Cheesy Hash Brown Cups
4 cups of frozen shredded hash browns, thawed
3 eggs
¼ cup of half and half (or milk)
½ onion, chopped
2 cups of shredded cheddar cheese (or cheese of choice)
Season to taste
OPTIONAL: Ham, bacon, sausage, mushrooms, or bell peppers

Spray 12 muffin cups with cooking spray. Mix all ingredients together and fill cups equally. Bake 35-40 minutes at 350 degrees or until golden brown.
