Why would we go to the trouble of "soaking" our grains before cooking and eating them? 🤔

It's been so many years that we've taught this, yet I realized the other day that I don't explain it as much as I should.

Here are the reasons...

Our flours come from grains.

Grains — whether wheat, ancient grains like spelt or einkorn, or gluten-free grains like rice — contain anti-nutrients.

This is by God's design. The anti-nutrients are beneficial to the seed and help the seed last from harvest, through storage, until the time they're planted. (And seeds can last 25 to 30 years if stored properly!)

Yet... if we eat the anti-nutrients, this affects our digestion and nutrition.

One of the anti-nutrients is enzyme inhibitors. These interfere with our digestion so we get tummy aches.

Another is phytic acid. Now a little bit of phytic acid is probably ok, but if you're consuming a lot of grains or baked goods that are not properly prepared, then they can lead to or contribute to mineral deficiencies by blocking mineral absorption.

These are the major reasons why we soak our grains.

And if it sounds overwhelming, no worries. 💕

It only takes the first time you do it to see how simple and easy it is. In fact, the "soaking" method often saves you time. Like, soaked rice cooks in half the time. Also, soaking improves the texture and results of your baked goods — lighter, fluffier, moister.

So it's really worth doing. And not hard at all.
