The Farmer Bakers! To Sourdough Bread from Grains!
Meet La Pelle Des Coyotes' Raph and Kim, the Farmer Bakers. They are both farmers and bakers, from sowing the crops to baking the bread! They cultivate the grain, turn it into flour, create a living sourdough culture from it, bake it into delectable sourdough bread, and then sell it locally to residents of their neighborhood!
They cultivate a blend of 13 heirloom wheat types that are better suited to the area and don't require irrigation, pesticides, or synthetic fertilizers as good stewards of their land. They manufacture their own hummus using crop rotation and chickpeas as well.
They use a traditional process and recipe that has been handed down by previous bakers in the area to mix, knead, and bake their bread by hand.
