What does "soaked" batter look like? Let's compare! 🧐

The one I just started soaking is obviously wetter and lighter.

And as it "soaks" (for 7 to 8 hours or overnight), the batter gets darker and dries out a little bit.

It firms up because the flour (and rolled oats in this mixture) absorb the liquid and swell up, so the "soaked" mixture seems drier from the grains absorbing that moisture.

What's next after soaking? You proceed with the recipe! 🙌🏻

In case you're wondering why I'm "soaking" this muffin batter, it's to reduce anti-nutrients (better nutrition and digestion) and you get a better texture.

If you're interested in trying out this muffin recipe yourself, it's in my Eat God's Way companion cookbook.
