There are 4 levers you can "pull" to make your cooking healthier.

We've talked many times about the first one...

1️⃣ Adding a soaking step to your baking and cooking.

This makes the grains/flour more nutritious and digestible. You see, they contain anti-nutrients like enzyme inhibitors (tummy aches) and phytic acid (lead to mineral deficiencies).

Soaking is one way to minimize these (sprouting and sourdough/fermenting do this, too).

Yet, there are three MORE levers you can pull, too!

2️⃣ Higher quality ingredients leads to better digestion and better blood sugar management.

If you choose whole grain flours, the fiber slows down digestion and any blood sugar spikes. And if you take this further, choose ancient grain flours which have gentler starch and gentler gluten, also better for digestion and the gentler starch has less impact on blood sugar.

3️⃣ In baked goods with healthy fats, the fat also slows down digestion and blood sugar spikes.

4️⃣ If you can buy organic ingredients, then you're reducing the amount of glyphosate (Round-Up) you consume. Glyphosate is ubiquitous and it leads any other poisons in the modern agricultural era, by far, with negative impacts on our health.

And in a nutshell, we do our best to pull all these levers in our Eat God's Way methods and cooking.

Not to be perfect, but to do the best we can.

The more levers we can tweak, the better off our families are. 💕
