Potato Eggplant curry Recipe 👇

✨️Heat 1/2 cup oil.
Add 1tbsp of cumin seeds. Stir to prevent the seeds from burning.
When the cumin seeds start sizzling add 1 medium size globe egg plant🍆( cut into cubes ) or 3-4 small egg plants and 4 small potatoes cut into cubes.
Than add 1 1/2 tbsp ginger garlic paste.
Cook for few minutes than add spices👇
1/8 tsp turmeric powder
1 tbsp corriander powder
1 tbsp chilli flakes
1/2 tsp chilli powder
Salt to taste
[ You can adjust spices according to your taste ]
Mix well .
Cook covered for another 10-minutes on low heat.
Than add tomato puree ( 2 blended tomatoes) .
Cook for few minutes until the raw smell from tomatoes has gone.
Cook covered for another 7-8 minutes on low heat.
Than do the bhonai add chopped green chilli and put on dum until aloo baingan ( potatoes & egg plant) are soft and tender.
Sprinkle garam masala
Garnish with chopped coriander leaves 💥 ENJOY 😋
