很有小樽風味的八角魚，外形看來嘴巴尖尖的，細細長長、背鰭高高挺起，呈現八角型。因為魚身又細又薄，魚肉很少，要處理八角魚，得有純熟的刀工才行。
站在旅客的立場，通常想嚐嚐當地特有的壽司。像鮪肚肉壽司在東京也吃得到，但是八角魚壽司讓人嚐到了小樽的鄉土風味，感受到師傅深愛著小樽的的心意，非常鮮美可口。
