Blue Diamond Cookware-Is It Legit?
Today we are sharing some cookware that a friend told me about, Blue Diamond Cookware. This is the As Seen On Tv pans that you have heard about. You know the list, Gotham Steel, Red Copper, Green Diamon, Blue Diamond, the list goes on. But what I want to know is, is this stuff legit? I think the blue diamond is a much-improved version of the red copper pans. It says it is safer for you than the older Teflon pans we used to buy.
My buddy (Jerome Bee Farm)mentioned he got one and loved it so much he bought the whole set. So let's go over the pros and cons I see with it, we will also do a cook in it and I will give you my thoughts on it. We will come back in a few months, and see how well the blue diamond cookware held up.
***Note: This pan is made from Aluminum and will not activate an induction cooktop***

Remember these rusty grill grates? This is an Update video on if I still like the new ones. About 7 months ago I decided to finally swap out these old rusty-crusty cast iron grill grates. The old ones didn't last as long as I had hoped. Originally I wanted the cast iron ones but given the heat, humidity in the South, and me not oiling them as often as needed, they started to flake. This was getting all in my food, yuck! I found these stainless steel grill grates on Amazon for a good Price: https://amzn.to/3nz2XKf. These were much cheaper than buying replacement ones and much cheaper than Broil Kings Stainless steel replacement ones. My only concern was will hold up and are these of good quality? How To Make Homemade Sourdough Bread
Greetings Food Junkie Followers,
Today I am showing how to make homemade sourdough bread. My mom used to make this all the time when I was a kid and actually used to sell it to get money for Christmas for us. Anyways, mom wanted to start back making it and I did too. She made the starter first, which I am going to link below to the recipe we used for the starter. If you would like to see a video on the starter, leave me a comment below and I will make a video for that too. Anyways, sourdough bread is better for you than traditional white bread and it tastes so much better! The bread will last about 4 days before it starts getting stale (if it makes it that long). If it gets stale on me, I like to slice it up and make french toast out of it. It will be some of the Sourdough French toast you have ever had before. Stay tuned, maybe I will make a video on that too!

Sourdough Starter Recipe from https://thesouthernladycooks.com/sourdough-bread-anyone/
3 tablespoons instant mashed potato flakes
3 tablespoons white sugar
1 cup warm water
2 1/4 teaspoons active dry yeast or one package
Combine all ingredients in a glass container, stir with a wooden spoon. Cover with clean dishcloth or cheesecloth and let sit for 5 days, stirring daily with a wooden spoon. Do not refrigerate.
On the morning of the 5th day, feed the starter 3 tablespoons of instant potatoes, 3 tablespoons of sugar, and 1 cup of warm water. Stir and cover and let stand until evening or at least 6 hours.
Remove one cup of starter and place the rest of the starter in the refrigerator. Make sure there are holes in the top of the container. The starter needs to be able to breathe.
Every 5 days repeat feeding instructions and remove 1 cup and discard or make bread.
Sourdough Bread Recipe from The Southern Lady Cooks:
1 cup sourdough starter
1 1/2 cups warm water
1 1/2 teaspoons salt
1/2 cup white sugar
1/2 cup corn oil (can use vegetable or canola)
6 cups all-purpose flour
Mix sugar, oil, salt, water, and starter in a large bowl. Add flour. Turn out onto floured surface and knead several times until forms a ball adding flour if needed. Place the dough into a large, oiled bowl, turn once so that dough will be greased, cover with clean dish towel and let rise overnight.
The next day, punch the dough down, turn out onto floured surface, knead for several minutes, divide in half, place in 2 greased bread pans. Cover and let double in size. Bake at 350 degrees for 40 to 45 minutes or until golden brown. Turn out to cool.
This bread makes your kitchen smell great while cooking and makes two great loaves of fresh bread for your family.

Roasted Summer Squash with BACON!
Every once in a while I have an idea that is just pure genius. Well, this is one of those times. A few weeks back I started thinking about how good it would be to drizzle hot bacon grease over a mixture of summer squash. Well after thinking on it a while and mulling over different herbs to pair it with, this is what I came up with, Roasted Summer Squash with Bacon!I cooked it earlier in the week and it was so delicious. Everyone that tried it loved it so far. I am hoping that you will too. Let us know in the comments below if you tried it and liked it.
Recipe:
You can start with any combination of summer squash that you may like. I did Zucchini, White Patty Pan, and Yellow Crookneck.
1 bell Pepper
1 small onion
1/2 cup of fresh chopped Basil
1 tablespoon of fresh chopped thyme
3 cloves of Garlic = You can mince it or use a press as I did
2 strips of bacon cooked and chopped up
1/2 cup of Bacon Grease = You can substitute Olive oil but the Bacon Grease is really the star of the show.
Salt to taste
Pepper to taste
Directions:
Start by putting your bacon grease in a bowl. Next chop up the Basil and Thyme. Add to the bacon grease. Mine or use a garlic press and add the garlic to the bowl. Mix well and set to the side.
Next, chop up your squash in 1/2 in size pieces. Chop up bell pepper and onion. Add all veggies to a big bowl. Pour the Bacon herb mixture over veggies and toss in the bowl. Add Salt and Pepper, Toss in the bowl. Pour out onto a big sheet pan. Heat oven to 425 and cook for 20 minutes until veggies are tender and have some color. Next, put veggies in a bowl and put chopped bacon over top.

Old-Fashioned Homestyle Pancakes Made From Scratch!
Happy Day to you Food Junkie Followers,
Today is the day that the Lord made and I am glad we can rejoice in it. Today I am sharing with you some good old-fashioned homestyle pancakes made from scratch. These are the pancakes that I make about 98% of the time. A few years ago I shared how to make pancakes from Bisquick baking mix. You can see that video here: https://youtu.be/X6uc1gor-sA. I decided that I need to share the recipe that I use for homemade from scratch pancakes. These are so good. I like them to get a nice crust on the outside and soft and fluffy on the inside.
Recipe:
1 1/2 cups of self-rising flour
1 1/4 cups of whole milk or Buttermilk
1 tablespoon of sugar
3 tablespoons of melted butter
1 egg
Directions:
You will need a bowl or a pitcher like I use in my video. The pitcher makes it easy to pour the batter without making a mess. I highly recommend it. Start by mixing in wet ingredients first. Milk, butter, egg- mix/beat that good with a whisk. Then add in the sugar and mix that well. After that, slowly add in your flour while you whisk that in. It is ok if there are some lumps. The lumps will create air pockets in the pancakes and make it nice and fluffy. Check the video for the consistency that you need. Not too thick because the pancake batter will not spread out, and not too thin as it will spread out too much and be thin. You want it to be thin enough to pour out. Grab your pan or griddle and get it pre-heating. I like to add butter to the pan or griddle, this gives a nice rich flavor and a nice crusty outside to the pancakes. Pour batter in a circular motion. Let sit until a good many bubbles start forming. Flip over and let sit a min or two more. Now you are ready to enjoy.
