Chicago-Style Deep Dish Pizza
Ingredients:
For the Dough:
3 1/4 cups all-purpose flour
1/2 cup yellow cornmeal
1 1/2 teaspoons salt
2 teaspoons sugar
1 1/8 teaspoons active dry yeast
1 1/4 cups warm water (110°F/43°C)
2 tablespoons olive oil
For the Filling:
1 pound Italian sausage, crumbled and cooked
1 1/2 cups buffalo mozzarella cheese
1/2 cup grated Parmesan cheese
1 can (28 ounces) crushed tomatoes
2 cloves garlic, minced
1 teaspoon dried basil
Salt and pepper to taste
Instructions:
1. Prepare the Dough:
a. In a bowl, combine flour, cornmeal, salt, and sugar.
b. In a separate bowl, dissolve the yeast in warm water and let it sit for 5 minutes until it's frothy.
c. Add the yeast mixture and olive oil to the dry ingredients. Mix until a dough forms.
d. Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic.
e. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for 1-1.5 hours or until doubled in size.
2. Preheat the Oven:
Preheat your oven to 425°F (220°C).
3. Prepare the Filling:
a. In a bowl, mix together the cooked sausage, mozzarella, Parmesan, and ricotta cheeses.
b. In a separate bowl, combine the crushed tomatoes, garlic, oregano, basil, salt, and pepper.
4. Assemble the Pizza:
a. Punch down the risen dough and roll it out to fit a deep-dish pizza pan or a cast-iron skillet, ensuring it goes up the sides.
b. Press the dough into the pan, making sure it covers the bottom and sides.
c. Layer the sausage and cheese mixture over the dough, then pour the tomato mixture on top.
5. Bake:
Bake in the preheated oven for 25-35 minutes, or until the crust is golden brown, and the filling is bubbly and cooked through.
6. Serve:
Allow the pizza to cool for a few minutes before slicing. Serve and enjoy your delicious Chicago-style deep-dish pizza!
