Croissant Sandwiches Stuffed. Spinach, Ricotta And Garlic Quick! Easy!

5 mini grocery/ bakery croissants
1/2 cup frozen chopped spinach
1/3 cup ricotta cheese
1 clove garlic
Sunflower oil and butter to coat pan
Salt and pepper to taste.
An 8” frying pan was used. 8” lid purchased separately comes in handy. Delicious. Even dog Missy liked it. She had a half of a mini sandwich.
