Timpano, also known as Timballo, is perhaps the most impressive, elusive pasta dish there is. A timpano is essentially a giant, drum-shaped (as in timpani drums!) pie crust filled with all of the most amazing Italian ingredients you can imagine: everything from pasta and cheese to meatballs and sausage.
A proper timpano takes almost an entire day to make, so it's not for the feint of heart. We decided to try and tackle this challenging dish to see what it takes to pull off the perfect timballo.

ITALIAN BRIOCHE RECIPE
Makes about 6 buns.
While we hate to release recipes that require unusual equipment, we strongly recommend attempting this recipe with a stand mixer, such as this one: https://amzn.to/2FtW7Su . It is possible to make the dough by hand, but it would require hours of kneading!
For this recipe, you will need:
- 2 1/3 cups bread flour
- 1 cup all-purpose flour
- 1/3 cup sugar
- 2/3 cup whole milk, plus a little extra for glazing
- 4 eggs
- 3.5g yeast (half of a 1/4oz. packet)
- 1 tbsp lemon zest
- 1 tbsp orange zest
- 1 tbsp honey
- 4 1/2 tbsp lard or butter
- 1/2 tsp salt
- 1 tbsp olive oil
Combine the flour, sugar, milk, 3 eggs, yeast, citrus zest and honey in the bowl of a stand mixer. With a dough hook attachment, stir all together (low speed) until well-mixed, about 3-4 minutes. Increase the mixing speed to high and knead vigorously for about 15 minutes. During this time, the dough should form into a unified ball. You may need to stop and scrape the sides of the bowl with a spatula occasionally.
After 15 minutes, add the salt and gradually incorporate the lard as the dough continues to knead. Do this one small spoonful at a time, allowing each to fully mix in before adding the next. Continue high speed kneading for 5 minutes. Test the dough by pulling a pinch of it. It should be very stretchy and elastic, with a smooth texture. Knead longer if necessary until the consistency is correct.
Lightly coat a large mixing bowl with olive oil and transfer the dough into it. Cover with plastic wrap and allow to rise. The time this takes depends on the temperature. If it's cold, it could take up to three hours while on a hot day it could take as little as an hour. When the volume of the dough has roughly doubled, it's ready!
Begin cutting pieces of the dough to form the buns. You will need 6 balls about 3-4 inches in diameter and 6 smaller balls about 1-1 1/2 inches. We recommend weighing the pieces to achieve uniform results, in which case the larger balls should weigh about 80g each while the smaller should weigh 15.
Roll each ball until it is smooth and even and arrange them all on a baking sheet. Cover with a kitchen towel and allow to rise further (30 minutes to 1 hour, again depending on the temperature). The balls should grow slightly, though they won't double as before.
Preheat your oven to 375 degrees F. While the oven heats, use your fingers pinched together to press large depressions into each of the larger buns. Please the smaller balls into these holes. Whisk 1 egg and 1-2oz. of milk together and brush this mixture over the entire surface of the buns.
Bake for 25-30 minutes, or until the surface of the brioches develop a golden crust. Remove from the oven and allow to cool. Slice in half and add your favorite ice cream or gelato.

EVA'S FETTUCCINE AL ALFREDO RECIPE
Serves two. Because this recipe is so simple and highlights the Parmigiano, we strongly recommend looking for the highest quality cheese you can find!
For this recipe, you will need:
- 2 1/2 cups (300g) all-purpose flour, plus a little extra for dusting
- 3 eggs
- Salt
- 6 tbsp unsalted butter
- 1 cup grated Parmigiano Reggiano cheese
On a large work surface, pour the flour into a mound and use your fingers to hollow out the center so that it resembles a volcano. Crack the eggs into the hollow. Using a fork, begin whisking the eggs and gradually scoop the sides of the flour so that it mixes in. When most of the flour has been combined with the eggs and the dough has thickened, gather all together and knead it by hand until very smooth and even. Add flour as necessary if it's too sticky.
For this recipe we chose to use a pasta rolling machine (like this one: https://amzn.to/3glsQa9) because a thinner fettuccine is preferable (we used setting #7). However, you can still roll it by hand in the following manner:
Cut the pasta dough into manageable portions (about the size of a fist) and roll out until it is very thin. Lightly dust the sheet of dough with flour before rolling it up in 1-inch folds. Then slice the roll into even, 1/4-inch pieces. Gently toss the pasta to unroll the strands, then spread on a tray or plate for cooking later. Be sure to dust the finished pasta with more flour so the strands don’t stick together.
Bring a large pot of water to boil and salt it generously. As they say in Italy, the water should taste like the sea! Two small palmfuls is a good starting place. Meanwhile, prepare the grated Parmigiano. Cut the butter into small chunks and spread over a large platter.
Drop the pasta into the water and cook for 1 minute, maximum. It doesn’t take long for fresh pasta to reach al dente perfection! If you rolled a thicker pasta by hand you may need up to a minute longer.
Using tongs, pull the pasta out and onto the butter platter. Sprinkle the Parmigiano on top and toss all together using two forks. Slide the pasta back and forth, occasionally lifting it up and turning it over, until the butter and cheese has completely melted. Serve immediately.

However, she's convinced that only an Italian's cooking skill can make the most of our most prized delicacy: lobster. To settle the issue of seafood supremacy, we conducted a little Italian versus American cook-off challenge to see who could make the best lobster dish!

SCIALATIELLI CON ARAGOSTA RECIPE
Serves Four
The Pasta:
By hand, mix 3 1/3 cups of all-purpose flour with 1 egg, 1/2 cup of grated parmigiano cheese, 1 cup of whole milk, and approx. 10 chopped basil leaves. Knead the dough thoroughly, until it is completely smooth and even. Add more flour as necessary if the dough is too sticky to work by hand. Wrap in cling film and refrigerate for at least 30 minutes.
Roll out the dough until it is about 1/8-inch thick. You may want to cut the ball of dough in half so you can do this in manageable portions. Lightly dust the flattened dough with flour, then roll it up by making 1-inch folds. Cut the roll in 1/4-inch strips and toss to open up the pasta strands.
The Sauce:
In a large pan over medium-high heat, sauté half an onion (diced) with one crushed clove of garlic in 4 tbsp of olive oil. After about three minutes, remove the garlic and add the separated head, claws and tail of an uncooked lobster. Cook for 8-10 minutes, then add 1 cup of good white wine. Simmer for 4-5 minutes to allow the alcohol to evaporate.
Remove the lobster tail and claws from the pan, then add 2 cups of halved grape tomatoes into the sauce. While the tomatoes cook, remove the tail and claw meat from their shells and chop into 1/2-inch pieces. Add the lobster meat back into the sauce, salt and pepper to taste, and simmer while boiling the pasta. Add small amounts of water into the sauce if too much moisture evaporates.
Putting it All Together:
Bring a large pot of water to boil and add a generous handful of salt. Drop in the fresh pasta and boil for 3 minutes. Using tongs, add the pasta into the sauce pan and stir well. Serve immediately with a quick drizzle of olive oil and a few fresh basil leaves on top.

EVA'S PASTA AI QUATTRO FORMAGGI RECIPE
Serves two.
For this recipe, you will need:
- 350g (12oz) penne pasta
- 1/4 cup gorgonzola or blue cheese, chopped into small chunks
- 1/4 cup fontina or sharp cheddar cheese, chopped into small chunks
- 1/4 cup brie cheese, chopped into small chunks
- Grated Parmigiano Reggiano cheese
- 1 cup whole milk
- 2 tbsp butter
- Nutmeg
- Fresh black pepper
- Salt
Bring a large pot of water to boil for the pasta.
Meanwhile, melt the butter in a pan over low heat. Add milk, gorgonzola, fontina, brie, a pinch of grated nutmeg, and black pepper to taste. Stir while the cheese melts.
Generously salt the boiling water and add pasta. While the pasta cooks, allow the melted cheese to simmer for three minutes before turning off the heat. When the pasta is cooked al dente, drain it and add into the sauce. Top generously with grated Parmigiano and stir all together vigorously over medium/high heat. Serve immediately.

Did you know that Italians never eat spaghetti and meatballs? And that they have a complex system of rules governing which sauces go with which kind of pasta? I sure didn’t!
After I make the unforgivable sin of serving my Italian wife, Eva, a plate of spaghetti and meatballs, she gives me (and the viewers at home!) a crash course in the Rules of Authentic Italian Pasta.

FETTUCINE AND MEATBALL RECIPE
(Serves Four)
The Pasta:
Make a hollowed mound using 3 3/4 cups of all-purpose flour. Crack five eggs into the hollow. Using a fork, begin whisking the eggs and gradually mix the flour in. When the dough thickens, knead it by hand until very smooth and even. Add flour as necessary if it's too sticky.
Cut the pasta dough into manageable portions (about the size of a fist) and roll out until it is very thin, no thicker than 1/16th of an inch. Lightly dust the pasta before rolling it up in 1-inch folds. Slice the roll into even, 1/4-inch pieces. Gently toss the pasta to unroll the strands, then place on a tray or plate for cooking later.
The Meatballs:
Using your hands, mix 1/2 lb lean ground beef and 1/2 lb ground pork with two eggs, 3 1/2 oz. of grated parmigiano cheese, 1.5 oz. pecorino cheese (optional), one clove of minced garlic, and a generous dash of salt and pepper to taste. Add bread crumbs until the mixture is firm enough to roll into solid balls (approximately 4 cups but this will vary depending on bread type). Roll the meat into 1 1/2-inch meatballs.
The Sauce:
In a small saucepan, add a bottle (about 24 oz.) of tomato puree, 2 tbsp. olive oil, and one whole clove of garlic. Mix in 12 oz. of water and a pinch of salt. Cook over medium heat, partially covered, for 10-15 minutes. Add meatballs and continue to cook over low heat for an hour. Add salt as needed to taste.
Putting It All Together:
Bring a large pot of water to boil. Salt generously, then add pasta and cook for three minutes. Drain pasta and place back in the pot. Ladle 3-4 scoops of tomato sauce from the meatballs over the pasta, and stir in for one minute.
Serve pasta on a plate, ladle meatballs and extra sauce on top, and grate fresh parmigiano cheese over all.

My Italian wife, Eva, LOVES American desserts. That being said, she does miss some sweets from her homeland, such as sweet ravioli, rotolo alla nutella, and cannoli. Luckily, we have versions (sort of) of ALL those treats right here in America!
In this video, Eva tries American dessert snacks for the first time. She tastes Hostess Twinkies, Little Debbie Swiss Rolls, and Drake's Apple Fruit Pies. Leave a comment below if there are any other American sweets she should sample next time!

CANNOLI RECIPE
Using a spatula, sift 20 oz. of ricotta cheese through a kitchen strainer. Mix in 2 1/2 cups of powdered sugar. Place the cheese back in the strainer, and allow to drain over a pot in the fridge overnight.
Mix 1 1/2 cups all-purpose flour, 2 tbsp. sugar, 1 1/2 tbsp. butter, 2 tbsp. marsala wine, and 2 tsp. of cocoa powder into a smooth, even dough. Roll out the dough and cut into 4x4" squares, approximately 1/8" thick. Wrap squares diagonally on cannoli shell molds, using dabs of egg whites to stick the corners together.

Deep fry the shells in very hot oil (we recommend peanut oil) until they start to become bubbly. Remove from oil and allow to cool before removing the molds.
Mix chocolate chips to taste into the ricotta and fill the shells using a spoon. Sprinkle with powdered sugar and serve as soon as possible.
