How to make traditional, Southern Pecan Pie from scratch (pecans, sugar, Karo syrup, eggs & butter)
I had planned to post this Pecan Pie recipe before Thanksgiving, but it just didn't happen! No matter... This pie is perfect for Thanksgiving or Christmas or anytime of year!
This particular pecan pie recipe is super easy and only has five ingredients (apart from the pie crust). If you're going to bake this in a glass dish like me, set the oven to 375º and just keep an eye on it until the pie is solid. If you're baking it in a metal pan, bake it at 350º.
INGREDIENTS
•1 cup chopped pecans
• 3 eggs
• 3/4 cup sugar
• 3/4 cup dark corn syrup
•1/2 cup butter*
(If you want, you can cut this back to 1/3 cup, but I like to use 1/2 cup of butter. Also, I'm using salted butter. If you are using unsalted butter, you'll want to add a dash of salt to your recipe.)
INSTRUCTIONS
Combine all ingredients and bake at 350º for about 45-50 minutes or until pie is set. (If using a glass dish, set the temperature to 375º.)
Here is an Amazon associate link to the chopper I'm using in this video: https://amzn.to/3qKtKTl
I use the same one for chopping collards, fruit for jam, all kinds of things.

PREPPER PANTRY - How to Make Slow Cooker Apple Butter - A Cozy Taste of Autumn! #canning
This is an old-fashioned slow cooker recipe for delicious apple butter – a cozy taste of autumn! This recipe makes seven half-pint (8 oz.) jelly jars of apple butter.
Here is a link to the steam canner in the video: https://amzn.to/3lS8Xd2
(Amazon affiliate link)
INGREDIENTS:
* 6 lbs of apples, cored and sliced (I used Fuji. The smaller the pieces you start with, the quicker they will cook!)
* 2 cups white sugar (You can use all white sugar if you prefer, but I don't think I would use all brown sugar.)
* 2 cups brown sugar
* 1 Tbsp. cinnamon
* 1 tsp. nutmeg
* 1/2 tsp. ground cloves
* 1/2 tsp. salt
* ~ 1/8 tsp. allspice

How to Make Crockpot Mac & Cheese - Southern Country Vegetable Plate - CROCKTOBER #southernrecipes
I've been seeing CROCKTOBER around on YouTube for the month of October so I thought I would roll in my slow cooker Mac & Cheese recipe with the country vegetable plate I had already planned to cover in this video.
On the menu:
Crock Pot Mac & Cheese
Baked Corn Pudding
Sweet Potatoes
Sautéed String Beans
CROCKPOT MAC & CHEESE - INGREDIENTS
1 lb. elbow macaroni (or your preferred pasta)
2 cups milk
5 or 6 oz. of evaporated milk
1 can cheddar condensed soup
2 eggs
1 lb. shredded cheddar, or your preferred cheese (divided)
Grease crock pot and combine all ingredients, but reserve 1/2 of the shredded cheese for the end. Cook on low for 3 hours or high for about 1 1/2 hours. You'll sprinkle on the remainder of the shredded cheese in the last ~20 minutes of cooking.
TIP: If you prefer, you can lightly cook pasta before putting in slow cooker. It will produce a creamier result, but if you prefer a slightly more al dente pasta, put the uncooked macaroni straight in the slow cooker.
BAKED CORN PUDDING - INGREDIENTS
1 can whole kernel corn
1 can cream style corn
2 Tbsp. corn starch
1/4 cup sugar
1/2 stick butter
3 eggs
Melt stick of butter in baking dish. Combine all ingredients and pour in dish. Bake in 350º oven for about 30 minutes or so, or until the top starts to brown slightly.

This fun recipe isn't half bad! It was kind of scary just because, I mean, bell peppers, macaroni and cheese, and ham? I never thought of putting those together and I wasn't sure what the bell pepper flavor would do to the macaroni & cheese, but turns out, it was fine!

Sweet Potato Fluff (with marshmallows!) Easy Thanksgiving side dish! QUICK RECIPE! #southernrecipes
This is my grandmother's recipe for Sweet Potato Fluff (with marshmallows), a family favorite at Thanksgiving, Christmas, or anytime.
Ingredients
4 cups sweet potatoes
1/2 stick butter
1 cup sugar
1/2 tsp. nutmeg
1 tbsp. vanilla (or less if you prefer)
Marshmallows
Preheat oven to 350º.
Bake the sweet potatoes. Set aside and cool until you can handle them, then peel them.
In a medium mixing bowl, use a spoon or fork to mix the sweet potatoes and butter together. Add sugar, nutmeg, and vanilla and mix well. Spray cooking spray in square Pyrex dish or a pie dish. Pour sweet potato mixture into dish and bake for about 20 minutes.
Take baked sweet potato mixture out of the oven and add marshmallows to the top. Return to oven and bake for about 5 to 7 more minutes, or if your oven isn't browning the marshmallows, you can turn on the broiler for about a minute. Just keep an eye on the Sweet Potato Fluff so it doesn't burn.
Remove from the oven. Let it rest for at least 15 minutes before serving.

Smoked Sausage & Potatoes - Super easy and absolutely delicious! Old fashioned sausage & potatoes
I almost felt silly making a video about smoked sausage and potatoes —I mean, it's just so simple! But this needed to be on the channel, so here it is.
Really, it couldn't be easier. At the most basic level, all you need is smoked sausage (or polska kielbasa), potatoes, oil, salt, and pepper. If you want, you can finely dice up onions and add them in, or just use a packet of Lipton Onion Soup mix in lieu of the salt and pepper. Sometimes it's also good to sprinkle paprika on the peppers, but really, anything goes. Whatever you and your family like!

How to Make Classic Oatmeal Cookies - THE BEST RECIPE EVER! #cookies #southernrecipes #dessertrecipe
These are hands-down, the very best oatmeal cookies ever! Just plain, oatmeal cookies! You can add in things if you want, but these are perfect exactly the way they are.
Ingredients
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
1 egg
1 tsp. vanilla
1/4 cup water
1 1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
3 cups oatmeal
For best results, wrap cookie dough in rolls in sheets of wax paper and refrigerate for a few hours before baking.
Bake ~12 to 13 minutes (or longer, if necessary) in a 350º oven. If you have refrigerated them first, they should start to brown around that time. At that point you can decide how done you want them before you pull them out of the oven. Get a nice glass of milk, a plate of warm cookies, and enjoy!

Fried Chicken - EASY & TRADITIONAL Recipe | 2 ingredients (without buttermilk!) #SouthernRecipes
This is how we've always made fried chicken in our family: Just 2 ingredients - chicken and self-rising flour, with a little bit of salt and pepper, of course, and the oil to cook it in. No long list of spices. No buttermilk soak. Just good ol' basic fried chicken.
INGREDIENTS
* Whole chicken, cut up (or any chicken pieces you prefer), salted & peppered
* Self-rising flour
I use canola oil, but traditionally, lard was used, and then Crisco, and my grandmother uses corn oil to this day. Any standard cooking oil should be fine except coconut oil, which has a low smoke point and might cause you problems frying for this long.
Fry pieces on medium, adjusting up and down as needed, until each piece registers at least 165º in the thickest part of the flesh.

How to Make Mexican Restaurant style "ACP" (Arroz con pollo with queso blanco - great with nachos!)
Learn to make ACP (arroz con pollo) just like the local Mexican Restaurant. Aside from being a delicious dish on its own, the cheese sauce I make in this video can also be used as a nacho dip for the tortilla chips that I made in the Chips & Salsa video (https://youtu.be/qpDEC4eCMRY)
You'll definitely need the Adobo seasoning for this. If you can't find it in a store near you, you can get it from Amazon. At the very least, you might want to see the exact kind I get because there are a few varieties of Adobo seasoning. I get the kind WITHOUT PEPPER (sin pimienta) Here is an associate link https://amzn.to/3czQgJe
