How to Make 'NDUJA at Home | Homemade Calabrian Spicy Spreadable Sausage
If you saw our previous video (https://youtu.be/VS2x1fHwEkg) then you met the King of Calabrian food: 'NDUJA. 'Nduja is a spicy pork sausage that is soft enough to be spread like butter. It's great on toast, pasta, pizza—heck, it's great on almost ANYTHING—and it's currently trending in culinary circles as "the next big thing."
The only problem is how to get it. The US can't import it directly from Italy and only a handful of companies produce it domestically (and often with stomach-churning results). So today we're welcoming a special Calabrian guest to show us how he makes his own, homemade' nduja!

NAMED BY MAJORITY - “EVATTONE” RECIPE
Combine 2 eggs with 1/2 cup (100g) sugar. Beat until white and creamy. Add the juice and zest of 2 oranges. Mix thoroughly. Cook in a bain-marie (a metal bowl dipped into the top of a boiling water pot) while whisking constantly for 7-10 minutes or until it thickens slightly. Add 3 1/2 tbsp (50g) unsalted butter and continue cooking/whisking for about 20 minutes, or until it thickens into a curd. Allow to cool.
Combine 5 egg yolks with 2/3 cup (120g) sugar. Beat until white and creamy. Add 2 tbsp (16g) all-purpose flour. Mix thoroughly. Gradually add 2 1/8 cup (500ml) whole milk while whisking. Transfer into a small saucepan and cook over low temperature while constantly whisking, until the mixture thickens. Remove from the heat and add 1 bar (100g) 70% baking cocoa, broken into small pieces. Continue whisking until the chocolate has melted completely.
Cut leftover panettone into 1-inch thick slices. Line the sides of a round baking dish (we used one about 9-inches in diameter and 4-inches tall) with slices before adding a layer to the bottom. Dab the panettone with a 1:4 mixture of rum to water.
Spread a layer of chocolate custard over the bottom slices. Cover with another layer of panettone, dab with rum, then add a layer of orange curd followed by more panettone/rum. Repeat layers until the dish is filled to the brim. End with a final layer of panettone slices dabbed with rum.
Refrigerate overnight. Flip onto a platter and top with cocoa powder and crushed almonds. Buon appetito!

SQUASH - "ZUCCA IN SAOR" RECIPE
Bring 2 tbsp olive oil up to medium heat in a skillet. Add 2 1/2 large red onions, sliced. Sautée until tender, about 7-8 minutes. Add 1/2 cup of white wine, 2 tbsp balsamic vinegar, 1 tsp brown sugar, 1/4 cup raisins, 2 tbsp pine nuts, and salt/pepper to taste. Cover and allow to cook for 20-25 minutes. Check occasionally and add a splash of warm water as needed if the onions dry out and risk burning.
Scoop, peel and slice half of a butternut squash into 1/2-inch strips. Lightly oil a non-stick pan and bring up to high heat. Working in batches if necessary, sear the squash strips until they begin to blacken slightly. Cover pan as they cook and slat/pepper lightly. Flip and repeat to sear the other side.
Arrange squash on a platter and top with onions. Allow to cool, preferably overnight, before serving.
CHICKEN - "POLLO ALLA CACCIATORA A MODO MIO" RECIPE
Bring 3-4 tbsp olive oil and 1 crushed clove of garlic up to medium/high heat in a sautée pan. Add diced 1/2 onion, diced 1/2 large carrot and diced 1/2 stalk celery. Sautée for 3-4 minutes. Add a sprig of fresh rosemary and a sprinkle of crushed red pepper flakes to taste. Add 4-5 chicken drumsticks and cook, stirring frequently, for about 5 minutes or until the chicken skin is slightly browned.
Add 1/2 cup of white wine. Allow the wine to reduce briefly, until the smell of alcohol has evaporated. Salt/pepper to taste, and add 1 cup halved grape tomatoes, 1/4 cup sliced kalamata olives, and 1 tbsp capers. Mix 1 tbsp tomato paste into 1/2 cup of water and add into the pan. Lower the heat to bring it to a gentle simmer, cover and allow to cook for 30-35 minutes, or until the chicken is very tender. Add a splash of warm water when necessary if the moisture evaporates.
Serve with a sprinkling of chopped, fresh parsley on top.
LOBSTER - "ASTICE ALLA CATALANA RECIPE"
Steam a large lobster for 15 minutes. While it cooks, slice 1 large red onion and mix with 8-10 oz. (about 1 cup) of halved grape tomatoes. When the lobster has finished cooking and is cool enough to handle, break it down and remove the tail, claw and knuckle meat. Chop and spread over the onions/tomatoes.
Open the lobster’s body cavity and scoop out the “tamale” (green stuff). Mix with 1 tbsp olive oil, 1 tsp soy sauce, the juice of half a lemon, and 1/2 tsp dijon mustard. Drizzle over the salad, along with some extra olive oil. Salt and pepper to taste.
CREAM CHEESE - "PASTA CON PHILADELPHIA" RECIPE
Bring a large pot of water to boil and salt liberally. Add 5 1/2 oz. (160g) dry pasta—we recommend linguine, spaghetti, rigatoni, fusilli or penne—and cook until al dente. Meanwhile, in a large bowl, mix 8-10 oz. (about 1 cup) of halved grape tomatoes with 1/2 cup cream cheese, 1-2 oz. of the pasta water, a pinch of dried oregano, a generous grating of Parmigiano cheese, and salt/pepper to taste.
When the pasta has finished cooking, strain it and add into the sauce. Stir all together and serve immediately.

Because that was the fateful day when Christopher Columbus landed on the shores of the Americas and European culture was exposed to a whole new world (no pun intended) of ingredients.
Who could imagine Italian food without tomatoes? Or how about peppers and potatoes? These are all New World vegetables that changed Italian cuisine forever.
While Christopher Columbus is a highly controversial figure these days, we decided to celebrate the contribution of the Americas to Italian cuisine with three dishes that did not, and could not, exist before his fateful voyage.

How to Shop Like an Italian | Shopping Tips for Authentic Italian Cooking
Authentic Italian food is based upon simplicity, but simplicity can produce challenges of its own. When a dish relies on just a few elements, the quality of those ingredients becomes paramount!
In order to help aspiring Italian food gourmands, Eva is here today to share some tips and tricks for how to shop like an Italian: from selecting the right pasta to identifying a promising bottle of wine!

EVA'S "PASTA ALLA MONTOVANA CON RICOTTA" RECIPE
For this recipe, you will need:
- Penne, penne lisce, rigatoni or fusilli pasta (to serve)
- 2 cups cubed butternut squash
- 1/2 onion, diced
- 1 cup ricotta cheese
- Parmigiano-Reggiano cheese
- Olive oil
- Nutmeg
- Amaretti cookies (optional): https://amzn.to/3leJEBQ
- Salt
- Fresh black pepper
In a saucepan, bring 3-4 tbsp olive oil up to medium temp. Add the diced onion and sautèe for about 3 minutes, until the onion becomes slightly transparent and tender. Add the cubed squash and a splash of warm water. Salt and pepper to taste, then partially cover and cook for approximately 10-15 minutes, or until the squash has softened. If necessary, add more water as it cooks if the moisture has completely evaporated before the squash is ready. Turn off the heat.
Bring a large pot of water to boil. Salt liberally (two small handfuls is a good start) and add pasta. Cook according to directions provided.
Meanwhile, on a large plate or platter, combine ricotta cheese with a generous grating of Parmigiano cheese and a sprinkle of ground nutmeg. When the pasta is nearly done, add about 1 oz. of the pasta water into the ricotta mixture and stir all together.
Using a slotted spoon, ladle the cooked pasta into the squash saucepan and stir for a minute over medium heat. Transfer the pasta onto the ricotta platter and stir all together. Top with some crumbled Amaretti cookies (optional).

SPAGHETTI ALLO SCARPARIELLO RECIPE
Bring a large pot of water to boil. Salt liberally and add spaghetti to serve. Stir occassionally.
In a saucepan over medium heat, add one clove crushed garlic and 2-3 tbsp olive oil. When the pan comes up to temp, add 1 pint (350g) halved grape tomatoes. Sautèe for 1-2 minutes, stirring frequently, then cover and allow to cook for a few minutes more. When the tomatoes have almost turned into a pulp, turn off the heat and add some fresh basil and grated Parmiggiano-Reggiano cheese (optional). Remove the garlic clove.
The pasta should be drained 1 minute before "al dente." For example, if an 11-minute cook time is recommended, drain the pasta after 10 minutes. Before draining, reserve about 1oz. of the pasta water for later.
Add the drained spaghetti into the tomatoes, along with the reserved pasta water, and stir vigorously over medium/high heat until the sauce thickens slightly and becomes creamy. Serve immediately.

PIZZA CON LE PATATE (POTATO PIZZA!) RECIPE

Preheat an oven to 450 degrees.
Layer the prepared pizza dough with overlapping, sliced potatoes. Drizzle the surface with olive oil and sprinkle with fresh rosemary, salt and pepper. Bake for 20-25 minutes, until the bottom of the crust is a golden brown.

PINEAPPLE DESSERT PIZZA RECIPE

Preheat an oven to 450 degrees.
In a small saucepan, mix 2 cups strawberries and 1 cup sugar over medium heat. Allow to cook until the strawberries have completely macerated. Use a spatula to press and strain the juices of this mixture into a bowl.
Spread the strawberry coulis juice over the pizza dough and top with sliced nectarine. Bake for 20-25 minutes, until the bottom of the crust is a golden brown. Remove from the oven and allow to cool.
Mix 1/2 cup of ricotta cheese with sugar to taste. Top the pizza with dollops of the cheese, plus blackberries, halved grapes and sliced pineapple. Finish it off with a dusting of powdered sugar and a pinch of cinnamon.
