot!. The best part is, it only takes an hour! A lot of recipes I have seen on the internet call for 4 hours of cook time on low. After cooking the first one for 4 hours, it was a little dry, but it was good. This time, I monitored the pork tenderloin closely and checked the temp at 45 mins, then 1 hour. I wanted an internal temp of 145-160. I was able to reach that temp in 1 hour.
Pork Tenderloin doesn't benefit by cooking long and slow like other cuts of pork, like a pork shoulder. IT doesn't have fat or that connective tissue that needs to render and break down.
The spice rub for this pork tenderloin is well balanced and the apple juice adds the needed moisture and a little sweetness to help round out the profile.

🧀 Cheesy Chicken Cheese Ball with Pecans | Appetizer | Finger Food
Greetings Food Junkie Followers,
I am sharing with you a Cheesy Chicken Cheese ball. My wife loves making these around the holidays or for get-togethers. They are so easy to make and taste so good. Sometimes she just makes them for us to snack on around the house. The Chicken Cheese ball combines cream cheese, canned chicken, celery, and A1 sauce to get that rich, creamy, and Umami notes that we all love and like! The Creamy Chicken Cheese Ball makes a great Super Bowl dish to take. Or bring it to a Memorial Day or summer get together. We make them for our New Years' Eve parties as well. It is very versatile.
Recipe:
1 Can of Chicken
2 Packs of Cream Cheese
1 Rib of celery
1 tablespoon of A-1 ( I would buy the name brand as the knock-off sometimes have a sweeter taste which can alter how this dish turns out).
2 cups of Pecans
Directions:
Put Cream cheese in a bowl and begin to work it with your hands. (If you have a kitchen aid stand mixer, this would work perfectly for this. You may have to use the dough hook).
Drain chicken then add it to the bowl. Mix together.
Cut celery up into tiny pieces and add to the bowl. Add in A-1 Sauce. Mix together and form into a ball. Finely chop up the pecans and pour them onto a piece of parchment or wax paper. Spread them out in an even layer. Roll your chicken Cheese ball into the pecan mixture. Once it is nicely coated, wrap it up in a new piece of parchment or wax paper. Then wrap that up in aluminum foil. Once it has chilled, you are ready to enjoy it.

📌 Creamy Crockpot Mac and Cheese 🧀
Today we are sharing with you a favorite dish no matter what the season is or the get-together, Creamy Crockpot Mac and Cheese. No matter when this dish shows up, it is always a crowd-pleaser. My mom has been making this crockpot mac and cheese for years and I believe she got this recipe out of a church cookbook. If you ever come across a church cookbook, at a yard sale or Goodwill or wherever you should buy it. It has lots of family recipes that were passed down. Anyway, this crockpot mac and cheese is very simple and easy to make. You should try it!
Ingredients:
8 oz Elbow Macaroni noodles
3 cups of Sharp Cheddar cheese
1 can of Evaporated milk
1 1/2 cups of whole milk
1 tsp of salt
1 tsp pepper
1 tsp of sugar
1/4 cups of melted butter
Directions:
After you have cooked the noodles and drained them, pour them into a greased crockpot. Stir in melted butter. Stir in salt, pepper, and sugar. Stir in Evaporated milk and whole milk. Add in 2 cups of the cheese and stir. Place the remaining cheese on top. Cook for 3 1/2 hours on low.

🐟 The BEST Salmon Stew Recipe with Potatoes | Salmon Stew Made with Tomato Soup
You want to know what is good to eat on a cold and dreary day? Salmon Stew is the answer. Today I am sharing with you a Salmon Stew recipe with potatoes in it. This fish stew recipe is so yummy and rich. I use tomato soup to help cut some of the richness and it is just perfect. This is sure to warm you up on a cold rainy day! This is a dish that I few up eating although my dad made it a little different than I did.
Salmon Stew combines canned salmon, Potatoes, onions, tomato soup, and whole milk to make a creamy and hearty dish. We use just the right amount of seasonings to compliment the fish broth that is in this fish stew. Give this a try and see for yourself if it isn't the best!

Recipe:
1 can of salmon
1 can of Campbells Tomato Soup
5-6 potatoes
Half stick of butter
1 onion
4 cups of whole milk
1 tablespoon of salt
1 teaspoon of black pepper
1 tablespoon of Italian Seasoning
Directions:
Cut up potatoes and add to a pot that is half full of water. Dice onion and add to the pot. Add in Seasonings and boil on medium-high heat for about 20 mins until potatoes are about halfway done. Add in juice and meat from the canned salmon, canned soup, butter, and milk. Let simmer until potatoes are done.

You can make these year-round with regular Hersey Kisses Milk Chocolates and regular m&m but at Christmas time we like to use the Hersey Hugs and the Christmas colored M&M's. To me, the Christmas Pretzel M&M Hugs are the best ones to make though. I like the white chocolate in the Hersey hugs and you still have the milk chocolate in the M&M's.

🍚 Hoppin' John Recipe | Carolina Peas and Rice | A New Years Day Dish
Greetings Fellow Food Junkie Followers,
Today I am sharing with you another recipe that goes along with New Years Day Lucky Meal, Hoppin' John. Hoppin' John is a recipe that originated in the Gullah community in the low country of South Carolina. It combines peas (usually black-eyed peas), rice, and some type of pork. The seasonings can vary depending on what you like. In this recipe, we used Onions, bell pepper, garlic, bacon, salt, and Pepper. Some like to add in a little tomato paste for color and taste. You could also add in thyme and a bay leave. I hope you enjoy my version of Hoppin' John and will give it a try.

Southern Style Turnip Greens with Turnips | New Years Day "Lucky Meal" Dish.
Hello, Fellow Food Junkies,
Today I am sharing with you how I make Turnip greens with Turnips. You can make this dish with any type of greens. I typically use this for Collard Greens but it will work with any greens really. In this recipe, I am using collards and Turnip greens with turnips added in. This recipe is simple and easy to follow so I hope you will try it.
Now if you are not aware, most southern eat a traditional New Years Day Meal called a Lucky Meal. There are several things that go along with this. The traditional New Years' day dish would have Collard greens, Black eye peas, Corn Bread, and some type of pork whether that is ham, bacon, bbq, etc. There are variations to this as a traditional dish as in South Carolina there is a dish called Hoppn' John which is rice, black-eyed peas, collard greens, and bacon that is served. There are variations to that as well lol. Anyways, the black-eyed peas symbolize wealth or coins, Collard greens are for money or good fortune, pork is a sign of luck or prosperity, and cornbread represents Gold.

Today I am sharing a southern style dressing recipe with yall. I love holidays and I love food around the holidays. The dressing is one of those things that we have to have for Thanksgiving. A few years ago a blogger friend of mine Julia's Simply Southern shared this recipe with me to put on my blog. Over the years it has done very well for me. Southern Style 🧈 🥛 Buttermilk Cornbread | New Years Day "Lucky Meal" Dish
Hello, fellow food junkie followers,
Today we are headed into Thanksgiving very soon. What that means is all that yummy food that you are so accustomed to having. Around our house we like to make cornbread for a lot of meals, it is served with soups, chili, beans, and just a good ole southern meal. But this week I am making this Southern Style Cornbread so I can make Dressing. You have to have the Buttermilk cornbread in order to make the dressing. So as we get closer to Thanksgiving, I will have a video on how to make southern style dressing as well. Keep an eye out for it.
