Summer Soup is a very traditional eastern NC soup. It may be popular elsewhere, but I'm from here so this is what I know. This is an ideal way to enjoy the fruits of your garden harvest and even have them in your pantry through the winter. This soup uses a small amount of ham for seasoning and it is SAFE as it is using the same ratio of ham to vegetables as you will find in the tested safe recipe for Split Pea with Ham soup.
Some say that you can never can ham, but if you follow the principles in the tested recipes, you certainly can can ham —but just know what you're doing. This is not something that brand new or inexperienced canners should do, but modifying recipes with the same content principles is how we wind up with so many canning cookbooks with lots of safe recipes.
In this video I'm canning 9 pints. The ingredients are:
•just under 2 cups of ham
• corn
• okra
• green beans
• fresh (or frozen) lima beans (not dried lima beans)
• tomato
• salt

PREPPER PANTRY - OLD Ball Bluebook Chili Recipe – Pressure canning saves you $$$! #prepping #prepare
This chili recipe comes from a 2003 Ball Bluebook. The most recent versions don't have this, but it's a classic and so delicious! The recipe says it yields about 6 pints or 3 quarts, but the way I make it, I wind up with 10 pints. Your mileage may vary!
INGREDIENTS
5 lbs. ground beef (I use 80/20)
2 cups chopped onions
1 clove garlic, minced (I use a couple of heaping Tbsp of minced garlic)
6 cups canned tomatoes and juice (I use two quarts of my home-canned Roma tomatoes and I added an 8 oz. can of tomato sauce)
1 tsp. cumin
1 1/2 Tbsp. salt
1/2 cup chili powder
1 hot red pepper, finely chopped (optional -- I don't use this)
1. Brown meat and drain off fat.
2. Add onions and continue cooking.
3. Add remaining ingredients, then cover and simmer for 20 minutes.
4. Fill jars and process in pressure canner at your required altitude for 75 minutes for pints or 90 minutes for quarts.

OLD FASHIONED OATMEAL COOKIES 👵🏻
INGREDIENTS
1 cup butter
3/4 cup white sugar
3/4 cup brown sugar
1 egg
1 tsp. vanilla
1/4 cup water
1 1/2 cup flour
1/2 tsp. salt
1/2 tsp. baking soda
3 cups oatmeal
INSTRUCTIONS
For best results, wrap cookie dough in rolls in sheets of wax paper and refrigerate for a few hours before baking.
Bake ~12 to 13 minutes (or longer, if necessary) in a 350º oven. If you have refrigerated them first, they should start to brown around that time. At that point you can decide how done you want them before you pull them out of the oven. Get a nice glass of milk, a plate of warm cookies, and enjoy!

CHURCH WINDOWS ⛪️
INGREDIENTS
2 cups semisweet chocolate chips
1 stick of butter (1/2 cup) butter
1 package colorful miniature marshmallows
INSTRUCTIONS
1. In a large pot, melt chocolate chips and butter over low heat; stir until smooth.
2. Take melted mixture off the heat, give it a stir.
3. Add in marshmallows and mix them in.
4. Put mixture into roll shapes on wax paper and refrigerate for a few hours.
5. Slice and enjoy!

GINGER MOLASSES COOKIES 🎄
INGREDIENTS
1 stick (1/2 cup) of softened butter
1/2 cup light brown sugar
1 egg
3/4 cup molasses
3 cups flour
1/4 tsp. salt
1/2 tsp. baking soda
1 tsp. ground ginger
1 tsp. ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground nutmeg
Decorative or large granule sugar for decorating (or you can use this cookie dough recipe to make gingerbread men!)
INSTRUCTIONS
1. Preheat oven to 350º.
2. Mix all ingredients.
3. Chill dough until it's firm enough to roll out.
4. Roll out dough to about 1/4" thickness and use your favorite cookie cutters to cut them into shapes. (I just used circle cookie cutters.)
5. Dust tops with decorator sugar or wait until they come out of the oven and then decorate with icing.
6. Enjoy!

How to make Crispy, Lacy, Fried Cornbread - Old-fashioned southern style recipe. Easy & delicious!
Crispy, lacy cornbread is so easy to make. You don't even need a precise recipe. You just need to understand the principles of how it's made. You're using regular corn meal, salt, and water. If you like sweet cornbread, you can also add sugar. Some people call this hot water cornbread, but we never bothered with using hot water to make this. It turns out the same with room temperature water.
The main thing to remember is make a batter that you like the taste of and then thin it out to make a crispy cornbread. The thicker the batter, the thicker (and chewier) your cornbread will be. The thinner the batter, the crisper and thinner the cornbread will be.

👩🏻🍳 ⚠️ IMPORTANT:⚠️ 👩🏻🍳 I DO RECOMMEND BAKING THE CRUST EVEN THOUGH I DON'T DO IT IN THIS VIDEO! Sometimes I do and sometimes I don't, but honestly, it's better baked first!
Bill Smith's Atlantic Beach Pie made its debut at the 2011 Southern Foodways Alliance Symposium and his recipe became not only a staple dessert at his Crook's Corner restaurant in Chapel Hill, but also gained national fame as it was reprinted in North Carolina's own @Our State Magazine (https://www.ourstate.com/atlantic-beach-pie/) and other publications online. This is a DELICIOUS take on the traditional lemon pie that Bill Smith used to enjoy when his family would come down here to Atlantic Beach when he was a boy. All of us Carteret County locals know that all of the seafood restaurants serve some kind of lemon pie. They are nearly as expected as hush puppies!
That said, there are some variations in Mr. Smith's recipe in comparison to the traditional recipes you'll find in cookbooks like Island Born and Bred from a Harker's Island church group. Ladies down here like to make their lemon pies with either a Ritz cracker crust or a graham cracker crust, but I will say I love Mr. Smith's saltine crust, though I don't always bake it first. (Sometimes I do, sometimes I don't. Just depends. But it really is better if you bake it first.)

INGREDIENTS
1 1/2 sleeves of saltine crackers
1/2 cup softened butter
3 tablespoons sugar
1 can (14 oz) sweetened condensed milk
4 egg yolks
½ cup lemon juice
INSTRUCTIONS
1. Crush saltines well, but not into a fine powder. Add sugar and butter and mix together until you can squeeze some of the mixture in your hand and it holds a shape.
2. Press saltine mixture into pie dish and chill for a few minutes.
3. BAKE PIE CRUST at 350º for about 15 minutes for a crispy crust, then while it cools, mix pie filling.
4. Mix together egg yolks, lemon juice, and sweetened condensed milk. Make sure you mix this well and that there are no lumps.
5. Pour pie filling into crust and bake in 350ºoven for about 17 minutes.
6. Remove from oven and let cool a bit, then transfer to the refrigerator and let it chill completely. This pie should be served very cold.
7. Serve with homemade whipped cream or your favorite whipped topping.

Chicken Tinga is a highly flavorful shredded chicken dish made with chipotle chiles. The most common way to eat this is on a tostada with a variety of traditional toppings. Molasses Cake - Old timey, 100-year-old recipe from the Home Comfort Wood Stove Cookbook!
This Molasses Cake recipe was published in my great-grandmother's "Home Comfort Wood Stove Cook Book." The company started producing wood stoves before the end of the Civil War. This copy of the cookbook comes from the early 1930s, but no doubt, this recipe goes back to the 1800s. Molasses Cake is a very old, traditional southern dessert. I've tried other Molasses Cake recipes but I love the flavor of this one. The baking instructions were written for a wood stove so you'll have to determine the best time and temperature for your liking, but I'll publish the recipe below exactly as it was printed in the cookbook.

DIJON CHICKEN RECIPE
Saute a finely chopped shallot or onion until soft, then deglaze pan with white wine or chicken stock.
Whisk in 2-3 heaping tablespoons of Dijon mustard and about 1 to 1 1/2 cups heavy cream.
Put the chicken pieces (for pressure canned chicken legs, thighs, or leg quarters) into the mustard mix, then simmer until chicken is heated through and the sauce has thickened.
Taste & adjust salt & pepper if needed.
Add chopped parsley if desired & serve over rice, noodles, or potatoes.

BEST EVER Refried Beans recipe - Easy to make with your stored pinto beans! #prepping #prepperpantry
This is the BEST REFRIED BEANS RECIPE that you’ll ever have. These are so easy and economical to make. At the most basic level, all you need are some cooked pinto beans and a little bit of oil or fat (I use bacon grease). I also like to add a tiny bit of finely diced onion. See how I make the most delicious refried beans ever and be sure and share with your friends. There is no need to pay extra to buy factory-produced refried beans when they are so easy to make at home.

* 1/2 cup pepitas (pumpkin seeds)
Instructions:
* Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan, or line it with parchment paper.
* In a medium bowl, whisk together the flour, baking soda, salt, and spices.
* In a large bowl, combine the sugar, oil, water, pumpkin, eggs, and vanilla extract. Stir until well blended.
* Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.
* Pour the batter into the prepared loaf pan. Sprinkle the top with the pepitas, pressing them slightly into the batter.
* Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
* Let the loaf cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Food Shortages ahead of Christmas 2021? Are you seeing empty shelves? Are you prepared?
We're seeing lots of food shortages around here. Supply chain issues? Why is this happening? No one is unable to stock their pantries, but if you expect to get all the things you might typically buy this time of year, think again. In all likelihood, you're going to run into some items that just are unavailable. There may not be completely empty shelves where you live, but you'll definitely see some empty spots where some of your favorites used to be.
Add to that the ominous messaging from the White House that half of this country is, "looking at a winter of severe illness and death."

Old Timey Blueberry Cobbler Recipe! My grandmothers have been making this cobbler for generations!
This traditional blueberry cobbler recipe is how our family has made cobblers of all kinds for generations. The ingredients couldn't be easier:
- 1 cup self-rising flour (you can use all purpose flour, but it won't yield any rise to the crust)
- 1 cup sugar
- 1 cup milk
- 1 stick butter
- 1 egg
- vanilla (optional)
- 2-3 cups of fruit

Classic Spaghetti and Meatballs - Quick & Easy! Italian meatball recipe with ground beef 🍝
This Spaghetti and Meatballs recipe is a slight variation on a delicious recipe shared by Italian Grandma (link is below) from right here on YouTube. This is for one pound of ground beef and for me it makes almost 20 meatballs. (Of course, if you made larger meatballs, you'd wind up with less.)
INGREDIENTS
• 1 lb ground beef
• 1 egg
• 1/4 cup bread crumbs
• 1/4 cup grated parmesan cheese
• 2 - 3 tsp of dried parsley or 1/4 cup fresh parsley
•1/2 tsp. salt
• 1/4 tsp. black pepper
• 1/8 garlic powder
INSTRUCTIONS
1. Mix ingredients together well.
2. Form into meatballs about the size of walnuts. Cook in pan until they are browned all over.
3. Add desired pasta sauce.
4. Cover and reduce heat to simmer.
5. Cook spaghetti (or pasta of choice).
6. Once spaghetti is done, serve with sauce and meatballs.
7. Sprinkle with a little bit of parmesan cheese.
